Behold, a slightly longer video of the cheese conveyor belt!
This is at Culture & Co. in Nashville, which is incredibly and delightfully the second charcuterie conveyor belt restaurant I've eaten at in the last two years, the other being Pick & Cheese in London.
As with Pick & Cheese I do know myself, so I set out the rule ahead of time that I could only take three plates, and thus I chose with care. First course: "Bruleed Brie" with passion fruit caramel cultured butter. This is a brie-style cheese from Pennsylvania (where my yinzers at) which has had one open side dipped in sugar and then presumably melted with a culinary torch; it looks like jam, but as you can see in the second image, when you tap the brulee it cracks like toffee.


Both the brulee brie and the butter were fantastic; the acid of the passion fruit cuts the sugar and the fattiness a little, but it also really emerges as its own flavor. I think this is the most imaginative way to upgrade brie I've seen in a minute. I kinda wanna try it at home.
Second plate was a Cumblerland "tomme-style" natural rind cheese from Tennessee (specifically Sequatchie Cove) with house made potato chive crackers and rosemary. The real highlight of this cheese is, honestly, the rind -- it has a flavor unique from the rest of the slice, which is much milder and reminded me of a young gouda, almost. The crackers don't look like much but however they make them they were really packed with this nice earthy salty flavor.

For "dessert" I almost went with a vegan cashew-based "Gouda" with shiitake bacon, mainly for the bacon I'll be honest, and you can actually see that plate go by, it's the first one you see in the video up top. Instead I decided to go with...I'm not sure even what kind of cheese this is because it's called GOAT RODEO BAMBOOZLE. I mean, the menu said it was a semi-soft washed rind goat's milk cheese, so there's that.


Normally I avoid goat cheese because I find it very dry texturally, but this was nice, it had that kind of gamey goaty taste but was much more buttery. It came with two pecan shortbread cookies (sandies) and a little cup of root beer caramel, which you can see dripping down a bite of the cheese in the second image. I don't know how you make root beer caramel (sasparilla in the milk?) but it had a nice peppery note to it. I wanted to down it like a shot but resisted.
Anyway, all three were fantastic, not a loser in the bunch, and the wait staff were super pleasant and knowledgeable, so it was a pretty great meal, especially for $30 (including tip).
I don't know who's setting these cheese conveyor belts up across the world but whoever you are, if you bring one to Chicago I will be grateful and I will eat there and bring visiting friends there. Some of my friends even drink wine, so we won't be cheap dates, I promise. We're so close to Wisconsin! Think what you could do with the curds, man, the curds!

I absolutely love it when stories talk about in universe wildlife, and I couldn't resist drawing/writing about them once I had the idea, so enjoy the mad ramblings of someone obsessed with fantasy biology! ->
The Hokeypoke hummingbird (Dulcem Trochilus) is a species of hummingbird (named for its beautiful honeycomb toffee wings) found all over the Candy Kingdom
Although native to the majority of the Candy Kingdom, the Hokeypoke hummingbirds tend to prefer colder environments with large quantities of pixie dust flowers.

The Hokeypoke hummingbird is 9.5 to 11.5 cm (3.7 to 4.5 in) long and on average weighs about 5 to 5.5 g (0.18 to 0.19 oz). Adults are usually a creamy vanilla color with specs of honeycomb toffee along their backs. They have one large honeycomb on top of their head like a crown (this is why they were also called the royal hummingbird), for females, it is an orangey-yellow while males have a bright red.

Similar to other Dulcem birds, the Hokeypoke hummingbirds stick to a gummy and gelatin diet. Although their have been some reports of them eating graham crackers crumbs, whether this is a form of gastroliths to aid with digestion is currently unknown.

Hokeypoke hummingbirds are also called the (Royal hummingbirds) Not only because of the little honeycomb on top of their head that looks like a Crown, but because in 18XX Princess [XXXXX] loved the little birds so much that she had an entire garden built into the Kingdom's castle to house them.
The garden was said to house many different subspecies of the hummingbird such as chocolate, strawberry, butterscotch, mint chocolate chip, cookie dough, and rocky road.
It's reported that one of the birds, named Cherry Cheesecake (because of its dark redish-pink crown) often followed Princess [XXXXX] all over the palace, and would peck at any one who got to close to her. ->

okay okay yes chef sanji is wonderful but baker sanji. confectioner sanji. think about it.
sanji kneading dough on a saturday morning with his shirtsleeves rolled up to the elbow. he has flour on his cheeks and one of those cute canvas aprons the colour of a brown paper bag with a million pockets and he keeps getting pissed off because strands of his bangs are constantly falling into his face. he makes sourdough and cheesecake and strawberry pavlova and tangerine tarts and dried mango nougat and carrot cupcakes that everybody eyed suspiciously before they actually tried them and now they're a friend group favourite.
he makes monthly batches of those agar-agar edible crystals for vivi's entire family and ships them by the crate to alabasta. he bakes robin and franky's blue raspberry black forest wedding cake. all of the straw hats have multiple packets of his dark chocolate dried fruit and nut and oat yoghurt brittle in their bags at any one time because they're the perfect snack and they're delicious. he makes red bean matcha mochi for zoro because the mosshead can't tolerate anything too sweet.
he has jar upon jar of aromatic infusions on the shelf: vanilla, black pepper, florals, all steeped in liquor to make high-quality extracts that he has gotten MULTIPLE offers to start a business out of, but he always declines because hello. he's busy cooking for straw hats and co.. luffy and fam. he has no time he is a busy busy man and would you look at that chopper's upside-down apple crumble is ready.
usopp makes him all sorts of contraptions, a high-speed blender, a state-of-the-art stand mixer, an ice-cream machine; sometimes if he's feeling lazy he'll go equipment shopping with sanji and just modify whatever they buy. sanji has a toffee hook on the wall of the galley and a very formidable collection of cookie cutters and piping tips. he's managed to make fondant that doesn't taste like utter trash and it's legendary. his salted caramel cashew macadamia popcorn has and will continue to make grown men cry.
but sometimes, he just chucks some charcoal in a pot and plops it in the middle of the dining table with a bowl of chocolate on top and brings out the fruit skewers, or the marshmallows and graham crackers. sometimes they eat rice krispy treats out of the packaging as they huddle together on the lawn and stargaze just because they can. sometimes the almond and dried cranberry combo just can't be beat and sometimes plain toast with butter makes you see god. but you'd best believe the next day he's up and at it again; his sourdough starter's looking more and more like a sentient life form by the hour and he has seven different things going on at once with two more bowls cooling off in the fridge and the oven preheating. i love baker confectioner sanji.

Making some Christmas crack for the nephew and I to share. While it's traditionally made with saltine crackers, I find I prefer making it with Social Tea cookies instead; they hold up a lot better, and rather than shattering into random sized pieces when you crack the candy apart, tend to break fairly neatly between the wafers. They're a very plain and not particularly sweet cookie, so being coated in buttery toffee/caramel and chocolate doesn't end up with something that's too sweet or rich.
It's hard to see in the final photo, but I lightly sprinkled salt over the left half of the pan. I also eyed a jar of crushed candy canes that's been lurking at the back of the cupboard here for a few years, but decided against them. They've been in the cupboard long enough that I bet they're glued together from humidity and more effort then they're worth.
I love how simple the recipe for this is. Though after making, what was it, three recipes of it within two months after trying it for the first time last year, I have definitely decided to (try and) limit it to one batch at Christmas, because my diabetes doesn't need the sugar.

Dani and I made kladdkaka. Any recipe you find for that is pretty easy. It's like six ingredients. But here are some other easy recipes I've tried before:
