sometimes to pass the time i daydream about opening my own little chill restaurant and what id serve there and how itd work. bc i would want to be the cook but like, id need to make it fit my energy reserves and stuff. id serve mostly different things in rotation (maybe over a week or two) depending on supplies and mood with a few constant staples. id have a couple ppl to do service, and id have to learn good alcohol pairings, and and and
its not realistic id need to have so much money before i could do this but its nice to think about
anyway some dishes: blanquette with baked rosemary diced potatoes, lemon baked fish with those potatoes also and a side of fresh tomato salad or creamy spinach, japanese curry with rice (u could add meat if u want; id make the roux myself to make sure its gluten free), mac n cheese (actually fucking cheesy, and i could basically just assemble it on demand, but i usually add in bacon spinach and mushrooms) (also easy to make gf), pasta with spinach pesto, pine nuts and sun-dried tomatoes (tomatoes optional), roasted garlic and potato soup (my sibling found the recipe, its soooo tasty and the texture is wonderful), my moms bacon wrapped and goat cheese stuffed filet mignon (SO good) w potatoes and garlic-fried broccoli, chicken apple curry on rice (could make lactose free), pasta with a simple mushroom sauce (mushrooms, dijon mustard, white wine, cream - can add extra veggies or meat, and can use lactose free cream), roasted lamb with couscous and veggies cooked with mediterranean spices, salad with cantaloupe, cherry tomatoes, crispy bacon or parma ham, crumbly fresh goats cheese, served in the cantaloupe (and fine lettuce i guess - roquette would work well i think), quiche lorraine, fried salmon fillet with baked herby carrots, potatoes and parsnips
desserts could have cheesecake, fresh doughnuts, miso brownies (kep found the recipe, it is. so good), toffee cake (made recently for a party, it was fun to make!), fruit salad (depending in the season), lava cake (actually benefit from being made in advance and sitting in the fridge!) with ice cream and/or raspberry coulis, tarte tatin (upside down apple pie with caramelized top)
mainly i just daydream about getting to cook nice food at my own pace and sharing it with people and adapting it when i can so ppl with diet restrictions can enjoy it too

Raw Pecan & Carrot Meat
1 cup of soaked pecan (Soak for 2-4 hours. If can soak overnight)
8 soaked sun-dried tomatoes (Soak for 2 - 4 hours. If you can soak overnight)
1 Tbsp of chopped onion leeks
1 cup of carrots
1 tsp chili powder
1 tsp paprika
1 tsp minced garlic
1/2 tsp crushed red pepper flakes
1 tsp Himalayan salt
2 tsp lime
Orange Pepper Cashew Sauce
1 chopped red bell pepper
1 cup soaked cashews
25 -30 cilantro leaves
2 Tbsp lemon
2 tsp crushed red peppers
2 tsp of nutritional yeast
1 tsp of minced garlic
1.5 tsp Himalayan salt
1 tsp black pepper
Other Ingredients
Lettuce
Crushed Nacho Kale Chips (Topping)
Step 1. Blend all the Orange Pepper Cashew Sauce ingredients until you have a smooth, creamy sauce.

Wonderful meal to Start your Morning.
While my fiance and I take time to find ourselves in separation. He has encouraged me to eat more of a Raw Vegan. Coming from a Man who I would call Omnivore and me Vegan at home and when I eat out Vegetarian at best.
He enjoyed this meal when I saw him the other week when we met up, he said the sauces tasted like a sauce from Arby's (it had been watered down in a meal prep kit more on this below on how to store this meal)
I was actually surprised at how full I was. I haven't eaten meat in 14 years but that doesn't mean I've eaten the healthiest but I get healthier each year and learn more about health (along with my fiancé, who encouraged me to bring any dairy products home as I've been Vegan many times) not only was I full I loved the taste of it. I'm a huge fan of tomatoes.
Even though my Sid Vicious and I are separated he's made a point to tell me not to eat anything with White Bread, Wheat, Rice and what can I say but he is right I bought Dave's Killer Bread my favorite bread but I did feel more tired the rest of the week
More onto this Recipe
I used 1 or 2 Zucchinis and spiralled them. Then pinched them so it is easier to eat.
The sauce is
Handful of cherry tomatoes
A few spoon fulls of Sun Dried Tomatoes
Add in some fresh herbs like Basil, Cilontro, Spinach
No cooking just blend it all right up. Also if you want it more creamy you can add Tofu if someone does not have a Soy Allergy or Soaked or Unsoaked Cashews&Pine Nuts blended with Tomatos into a creamy paste add more tomatoes as they have natural amount of Water in them that includes nutritions. Or even better if you own a juicer to juice tomatoes and use the Juice to blend with the Cashews and Pine Nuts first. Then add Cherry Tomatoes, Sun Dried and herbs adding Spinach will add extra Protein to this meal there is Calcium in Spinach as well in the Cashews and Pine Nuts the Tomatos are loaded with Vitamin C, if not more than a Orange

Taking this meal on the go.
Do not pour the sauce on top or in the zucchini noodles store in a separate container and drain water from Zucchini noodles.
You can also use Cucumbers and April them or a mix of the both.
Adding in more vegetables like Red Peppers to the sauce or small amounts of carrots to not over power
Soak Walnuts overnight to as a crumble.
If you're new to Raw Veganism, or Veganism, Vegetarianism, looking to Add more Fresh Vegetables, Nuts, Seeds, Fruits into your diet I hope this has reached you. This is a easy recipe that can be done early in the morning I would suggest Unless you feel sick as in you need to drink water or eat something to drink Juice in the morning.
If you have a Blender blend vegetables and then strain the pulp/fiber. Drinking Vegetables Juice, Ginger Shots, and small amounts of Fruit Juice first thing you start your Day, Afternoon, Night whichever you get your little or a lot of sleep will help with the Nutrition going straight into your blood stream and system. This is also why we want to avoid too much fruit as the sugar goes straight to your blood stream as well.

I don’t think I’ve ever had chicken Parmesan, maybe as a school lunch. How do you like it made? It must be really good.
I actually haven’t had anything to eat but drink tea this whole day but I’m thinking of making what I like to call pepper pasta! It’s very straightforward and it’s what I make when I’ve ran out of everything. It’s literally pasta and bell peppers lol.
So boil your pasta, and while that’s boiling, fry up chopped bell peppers and add your salt and seasonings to it, you can fry some onion, garlic or tomato if you want. Then you’re gonna add some sun dried tomato pesto (or any pesto) to the pot (I know you’re not supposed to cook pesto, but I don’t care).
Then you add your pasta after draining, if you want you could add some heavy whipping cream or sour cream to the pasta if you like a creamy dish, but that’s it!
Omg I make something similar all the time! I do fried shaved brussels sprouts, sundried tomatoes, red bell pepper, and whatever else is in my fridge with pasta and a little pecorino. Omg.
Okay so the chicken has two methods:
Mama Petal's (that's my mom) Italian-American mom on a weeknight way: Add a pinch of salt, garlic, and 1 tablespoon each of oregano and basil to a can of crushed tomatoes. Add crushed red pepper flakes if you like it spicy (I do!). Simmer 10ish minutes. Now you have sauce. Put a little of your sauce on pre-breaded chicken cutlets, top with sliced mozzarella, bake at 425 (F) for 10 minutes.
The upgraded way: Quarter a 1 lb. chicken breast and pound to 1/4" thickness. Dredge in flour, then in egg, then in seasoned breadcrumbs. Either fry in vegetable oil until golden brown on both sides, or bake on 425 (F) for 15 minutes until chicken reaches an internal temperature of 165 (F). Make a sauce in the same way Mama Petal does. Top chicken with sauce and sliced mozzarella cheese, then broil high for 1-2 minutes until the cheese is crispy.
I do my mom's version when I need an Anxiety Meal(tm), but the upgraded way is almost exactly what you'll get in a restaurant so it's worth it if you have extra energy.

Welcome warmth and a morning walk
5th March 2023
The local people we’ve been with so far tell us that the rains have come, so we expect very variable weather days wherever we are. Rain is crucial for food, so we are glad for them when it rains. But we are quietly a bit pleased for us when we have a sunny day!
Today dawned bright gold and blue. We set off after breakfast for a very happy brisk walk around the locality. As always there were lots of folk about, many in churches – you hear the singing and preaching from afar – and many walking purposefully here and there. They are always rather mystified by our propensity to “just walk”. ‘Yes, but where are you going?’

We saw plenty of children playing and laughing, (often at us, funny white people), which is one of the signs that there may be more joy around than last year which held such a depressed mood following covid.
Simply walking down the dirt road you can learn a lot about everyday life here. Today all the washing is out on the lines in front of the shops and houses – well, the sun is shining. No one has a washing machine, never mind a drier. You will also see the women bending and stretching to do their washing and rinsing in a big bowl on the ground.

Incidentally you also see the boda-boda drivers washing their motor cycle taxis in the streams. When there is water, of course. Drought has far-reaching effects in many ways.
Crops for food grow in little family ‘gardens’, like our allotments. Bananas are important because cooking bananas are the main staple in most of Uganda. They are boiled and mashed to end up as “matoke”, like mashed potatoes though more yellowish than creamy white. With the matoke you might eat groundnut sauce and greens, a bit like spinach. Or if the crops have failed because of drought, you might have nothing.

Growing your own food is hard work and involves the family.
One of the more obvious signs of development here in Uganda is that thatched grass roofs have been replaced by corrugated iron. So much more waterproof! 
There are several different ways by which people get land. Most people obtain land for their home by inheriting within the family, or sometimes land might be in the gift of a chief or other local authority. As the population grows, the land for each generation becomes less. 
You may have no cash income, and you don’t obtain much anyway by selling your tomatoes or onions because everyone has a similar little pile to sell.
You have a small piece of land and you want a house? You build it. How do you build it? Well, first you make the bricks. On our walk we came across a field occupied by many makers of bricks doing just this. Increasingly houses in Uganda are made from fired brick. This process was mechanised in the UK in the 1850's.

How privileged we are to be able to choose our houses and many of us buy them or rent them safely. I recognise the shortage of social housing, and am very much in support of organisations fighting this particular battle in UK. But for most people in Uganda the home they have is small, very basic, and few have mains electricity. Unlikely to be gas! 
Water is likely to come from a stand pipe (sometimes even a bore hole) but in dry spells family members, children or women, may have to go further afield to get a container of water which they will carry on their heads.

Life can be hard work for many families here. Global warming, climate change, floods and drought in particular, are likely to bring about more hardship. Even on our visit this year we can see the effect of water shortages. We do hope, with our Ugandan friends,  for ‘the blessing of the rain’.
