CHEF ILONA: Sheet Tray Apple Pie!

There is an evergreen statement which goes, “nothing says comfort like a slice of warm apple pie.” There are many nostalgic feelings which many Canadians attach to the dish as it connects them to their childhood and family gatherings.

 As a first generation Canadian, I can’t exactly say my love for pie came in natural flow with my upbringing. Rather, it was something we as a family learned and experienced together. Mom and dad would test drive new dishes and apple pie was amazing.

 I especially loved a warm piece of pie with a slice of cheddar. This sheet tray version pulls on my Hungarian heritage as we typically served a sort of apple pie, but instead of the traditional round pie, our Hungarian “almas pite” was baked and cut into squares. As an intertwining of my own cultural culinary experience, this recipe is a blend of both comforting apple desserts.
The dough is enriched with milk and egg yolk which renders the dough more tender than a typical pie dough, making it much easier to work with.

Feel free to use other fruit like blueberries, peaches, pears, cherries, or use your frozen strawberries and rhubarb that you squirreled away in the spring and summer.
 Apple Pie Squares
Serves 8-10
1 ½ cups butter
3 ¾ cup flour
1 ½ tsp. salt
1 egg yolk and milk to make 1 cup (keep the egg white to brush over the top of dough)
6 cups peeled, sliced apples (I like Fuji or Granny Smith)
1 cup sugar
2 Tablespoons flour
1 tsp. cinnamon
1 tsp nutmeg
1.       Preheat oven to 400F.
2.       Cut butter into flour and salt.
3.       Add egg yolk and milk.
4.       Roll out half the dough and place on large bar pan...about 12 x 16 inches.
5.       Spread apple slices evenly over bottom pastry.
6.       Sprinkle with sugar, flour, nutmeg, and cinnamon mixture.
7.       Roll out other half of dough and place on top…pinch edges.
8.       Beat the egg white until foamy and brush over crust.
9.       Bake at 400 for fifteen minutes, then reduce heat to 325 and bake an additional 30 minutes.

Offals with naan. Liver, Kidney and Lungs Celebrated Eid on Wednesday, it was by far one of the very good days I have had in a long time. It is political, food is, especially when it involves death. But it is is easy to say so and only become easier for people because they have been completely detached from where food comes from living in the era of great food abundance. But as slaughtering an animal has something human about it as a celebration of life and death. Especially when you look at it from perspective of someone who lived 600 years ago or 2000 years ago. I say this after watching two completely different cultures one in Louisiana and one here at home. The underlying similarities that I found were that people gathered and talked, family, distant cousins close friends everyone came by to this once a year event and talked about how have they been, all the joy and sorrows and remembering those who were there last year but aren’t there anymore. The animal being butchered becomes a central reason to do so, a beacon of food abundance for that one day and for a few days to come so you can not worry about where would food come to the plate. When the dawn comes and everyone is preparing to head back home with some of the animal with them. The goodbyes resonate, InshAllah we would meet next year and celebrate life, or be remembered if death has already taken us away. . I’ve, really missed going out to restaurants to eat. This was taken at the Botanist in Bristol, one of the last restaurants I reviewed before the lockdown! The COVID-19 pandemic has changed the way we eat out almost beyond recognition in some places. Hundreds of restaurants have closed, never to re-open again which has robbed good people of livelihoods and food lovers of great places to eat, drink and socialise. As a food critic, I don’t know what the future will hold for me? Although I have been writing restaurant reviews for a few years now, it was only in the last couple of months that I started to get my work printed in a local publication. I really do hope that I can continue to do what I really enjoy doing and hopefully progress into other publications?
