During these pockets of clarity I have been able to make several revelations about my life and my choices, and one of them was that I have pushed a lot of people away without realizing simply because I was telling myself that I would have time for “that” after I accomplished this or I accomplished that, I told myself that I needed to do this first and then I can open myself up to that/them. And that mindset being at the foundation of many of choices over the last two decades has strained friendships, limited other friendships, and paired with other things: stress, doubt, uncertainty—in myself, mostly I have been judgmental and just angry.

What Are the Effects of High Heat on Olive Oil?

Olive oil is an incredibly versatile and healthy oil, but it can be easily damaged by high heat. When exposed to temperatures above 400°F, the delicate structure of the oil is compromised and it is no longer as nutritious, flavorful, or beneficial for cooking. High heat also causes the oil to break down, releasing free radicals that can cause cellular damage in the body. To avoid these effects, make sure to keep olive oil at lower temperatures when cooking or baking. Using oil with a higher smoke point, such as avocado oil or coconut oil, is also a good strategy for avoiding the damaging effects of high heat. If you’re looking for a healthy, tasty oil that stands up to high temperatures, make sure to choose an oil that is suitable for the task.

Consider the facts: the source of much of the world’s food - seeds - is mostly in the control of just four corporations; half of all the world’s cheeses are produced with bacteria or enzymes manufactured by a single company; one in four beers drunk around the world is the product of one brewer; from the USA to China, most global pork production is based around the genetics of a single breed of pig; and, perhaps most famously, although there are more than 1,500 different varieties of banana, global trade is dominated by just one, the Cavendish, a cloned fruit grown in monocultures so vast their scale can only be comprehended from the view of a aeroplane or by satellite. This level of uniformity, from the genetics of the world’s most widely consumed crops, wheat, rice and maize, right through to the meals they become, has never been experienced before. SMOOTHIE GONE BAD 👎🏼 WHAT WAS I THINKING??? One night a while back, I tried a new smoothie recipe and it was not good at all! I had a brilliant idea (which I soon learned was not so brilliant) to make a coffee and cream smoothie. Now, this would not have been such a bad idea if I had used pumpkin puree with the coffee, but I used cherries and a dab of pineapple juice b/c there was no sugar in the coffee. It would have been good if it did not have the coffee in it. Here is what I did (I do not recommend you try this recipe): 1 cup coffee, prepared with milk 1/4 cup pineapple juice 10 frozen dark cherries 3 frozen strawberries 1 banana 3 ice cubes I blended everything together. The coffee left a bitter taste in my mouth. 😜 We all makes mistakes, right? 🤣 Here is a recipe I DO recommend: Fruit and spinach protein smoothie 1 cup pineapple juice 5 frozen dark cherries 3 frozen strawberries ½ cup frozen blueberries 1 banana 1 handful of fresh spinach 1 scoop of your favorite protein powder (I prefer vanilla) Blend everything in your blender. CHEF ILONA: PANETTONE BREAKFAST BAKE

"Christmas morning should be a low effort meal-time; it’s the perfect day to savour a hot drink and the twinkling lights on the tree."
Several years ago, I was visiting the homestead for the holidays which meant I got to enjoy watching my mom putter around the kitchen cooking up all of our most favourite foods.
My dad has a penchant for the Italian Christmas bread, Panettone, and there is almost always one on the counter for the entire month of December.

Panettone is a sweet Christmas bread which has its origins in Milan. This rich dough is studded with citron, raisins, and other candied fruits. It is baked in a cylindrical shape and has a domed top. In some ways I can see a bit of a flavour profile similarity with Easter’s hot cross buns, but Panettone is much fluffier. Now from time to time, the Panettone gets a little stale or dries out a bit, and this particular year I was there for such a situation. My mom decided to use the bread for French toast. It tasted amazing, but I was still thinking there had to be an even easier way to make this French Toast, so mom didn’t have to stay at the stove. We decided to make a bake out of it, and it worked like a charm.
It is the kind of dish that is a hybrid of bread pudding and French toast. I started adding in eggnog in the last couple of years and it is even more festive. If you are so inclined, I recommend a jigger of rum mixed in with the eggnog base; it is so at home in this mélange.

This can be made and ahead the night before, or when you are ready to eat it.
Eggnog and Panettone French Toast Bake
Created by Chef Ilona Daniel
1 loaf all-butter panettone bread 7 large eggs 1 1/4 cups eggnog 1 Tbsp vanilla extract Zest of 1 orange 2 tsp cinnamon ½ tsp nutmeg ¼ cup brown sugar Icing sugar and Syrup for serving if desired.
Slice the panettone into slices that would fit into your toaster and tile them into a buttered casserole dish.
Gently whisk the remaining ingredients together and pour over the bread.
Cover and place in the fridge overnight so it will ready for baking in the morning or place into a pre-heated 375f oven.
Bake for 30 minutes and serve with syrup and powdered sugar if desired.

This amazing lemon meringue dessert is quite honestly one of the nicest desserts I have ever had. Courtesy of Saint Nigella, this is no good for the waist line or the blood sugar levels. But it is good for your need for essential comfort food. All that is needed are egg whites, caster sugar, lemon juice, cream vanilla, flaked almonds and lemon curd. I will admit I did cheat a little. I used a shop bought lemon curd but it did the trick.
