These were sooo good. Easily one of the best meals I’ve ever made, and they were pretty quick and easy!! The taco filling is just avocado, jackfruit in sauce, cilantro, and a cabbage slaw. I feel so bad for people who don’t like cilantro bc I love it! 😋⠀

#dEats : Take 1 can of jackfruit in water or brine, drain and rinse it then cut/ break it up into smaller pieces. Then heat 1 tbsp of oil in a medium to large pan and add the jackfruit. Cook for about 5 minutes over medium-high heat. Next add in bbq sauce of choice and cook over medium heat for another 5 minutes, and then you’re done! I used ½ cup of sauce but you can use more if you prefer it saucier! For the cabbage I just added lime, s&p, and a little oil and mixed it all together. ⠀

I’m officially on the Jackfruit taco truck! WOWZA! Who is with me? Recipe 👇👇👇 . . . . . Ingredients: 2 (14 oz.)cans jackfruit, drained and rinsed and shredded. 2 tab avocado oil 1 cup of chopped red onion 4 cloves garlic, minced 1 jalapeño, seeded & minced 2 tsp. Ground cumin 1 tsp. Ground oregano 1/2 tsp. Ground coriander 1/4 tsp. Salt 1/4 tsp. Smoked paprika 1/4 tsp chili powder 1/4 tsp chipotle Zest of 1 lime 1/2 C. Bbq sauce 1/2 tsp. Liquid smoke 1/4 C. Water - Heat up avo oil in a large skillet over medium heat. Sauté onion for 5 minutes. Add in garlic and jalapeño. Meanwhile, drain jackfruit and rinse well. Then break it up with 2 forks. Or chop. Add to pan and cool for 10 minutes. Then add spices, bbq sauce, water, and liquid smoke. Turn to low while you prep the rest. - heat black beans in a saucepan. - heat oven to 375 and set 12 corn tortillas to heat. For serving- 1 avo, sliced thinly 1/2 C chopped cilantro 1/3 C. Shredded red cabbage Lime wedges.
