thinking about taisho era jade born into a merchant family and he's schemey and sly as usual but really he just loves purchasing strange flora and fungi from the west. and then he meets you, an orphan who makes a living by selling flowers that you grow by yourself, not knowing how difficult it actually for other people to grow said plants because you were born with an insane green thumb and so all plants thrive under your care hehehe. he's so intrigued by you he basically hires you as his greenhouse assistant and loves spoiling you with new flora and eventually accessories that remind him of your plants (giving someone a hairpiece = marriage proposal)
he's supposed to be marrying someone with a stronger family backing so he can increase his business relations but nope. he's dead set on marrying the person who made his heart bloom♡

Hello! Regarding Engage, I was curious... is it true that Jade's Ally Notebook entry in Japanese mentions her having siblings? Because the English doesn't. For Zelkov's, too—I've heard that the 'younger brother' he mentions is actually his twin?
Both of those points are correct! Detailed breakdown is below.
These notebook pages are very faithfully translated into English otherwise, so I'm assuming the details just had to be trimmed due to the tiny character limit available for each page.
Jade:
Here's the JP mention of Jade's siblings, on page 3:
5人きょうだいの真ん中で育ち、= "Grew up as the very middle of 5 siblings."
The other pages are translated very directly, so that's all there is to mention.
Zelkov:
And here's the mention of Zelkov's younger brother being his twin, from page 3:
両親と双子の弟は賊に殺され、= His parents and twin younger brother were murdered by bandits,
Unlike Jade, Zelkov also had other details trimmed out in localization:
The first page mentions that he, Ivy, and Kagetsu were in possession of Lyn's ring when they fought Alear's army as enemies. Otherwise directly translated.
Page 3 also has this line in JP:
仇討ちを果たした後、腕を買われ
王城兵へと取り立てられる。
= After successfully avenging them, his abilities were acknowledged, and he was selected to become a castle soldier.
And page 4 has this cut line:
子供好きだが子供からは嫌われる。
=He likes children, but they hate him.
