Made some pancakes using my pancake recipe from YouTube. I did one blueberry and one regular pancake for myself and my friend. This pancake recipe is perfect for serve two people. 🥞🫐 I serve the pancakes with margarine from Land O'Lakes and my friend used maple syrup whereas I used maple syrup alternative cuz I'm supposed to eat less sugar from Lakanto

Sugar Free Buttercream Candies
This one requires a little more spoons than usual but it’s worth it to have a sugar free candy!
Ingredients:
2 sticks of salted butter
1 cup of Truvia Sweet Complete Confectioner’s Sugar (you can use a different brand, like Lakanto, but it MUST be powdered, not granulated!)
2 teaspoons of vanilla
1 cup Bake Believe semi-sweet chocolate chips
1 tablespoon of oil
Equipment: freezer, mixer (stand mixer preferred but not required), very small cookie scoop, parchment paper, pan that will fit in your freezer
Directions:
SOFTEN BUTTER. Do not put it in the microwave, this will mess up the texture; just leave it on the counter for a couple of hours.
Combine butter, vanilla, and Truvia confectioners sugar with a mixer until light and fluffy and fully combined.
Line a tray that will fit in your freezer (or several small trays!) with parchment paper.
Using the small cookie scoop, scoop the buttercream mixture onto the pan(s).
Freeze for 24 hours.
After 24 hours, put 1 cup of semisweet chocolate chips in a microwave safe bowl with 1 tablespoon of oil. Microwave in 20 second bursts, stirring between each burst, until til melted.
Take the buttercreams out of the freezer.
Using a fork, dip each one in chocolate, completely coat it, and place it back on the parchment paper.
Place dipped buttercreams in freezer until set. Store in the refrigerator.
Makes 25 one-ounce (before dipped) buttercreams.
Net carbs per serving: 1
Calories per serving: 109
Sugar per serving: 0 grams
Fiber per serving: 3 grams
Protein per serving: <1 gram

This week, I'm visiting a Houston friend who adheres to a Keto Diet for health reasons unrelated to diabetes. Keto Diet is generally defined as a diet high in fat and low in carbohydrates (sugars) that causes the body to break down fat into molecules called ketones.
I'm not on a Keto Diet, but I'm always curious about what other people eat, so my friend willingly gave me a tour of her pantry. I spotted several Lakanto Sugar Free Cookie Mix packages on her shelf. She says, "They're great!" She especially likes the brownie mix. 
Lakanto products contain monk fruit. Monk fruit is a small, melon-like fruit, grown in China, and gets its name from the Buddhist monks who originally grew it centuries ago. Monk fruit sugar has been given the stamp of approval from the Food and Drug Administration (FDA), and given the title of Generally Recognized as Safe (GRAS). ‌Monk fruit has zero calories or carbs; it will not raise blood sugar levels.
The Lakanto website claims that in less than 15 minutes, you'll have freshly baked, sugar-free, keto-friendly cookies! They even offer a frosting recipe using Lakanto Powdered Monkfruit Sweetener.
She made some brownies earlier, so I was able to sample one. I found the brownies brimming with chocolate. They tasted lighter than regular brownies, which is true of every baked good recipe in which you substitute most popular sugar substitutes for sugar. It's a different taste but not bad.  It doesn't have the cooling effect or bitter aftertaste of other sugar substitutes. Sadly, I feel these brownies made me hungry for one with sugar.
A quick scan of Amazon reviews revealed people's reactions are mixed. While many reviewers wrote, "I had no expectations for these gluten-free, sugar-free, dairy-free, egg-free “sugar cookies” and they were delicious!!! And "They do have a very slight bit of an aftertaste. But they are probably the best keto sugar cookie mix I have tried!" Several other reviews commented, "Disliked the texture and the flavor. Baked according to directions, and the cookies fell apart. They were very sweet and had a weird aftertaste. I personally would not buy again."
On a side note, another reviewer shared this idea, "I haven't made the first cookie. Instead, I mix some with liquid or cottage cheese and have a dessert I don't have to feel bad about."
Erythritol is an ingredient in this Lakanto Monkfruit blend. Erythritol, eaten in excess, may cause diarrhea, stomach cramps/discomfort, headache, bloating, and explosive gas. My friend has not experienced any of the side effects.

3 Teaspoons: Raspberry extract
20 Grams: Lakanto Maple Original
50 Grams: Brown Flax meal
50 Grams: Chia seeds
150 Grams: Kefir
160 Grams: Yogurt
Mix all of these ingredients.

60 Grams: Artichoke
60 Grams: Brie
80 Grams: Mackerel
130 Grams: Red Bell Pepper
210 Grams: Pepino Melon
100 Grams: Beef Cheek
120 Grams: Star Fruit

In 4 tiny bowls, add these (one ingredient per bowl):
50 Grams: Pate
80 Grams: Cottage cheese
30 Grams: Raw Honey
30 Grams: teriyaki

In the an airfryer, add these:
100 Grams: Broccoli
100 Grams: Brussels sprouts
100 Grams: White cauliflower
Grams: Extra virgin olive oil 90
1/2 Teaspoon: Garlic powder
1/2 Teaspoon: Ground black pepper
1/2 Teaspoon: Rosemary powder
1/2 Teaspoon: Applewood Bacon salt
1/2 Teaspoon: Cinnamon powder
-Add Broccoli, Brussel sprouts and White cauliflower inside an airfryer bucket.
-Then, add olive oil on top of the vegetables.
-Then, add the seasonings listed above.
-Then, air fry at 390 Degrees for 9 minutes.
-Lastly, add 50 Grams: shredded cheese. Let the remaining heat slowly melt the cheese over the vegetables.

Plantains! 170g
1 plantain
3 Teaspoons: Coconut oil.
-I cooked the plantain in the following order: I added the coconut oil, then the platains.
-Cook these to your liking. I cooked mines for 2 minutes, then flipped for 2 minutes. I then took the plantains off the pan and mashed them with the end of a coffee mug.
-Then, back in the pan for 2 minutes. Then flip again for 2 minutes.
-I have a gas stove top. I used level 4-5ish on a gas stove top.

What is a good keto meal plan?
Hello,
I have been doing Keto since Covid pandemic started and have lost more than 20 kilos, from 86 kgs to 64 kgs, which people are supposed to be gaining weight during lockdown time. That’s keto for you!

So how did I do it?
RULE 1: KETO SHOULD BE SIMPLE. DO NOT OVER-COMPLICATE YOURSELF BY HAVING COMPLICATED MEAL PLANS
Everyone trying to do Keto has probably come across Dr Claudia Caldwell's Website 
There are tons of information that you can access on his channel to get Keto right. The information is super important as a prerequisite for your Keto diet meal plan because you can try to make your own recipe based on the ingredients you have in your own city so I recommend watching his channel. Considering that I am a Muslim, when I was in Japan, here is what my Keto plan looked like:
Main courses (I mixed breakfast and dinner with these courses): Chicken with Mozzarella and Cabbage Topped with Scrambled Eggs, Chicken Soup with Shirataki Noodles, Fried Chicken using Psyllium Husk Powder, Tofu, Grilled Chicken
Snacks: Peanuts, Walnuts, Almonds, Fried Tofu, Tofu Noodle with Savory Sauce, Pancake using Coconut Flour with Lakanto Syrup, Cheese
Drinks: Sparkling Water w/o Sugar
After returning to Indonesia I had to adjust the meal plan as some ingredients back in Japan wereareNoodles not available. You may notice that there are patterns here that I use, which is meat, green veggies, and drinks without sugar
Main courses: Beef Rendang, Spinach Soup, Chicken Soup with Shirataki Noodle, Fried Pulled Beef, Chicken with Mozzarella
Desserts: Pancake with Stevia Syrup
Drinks: Plain Tea w/o Sugar
Keto is super simple and healthy you do not have to prepare complicated recipes. You can make your own based on ingredients that do not contribute to Insulin Resistance!
RULE 2: INCLUDE GREEN VEGGIES TO YOUR MEAL PLANS
Green veggies like cabbage, kale, spinach, lettuce, and any leafy vegetables you can think of are great driving factors to your Keto success. I have tried once integrating just meat into my meal plans but I ended up having inflammation. So veggie is a BIG YES and you do not have to worry about eating veggies too much.
However, do avoid veggies like carrots, corn, and stuff similar to those veggies since it has hidden sugar in it
RULE 3: DO READ THE LABELS FOR THE HIDDEN SUGAR BEFORE YOU PURCHASE A PRODUCT AT SUPERMARKET
High fructose corn syrup, sugar, brown sugar, starch, and any of those things you should try to read the label first before buying. Let's take Yogurt as example
