this was my first try at making ciabatta rolls based on the alexandra's kitchen recipe. my boyfriend said this was the best bread he's ever eaten ... but he says that every time and he hasn't had my usual weekly bread. the crumb was not as open as i'd like (i wanted big air bubbles but just got small ones... which is also good lol) but the dough was surprisingly easy to work with for 80% hydration.
