from Jewish Cookery by Leah W. Leonard, 1949 New York. 12th printing 1958
Duckling with a Blush
A 4 1/2 to 5 1/2 pound duckling, prepared and disjointed
2 cloves garlic
3 tablespoons chicken schmaltz or other shortening
2 tablespoons flour
1/8 teaspoon each celery salt, onion salt, paprika
2 cups stewed fresh cranberries or 1 tall can whole cranberry sauce
Rub each piece of duck with garlic. Combine flour and seasoning. Roll each piece of duck with flour mixture till well coated. Melt fat in bottom of casserole and add duck pieces. Top with cranberry sauce, cover and bake 45 to 50 minutes per pound at 325°F.
Serves 5 to 6.
