Like, it's just quirky rice. It goes with everything, rice goes with. You cook it the same way. It just has a stronger taste.

I've never had proper Hoppin' John (my family's from Appalachia, not the coast/low country), but I love any bean-related tradition. I gave it a whirl with some ingredients and techniques that aren't authentic, but they did turn out a delicious result.

I cooked black eyed peas with the bone from our Christmas ham, along with some onion, garlic, thyme, bay, tomato paste, and a little crushed tomato. I made basmati rice separately because I don't like mushy rice and I haven't mastered a one-pot rice dish that doesn't come out overcooked. Cooked the collard separately too, with some bacon, onion, garlic, and a little bit more tomato. Served with Frank's Red Hot.

Puerto Rican 🇵🇷 peasant food is the best food in the world, in my opinion. My grandma grew up in Puerto Rico. The family was very poor so they learned to take humble ingredients and transform them into a delightful and delectable dish. The red kidney beans were made by making a sofrito of onions, green peppers, garlic, tomato paste, salt, and pepper. You then add the beans that have been soaking in water overnight to the sofrito. After adjusting the seasoning, the beans cook on low heat until they are tender. You serve them over white rice. This dish is sooooooo delicious that I would choose it over steak and lobster any day. Puerto Rican 🇵🇷 peasant food is spectacular. These beans taste so good that I don't even miss the meat. They are high in protein. It's a very healthy and nutritious meal. It is inexpensive and it's fantastic. I, highly, recommend learning to make great rice and beans. I'm gonna have another bowl. Mmmmmmmm ❤️ 😍😋😋 thems good eats 😉😋

New breakfast place nearby! Woke Breakfast & Coffee opened in Coventry, CT and I had to check them out. My companion and I split chilaquiles with poached eggs and rice and beans, breakfast enchiladas with rice and beans, churro crepes, corn beef hash, and blueberry ricotta french toast.

Result: Victory!

A nice little trick with the Breville Fast Slow Pro for rice and beans. After adding the rice and water/stock, just throw the contents of a can of beans in there too and pressure cook. One less pot to wash, and the flavors soak into the rice.
