Lychee Sandesh in Rabri
Sandesh:
1 can lychees ( 10 to 15 lychees peeled and destoned)
1 liter (2¼ cups) whole milk
4 tsp. sugar
2 Tbsp. water
¼ tsp. citric acid
1 pinch cardamom powder
Rabri:
1 ½ liter (6⅓ cups) milk
1 slice bread
¼ cup sugar
10 almonds, chopped finely or sliced
10 pistachios, chopped finely or sliced
2 pinch cardamom powder
a few saffron strands steeped in a little milk
For the Sandesh, bring the milk to a boil. Add citric acid dissolved in a little water, continue to boil till the milk curdles. Strain the paneer by draining excess water and allow it to cool.
Put the paneer and sugar in a blender and churn to obtain a smooth paste. Add this paste to a pan and fry slightly (for 2 minutes) switch of the flame and now add the cardamom.  Let this mixture cool completely.
For the rabri, boil milk in a heavy bottomed vessel. Keep stirring continuously till it is reduced to 3/4 th the quantity. Add sugar and stir till it is dissolved.
Now churn the bread in a blender by adding 2 tsp of milk. Add this to the milk mixture followed by cardamom and saffron.  Bring to a boil.
Remove from heat and allow it to cool completely. Once it is cooled add the chopped nuts reserving few for garnishing on the top.
Stuff Sandesh in fresh or tinned Lychee. Put the stuffed lychees in Rabri. Garnish with chopped nuts.  Serve Chilled
