White Peach and Rose Sorbet

4 cups white peaches, sliced

2 Tbsp. lemon juice

2 Tbsp. rose water

1 cup sugar

½ cup water

2 Tbsp. lemon juice

rose petals for garnish

In a medium pot, combine the peaches, lemon juice, rose water, sugar and water to a simmer. Cook for about 5 minutes, stirring often, until the sugar has dissolved and the peaches are soft.

Let the mixture cool for about 15 minutes, then pour the contents into the jar of a blender. Puree on high until the mixture is very smooth. Add extra 2 tablespoons of lemon juice and quickly blend for a few more seconds.

Pour the sorbet mixture into an ice cream maker and churn according to directions or just pour it into a metal loaf pan and put in the freezer. Either way, the sorbet should be in the freezer at least 6 to 8 hours.

My identity history

I used to id as bisexual when I was ±10 yo, then I came ±18 yo and noticed there are monogamous bisexuals… then I used to be panromantic ace and now a polysexual aromantic.

But this never contemplate/represent my sentiments. I was like an angeligender as a child, I imagined myself as a sexless angel dating two angels. In the end of the day I was just a nonmonogamous gay guy. I'm not even nonbinary I guess, just gay passing and still gender conforming, if that makes sense for y'all, because I'm just a masc folk that periodically you will notice I'm gay lol.

It was really good keeping me with mogai identities (aka neolabels/microlabels) but this is too hard to keep up, I'm sloth kin (likely coping a layman) so say whatever you want.

Plus I'm also a gold star gay (never dated a woman (or at least cis woman)), in rough terms. Keep in mind I dated trans men too, gay does not mean transphobic.

If I ever hormonally transitioned, I would be a bihet woman (or just straighty-ish idk), if I was born a female I would be a lesbian and probably gender critical.

In Brazil (now my race, yes it influences your gender personhood) I'm just a basic white, as I'm Celtiberian, then you will see me as a typical Brazilian, because ethnoracially mixed with PoC, but in the end of the day I'm more rice (pale…) than bean (…dark skinned), I'm socialized as a white folk, even though for Westerners we are just Latino (at least ethnoculturally), but that just turns out to be biracial or multiracial.

If I ever gone to gender theorist classes everyone would assume I'm that basic white cis gay man who plays with gender roles to be a woke (called deconstructed here).

I'm almost like trying to unleash myself all from this trainwreck called tumblr, but I have psychosis and hyperfixations that makes me stay here.

Strawberries & Cream Scones

8 medium strawberries, quartered

2 cups unbleached all-purpose flour

1 Tbsp. baking powder

3 Tbsp. white granulated sugar

½ tsp. fine sea salt

5 Tbsp. unsalted butter, cold

1 cup heavy cream

Preheat oven to 200 degrees F. Place strawberries on a lined baking sheet. Transfer the baking sheet to the oven and bake for 45 minutes, until strawberries are slightly de-hydrated. Set aside to cool.

Adjust oven rack to middle position and turn oven up to 425 degrees F.

Place flour, baking powder, sugar, and salt in large bowl. Whisk together until thoroughly combined.

Using a box grater, grate the cold butter into the flour mixture. Working quickly, and using your hands, mix the butter into the flour mixture until it resembles a coarse meal. Gently stir in strawberries. Pour in the heavy cream and mix until the dough begins to form, about 30 seconds.

Transfer dough and all dry, floury bits to a slightly floured countertop and knead dough by hand just until it comes together into a rough, slightly sticky ball, 5 to 10 seconds. Pat the scones flat to a 1-inch thickness. You can cut the scones into 8 wedges or you can use a biscuit cutter. I did the latter and ended up with 8 round scones. Place the scones on a parchment-lined baking sheet. Beat an egg with a tablespoon of water together and brush the tops’ of the scones with the egg wash.

Transfer the baking sheet to the hot oven and bake until scones are light brown, 12 to 15 minutes. Cool on a wire rack for at least 10 minutes. Serve warm with butter.
