Jocón de “Pollo”
(Guatemalan-inpsired Soy Curls)

1 package soy curls
2 cups vegetable bouillon
1 tbsp olive oil
1 white onion, peeled and chopped
1 green pepper, cored and chopped
3 cloves garlic, peeled and minced
1 cup vegetable broth
1/2 cup roasted pumpkin seeds
1/4 cup roasted white sesame seeds
1 large bunch cilantro
a small handful of fresh mint
1 can (12 oz) tomatillos, drained and rinsed
1 tsp chili paste
1 tsp sea salt
1/4 tsp black pepper
1 tbsp olive oil
the juice of one lime
6 green onions
1/4 cup black sesame seeds
1 tbsp agave
Serve over Coconut Rice. (Recipe below.)
Place soy curls in a large glass mixing bowl. Pour vegetable bouillon over top. Stir. Allow to sit for at least 10 minutes to rehydrate.
Heat oil in a large saucepan over medium-low heat. Sauté onion for several minutes. Add green pepper and garlic and sauté for another few minutes. Remove from heat.
Place sautéed veggies in a high-speed blender along with the; vegetable broth, pumpkin seeds, sesame seeds, cilantro, mint, tomatillos, chili paste, salt, and black pepper. Blend until smooth.
Heat 1 tbsp olive oil in a large saucepan over medium-low heat. Stir in the rehydrated soy curls and brown for a few minutes, stirring frequently. Pour the blended green sauce over top. Continue to cook for about ten minutes, stirring occasionally.
Remove from heat and stir in; lime juice, green onions, black sesame seeds, and agave.
Coconut Rice
1 tbsp coconut oil
1 onion, peeled and chopped
3 cloves garlic, peeled and minced
2 cups white rice
1 can (400 ml) coconut milk
2 cups water
1 tbsp coconut sugar
1/2 tsp sea salt
In a medium-sized saucepan, heat coconut oil over low heat. Sauté onion for several minutes. Add garlic and saute for another minute or two. Stir in the; rice, coconut milk, water, coconut sugar, and sea salt. Turn heat to high. When it comes to a boil, reduce to low and simmer for 10 minutes. (Alternatively cook in rice cooker.)

Guava BBQ Soy Curls

1 package soy curls
2 cups vegetable bouillon
Guava BBQ Sauce
1/2 package (200 g) guava paste, cut into chunks
1/4 cup apple cider vinegar
2 tbsp cup tomato paste
2 tbsp water
the juice of one lime
2 tablespoons soy sauce
1/2 tbsp liquid smoke
1/2 tsp smoked paprika
1/2 tsp chili paste
2 cloves garlic, peeled and minced
1/2 tsp sea salt
1/4 tsp black pepper
1 tbsp coconut oil
Place soy curls in a large glass mixing bowl. Pour vegetable bouillon over top and stir. Leave soy curls to rehydrate for at least 10 minutes, stirring occasionally.
Place the; guava paste, apple cider vinegar, tomato paste, water, lime juice, soy sauce, liquid smoke, smoked paprika, chili paste, garlic, salt, and pepper in a high-speed blender. Blend until smooth and creamy. (It will be quite thick.) Pour over rehydrated soy curls and stir to coat evenly. Allow to marinate in fridge for at least an hour, but overnight is ideal.
Coat the bottom of a slow cooker with 1 tbsp coconut oil. Place marinated soy curls in slow cooker and cook on high for one hour, stirring occasionally.
Serve with mashed potatoes or rice and ideally some coleslaw.
