While it’s been so damn hot, I’ve been looking for creative ways to not have to cook, and this is one of my favorite new hacks: I cured this filet of Sockeye salmon for 36 hours in a salt, sugar, and curry-inspired blend of spices from Gail Simmons’s Bringing it Home that she uses for a seared salmon recipe, and otherwise kept the rest of the recipe as-is with a lemon yogurt sauce and a crisp fennel salad.

Had she been at home, her father would have been up first. Not quite with the sun, but certainly before the daughter and wife. The bread left to rest overnight would be baked and cooled until her mother woke. She would add some fat to a sizzling pan and forage the cupboards for roots or potatoes or sausages or bread or eggs to fry in it. And Fennel, already awake, would listen. Listen to the food being prepared, listen to the unfamiliar contours of her parents’ voices without the performance of company and observation, listen to the quiet outside. She liked to pretend she was invisible in these pale early hours, transparent in her skin, until the sun finished nuzzling the clouds and rolled fully into the sky. 

Had she been at home, she would have been several years younger. She wouldn’t crawl out of a tent in every weather in the world to climb a tree where her foodstuffs were kept away from creatures during the night. She wouldn’t ration out dried grains while calculating distances between towns and water sources. She wouldn’t stretch stiffness and bruises from her sinewy muscles and polish a sword to keep the night’s dampness from rusting it. She would wear hope like a hair ribbon rather than a shield. She would have what she now missed and wouldn't understand why she left.
