I found a new favorite berry, the kiwi berry! Other names hardy kiwifruit, baby kiwi, dessert kiwi or cocktail kiwi. This member of the Actinidia genus (same as regular kiwi) is not some new fangled genetic experiment in miniaturization. Native to Korea, China and Siberia, these tiny hairless kiwi’s taste very similar to regular kiwis but sweeter and more delicious in my opinion (i think the best way to describe it is if a kiwi and a blueberries has a sweet chubby baby😅)! Unlike the common kiwi the skin is soft and smooth and can range in color from green to purple. As it is grown in both hemispheres, they can be found almost all year! 💚 They are rich in vitamin C and naturally low in fat, cholesterol and sodium. They are also high in fiber and a great source of potassium, vitamin E and magnesium. The world of plants is endless! There are over 200000 edible plants in the world so when people say that they could not be vegan because there would be no choice or they would not know what to eat it is only down to a lack of education. I have been a chef my whole life yet since becoming vegan i have discovered so so many delicious plants that i would most likely never have discovered, but these past years have opened up a whole new world of amazing ingredients our beautiful planet has to offer. Matcha Oat Latte The practice of preparing and drinking powdered tea was first popularized over 900 years ago by Chinese Zen Buddhist monks. Traditional Matcha preparation is therefore ritualistic and meditative by nature, requiring customary tools and following a careful step-by-step process. In the 11th century, this ritual was shared with the Japanese, who have been preparing and sipping the frothy tea drink ever since. . In recent times tea cultivated specifically for Matcha is primarily grown in two Japanese regions: Uji in Kyoto and Nishio in the Aichi prefecture. Tea leaves grown for Matcha are specially shade-grown over the course of three weeks. Shielding the plant from direct sunlight incites an overproduction of chlorophyll, which contributes to Matcha’s distinctive bright green color. In addition, shading the plant yields an increase in the amino acid theanine, which is thought to give the drink its deep umami flavor. Like green tea, matcha comes from the Camellia sinensis plant. However, as it’s grown differently and has a unique nutrient profile. . Matcha contains a concentrated amount of antioxidants, which may reduce cell damage and prevent chronic disease. Some studies have shown that matcha could prevent liver damage and decrease the risk of liver disease. Matcha has been shown to improve attention, memory, and reaction time. It also contains caffeine and L-theanine, which can improve several aspects of brain function. Studies have found that the compounds in matcha may inhibit the growth of cancer cells and decrease several heart disease risk factors. Sometimes mistakes turn out amazing 😅 I was making some raw corn bread in the dehydrator and completely forgot! So now it is crisp bread. A thick type of cracker. And they taste great. Lesson: sometimes you do things unintentionally, or make mistakes , or things don't go as planned. This does not mean the outcome wont be amazing. In fact it could be better than your original plan to start off with!!! Basil and roquet pesto pasta Home made sun dried tomatoes Pasta: quinoa and eggplant Simple and delicious . When craving cooked comfort foods like pasta i will always choose organic and whole grain pastas if i am not making it myself. Quinoa is one of the yummiest in my opinion. I am never super strict on myself! I love being super healthy, i thrive most when eating clean whole foods and mostly raw. But if i want something, i do not deprive myself from it, i just always make sure that i stick to the best version of what i am craving. For me, personally, i believe that it is important to allow myself days where i eat whatever i fancy without judgement. Just a side note, i always fancy whole plant based foods, but sometime they are cooked, comforting, endulgent things, that i know wont be great for my health but i allow myself to just have them. Such as chips! Or pizza. But i will always make the best version of these dishes (always whole foods and never processed!) When you eat very clean diet your body will have a reaction to eating anything which is slightly heavier so it is easy to not over indulge! I am very hard on myself when it comes to food as i teach health and wellness. But i always teach people to never be super strick to the point where if they go off path in any way they will feel terrible. I think its important to be kind to yourself above all else. This sweet, juicy tropical fruit varies in shape, size, flavor and texture depending on the variety and the region in which it’s grown. There are over 1,000 different mango varieties cultivated around the world ranging in size from 150g to nearly 2 kilos!, in texture from soft and pulpy to firm to slightly fibrous, and in color from green, yellow, orange, and red. Mangos are cultivated in temperate climates around the world, including India, China, Southeast Asia, and South America, as well as Australia, California and Florida. The most common mangos available in Europe especially in Spain tend to be the big fat juicy South American varieties which have when ripe a deep red and green skin and tend to be very roundish and large unlike the ones i find in Thailand which are all yellow and elongated. Green mango is the tart, unripe fruit, which is commonly used in various salads and vegetable dishes. Today i found these! 😍😍😍 They are tiny little mini mangoes which i have never seen before! I have seen Champagne mangoes before which are small, luscious, golden mangos that are some the sweetest you’ll find! The skins of Champagne mangos change from green to a deep golden yellow when ripe. These however look a lot like mini versions of the Tommy Atkins mango or Hadens. I did ask the lady in the grocery shop but she just said they are called mini mangoes 😅. If anyone knows what they are i would love to know. Beetroot gazpacho with rocket and basil pesto. Gazpacho is a raw cold soup thought to originate in Spanish cuisine, especially that of Andalusia. It is actually an ancient dish mentioned in Greek and Roman literature! The base of the traditional recipe is tomato though now a days us Chefs love to experiment with many different ingredients and flavours that make up highly nutritious and delicious versions of this beautiful dish. When people here the term raw vegan they usually reject it with passion thinking that it is extreme and often ridiculing the concept, not realising that a percentage of there diet is already raw and vegan! Many cultures have raw vegan dishes naturally in there cuisine! There is nothing extreme or unusual about it! Raw plant food provides digestive enzymes necessary for a healthy gut, elevated numbers of vitamins and minerals and natural detoxifying properties all which are not found in other ways of eating. Instead of viewing things you are not familiar with as extreme or just fobing them off because you have a unjustified prejudice of assuming it would not be to your taste why not just put those thoughts to one side and open your mind to the possibility that you might be missing out on some highly delicious and nutritious foods that would not only tantalise your taste buds but also be incredibly beneficial to your health! 💚 . Guacamole with Plantain chips . Eating out as a vegan in Mallorca is very very very limited. Especially around my area. @noname_restaurant luckily has a couple of things on the menu especially for vegans. Not much to choose from, i think they have 3 dishes, but it is super yummy And better than having to just ask if they can make you a plain green salad or be that really annoying person that asks to modify the entire menu like in virtually every other restaurant here!
