#AfricanRecipes | How to Make Cow Pea Leaves | Umfushwa, Nyemba, Kunde,Thoroko
Cowpea leaves, commonly known as umfushwa, or nyemba in Zimbabwe, are not only delicious but also have numerous health benefits.  #africanfood
 1. Cowpea leaves are packed with essential nutrients such as vitamins A, C, and K, as well as minerals like iron, calcium, and magnesium. They also contain protein and dietary fiber, making them a nutritious addition to meals.
2.These leaves are rich in antioxidants, which help neutralise harmful free radicals in the body, potentially lowering the risk of chronic diseases such as cancer and heart disease.
 3. Iron is crucial for the production of red blood cells and the prevention of anemia. Cowpea leaves are an excellent source of iron, especially important for individuals with iron deficiency.
 4. The high vitamin C content in cowpea leaves helps strengthen the immune system, protecting the body against infections and illnesses.
 5. The dietary fiber in cowpea leaves aids in digestion and helps prevent constipation by promoting regular bowel movements.
6. Cowpea leaves are a good source of vitamin K, which plays a key role in bone health by aiding in calcium absorption and promoting bone mineralization.
 7.  Being low in calories and rich in fiber, cowpea leaves can help with weight management by promoting satiety and reducing overall calorie intake.
 8. In Zimbabwe, cowpea leaves are commonly used in traditional dishes. They add a unique flavor and texture to dishes while providing nutritional benefits.

Harissa chicken Category: Chicken Cuisine: African Quantity : 4-6 servings Time: Preparation: 35 minutes. Cooking 1 hour and 20 minutes. Calories: 146 kCal Ingredients: Chicken breast fillet — 650 grams Chicken drumsticks — 4 pieces Sweet yellow pepper — 120grams Sweet red pepper — 120 grams Sweet green pepper — 120 grams Red onion — 2 large onions Harissa — 4 teaspoons Olive oil — 1 tablespoon Mint — a handful Description: Harissa chicken is a dish from North Africa. Harissa pasta is very spicy and is great for cooking meat and vegetables. The taste of hot pepper gives the chicken a piquancy, and the leaves of fresh mint balance this sharpness. We prepared the pasta in the previous recipe, but you can buy it in the store. The dish is very simple, and you can feed your family. The recipe for Harissa pasta is here. Instruction manual: 1. Peel the red onion and cut it into 4 parts. 2. Wash the red, green and yellow peppers, remove the seeds and partitions and cut into pieces the same size as the onion. 3. Cut the breast fillet at an angle into 5-6 parts. 4. Make incisions to the bone on the chicken shins. 5. Smear the vegetables and chicken pieces with Harissa paste. 6. Place on a baking sheet or baking dish. Add a little olive oil. 7. Place in the oven for 1 hour and 20 minutes at 482 °F (250 °C). Cooking may take more or less time, it all depends on the volume of the oven. 8. Mix the finished vegetables with fresh mint leaves. Serving: Serve hot sprinkled with a little mint leaves.
