january is halfway over, i need to have everything and i mean EVERYTHING built basically a week in advance to submit to steam and have it ready by the date i want it ready which means it has to be done BEFORE that for people to playtest, so if you see me on here kick my ass i have SHIT TO DO

Found a dutch oven for like, astoundingly cheap yesterday and was finally able to try baking bread in one ! This is a poppyseed rye that I darkened with some molasses and cocoa powder, mostly out of curiousity (i often use molasses but this is the first time trying cocoa as well. Smelled super nice while baking). I added those after the first rise and didn't do a whole lot of kneading when i did, and it seems to have marbled, if the bit of exposed interior (didn't grease the dutch oven, and that part of the crust stuck) is anything to go by. Definitely overbaked it a little, but super happy with how much oven spring I got.

Also, the jams from last night. Very pretty reds.

#baking #canning #its not a full rye (like 4:1 wheat bread flour to rye flour) bc i only had a little rye as it happened #just wish i hadnt baked it on the bottom rack the whole time. thats what i typically do bc my oven is shit so otherwise #the bottom ends up getting soggy somehow. clearly not necessary in a dutch oven though #its probably not as burned as it looks (its very dark brown but not black on the bottom) what with the general color of the bread #but still #anyway very excited about this new baking contraption #ooh i bet its gonna make some great barmbrack... i usually bake that in a decorative tin bc pretty #but it doesnt rise much. but usually neither does rye and this one rose in the oven rly well #so the steam and the fact that the crust doesnt solidify prematurely bc its covered and kept moist seems to help #**3:1 flour ratio. forgot i did 3/4 of my recipe bc i didnt think it would fit a full recipe. pretty sure it will tho
