Vegan Kin Food Ideas
S'up! So, we've been seeing a lot of kin food posts, but the focus is always on meat. Then when vegan or vegetarian options are listed it's like salad + fruit and that's it. We've been vegan for some years now so here's a list of things we eat that we think others might enjoy too!
A piece of advice we found helpful is to think about the food item you miss and break it down into what exactly you miss. If you miss eating gems, is it the appearance? The crunch? Gritty texture or dry taste? In that spirit of that, our list will be largely broken up by texture/experience.
Crunch Crunch Snacks
This includes snacks/sides that get your jaws working or have a satisfying "snap" to them.
Roasted chickpeas
Kale chips
Ants on a log (celery, peanut butter and raisins)
Hummus + baby bell peppers/sugar snap peas/carrots
Granola / cereals (a lot of types are vegan, read the ingredients before purchasing)
Banana chips
Nuts + seeds
Popcorn (avoid "buttery" packages, buy plain or kettle corn)
Peanut butter pretzels (crunchy outside, delicious soft inside)
Smartie candies
Keep your cookies/chocolate bars in the fridge or freezer
Also, load cookies up with extra nuts/seeds/choco chips
Soft, but with some crunch
This section is for dishes/sides that are overall easier on the teeth, but with elements that still crunch or snap. If you're looking for recipes that combine different texture elements check these out.
Lentil nachos + nacho cheese sauce
"Crunchwrap" (quesadilla made with refried beans and homemade cheese sauce that we open and place tortilla chips and lettuce inside after grilling)
Tempeh bacon (we like this on a BLT or grilled cheese sandwich)
Crispy tofu sandwiches
Grilled asparagus
Apple slices with nut butter
Pickles
Apple turnovers
Vegan sushi (there's a ton of recipes, check out these two collections to get started X, X)
Falafel (can be used a hundred different ways, sandwiches, wraps, on it's own, etc.)
Roasted chickpeas again, but with a caveat**: You can roast them at 350 F for 30 mins and they'll be cooked enough to pop between your teeth, but soft in the center. We like to either eat them as-is or top our salads with them. (We season with salt/pepper before going into the oven, nothing else) **Must be eaten after baking, they will not keep
For the foragers in the crowd
These dishes focus more on having either multiple different foods in a visible way or a tactile element to how you eat them.

Overnight oatmeal
Trail mix
Pumpkin bars (We replace the egg with a flax egg and use vegan butter)
Chocolate chip banana monkey bread
Corn on the cob
Grilled veggie kebabs
Cranberry cilantro quinoa salad

Salads topped with sliced fruit, nuts, grains and/or beans
Edamame (a favorite, we love pulling out the insides with our teeth, you can get ones without the pods if they bother you)
Plant-based burgers, the kinds with the chunks of veggies (our favorite is dr. praeger's black bean quinoa burgers)
Chewy Foods
This section is for foods that work your jaw, but more in a "needing to chew" way.
Potato gnocchi
Dried fruit (comes in all different flavors, not just raisins)
Swedish fish, red vines, skittles or sour patch kids
Granola bars (a lot of types are vegan, read the ingredients before purchasing)
Thick bread-y pizza (our favorite dough recipe)
Pancakes
Chewy chocolate chip cookies
Peanut butter cookies
Baked oatmeal
Potato skins
Meat Substitutes
The most obvious way to make a dish vegan is to sub in the appropriate mock meat. We've eaten quite a few and we won't sugar-coat it: a lot of them are either going to match the taste, texture, OR look. It's hard for mock meats to copy meat 1:1, some get way closer than others, but if you go into this expecting no difference you will be disappointed.
Our two favorite brands are Impossible and Gardein. We've tried a lot of their products and have yet to eat one we don't like.
These aren't your only options though!
Beans
Falafel (deep-fried balls of ground chickpea)
Tofu
Tempeh (fermented soybeans)
Seitan (made from wheat gluten)
Jack fruit
You might have guessed based on the recipes shared, but we usually opt for beans. We haven't eaten much seitan or jack fruit, but they are options. At our local grocery stores they're sold in the "free from" section and can be brought pre-seasoned and ready to cook with. Jack fruit in particular is a popular replacement for shredded pork.
The trick with a lot of these is to marinate them. Tofu in particular so you can infuse it with flavor. Here's a few recipes we love:
Lentil and sweet potato loaf ("Neat"loaf)
Marinated tofu
Crispy tofu sandwiches
Tempeh bacon
Chili (our mom's recipe that we modified)
Soft / Squish
For things that are soft or squishy and you can slurp up.
Seaweed salad

**Just a reminder to supplement for B12 if you're consuming a vegan diet. There are some foods that are fortified with it; however, a supplement is cheap, easy to find and all-around a more reliable way to ensure you are getting enough.

This is it. Your last straw. Your final binge.
Any time you find yourself craving food, remember.
Remember the thick, slimy coating of mucus on your throat from all the sweets. Remember your bloated belly, filled with sugar. Remember how it feels to gag when you swallow because the mucus is so thick. Remember the gas, burbling up your throat trying desperately to escape. Remember how loud you digest. Remember the gurgles.
And remember how it tasted too.
Salty food are not all they’re cracked up to be. You don’t like them. You know you don’t like them. You don’t need to try them again to be sure. You don’t like peanut butter or egg yolks either. You don’t like any kinds of chips, especially potato, barbecue, and overly artificially cheesy ones. You don’t like bread. You don’t like cake. You don’t like chicken. This has been the case for your entire life. You don’t need to make sure.
And, as you learned today, you don’t like donuts, either. You don’t like any chocolate except for dark. You don’t like cookies.
So, to help you for future reference, here is a list of foods that you DONT LIKE!!! (Not even as an ana thing!! You have literally never liked these foods!! So stop eating them!!! You don’t have to say yes when someone offers you something!!!!)
1.) Cake.
2.) Pastries.
3.) Cookies.
4.) Cupcakes.
5.) Donuts.
6.) Any overly syrupy desert. (Except on extremely special occasions.)
7.) Candy. (Including chocolates.)
8.) Candy bars/Granola bars. (You know that one will lead to two, which leads to four… And they are gross??)
9.) Any and all food from the place. No matter what. No exceptions.
10.) Chips.
11.) Peanut butter.
12.) Egg yolk.

19.) White potatoes and any products that come of them, including: French fries, Baked potatoes, Wedges, etc.

21.) Bananas. (You can eat them if you want, but you don’t like them.)

How to build meals to lose fat
Eating the right kind of meals can be just as important as working out when it comes to losing fat.
With a few simple tips, you'll be well on your way to having the body of your dreams in no time. So let's get started! Here are some easy tips that will help you lose fat and reach your Fit Girl goals:

1. Start off your day with a breakfast that is full of protein (read what protein is and why it's important) and complex carbohydrates. Oatmeal with nuts, seeds, protein powder and banana slices is a great way to get a nutritious start to the day! 🍌
2. Eating enough protein is crucial when losing fat, so make sure you're having lean proteins throughout the day. Grilled chicken🍗, shrimp and fish are excellent options. You can also try out some vegetarian options like tofu, beans and lentils.
3. Get creative with your snacks - think beyond chips and dip! Nuts, seeds, yogurt, boiled eggs🥚, or smoothies are all great snacking options that will keep you full for longer.

4. Salads🥗 are always a great meal option when trying to lose fat. Load up on leafy greens and add lean proteins like tofu, tempeh or canned tuna or salmon to the mix. For an extra nutritious boost, try adding some quinoa to your salad as well!
5. If you're craving something sweet after dinner, don't reach for a candy bar. Opt for a protein bar or natural sugars instead. Berries, apples🍎, or a small serving of dark chocolate are much better options!

I should also mention that even as you're trying to lose fat, that doesn't mean you should ban fat-rich foods from your diet entirely. Fat is one of three macronutrients (the other two are protein and carbs). For optimal health and balanced diet, you need to eat fat.
Some examples of healthy fat-rich foods include salmon, avocado, nuts, mackerel, beef, pork, butter, olive oil, olives, and eggs.
Eating the right kinds of meals consistently can help you lose fat and reach your Fit Girl goals. Start prepping some tasty, nutritious meals today and get ready to see the results!

Iceland food:
Iceland in general did not disappoint! It was an unexpectedly delightful country to visit on the way home to Denver. We had friends who had told us they loved Iceland but I just didn’t have high expectations for some reason. Some of the highlights were the food. When the occupational therapist at my dad’s rehab place found out we were going to Iceland she immediately told me we had to go get lobster bisque at the Seabaron restaurant. So we did! It was very tasty! Along with some Blueing fish and grilled veggies. Lots of locals on the bottom floor. We were seated upstairs. :)
During my research I had read about the Braud and Co. bakery and also a friend who had just been here several days ago recommended it. There was a location one block from our Airbnb. Meant to be. Norton and I walked over the first morning right when they opened. The cinnamon rolls were still in the oven for five more minutes. They were warm and delicious. I am writing this on our second morning. I just took the bakery box back and got five more for breakfast.
During our adventure along the South Coast yesterday we stopped for lunch in the little town of Vik. Our friend, mentioned above, had texted me about a crepe stand. So we stopped. It was a cute little “house” where the owner was so friendly and talkative. He was actually from Poland and had built the structure himself. When I asked how long he had been in business he said, “Three weeks.” He made two types of crepes-sweet and savory. Sweet-Nutella, banana and Prince Pol candy bar wafers. Savory-ham and cheese. We tried both of course. And he also had coffee. It was delicious. Another highlight of our trip! When we got gas later on in the town I told the person filling up next to us about the crepe place and encouraged him to go! Crepes.is
The last Icelandic food we had was the Icelandic hot dog. They are made from lamb. You are encouraged to get one with “everything.” The “everything” included-crispy fried onions, raw onions, ketchup, sweet mustard, remoulade sauce and relish. We all liked them. But nothing too amazing in our opinion.
Iceland, you are a yummy place to visit.

February 2nd, Baracoa and local attractions
Breakfast on the 2nd story terrace, local fresh fruit and juice, buns and always eggs with coffee. Very good and nicely done. We hopped on the bus that took us to a local cocoa farm, Daisy was our host and she explained all about the trees and then went to the whole process of harvesting until finished product, in Spanish. Jackson had to translate. They grow three kinds of cocoa trees at the farm and the third is a hybrid of grafting the first two. Third appears most productive. Cocoa trees are five years old before that flower and produce pods. A very mature tree may have up to a thousand blooms on it but only about a hundred will produce cocoa pods. Of the different kinds one have green pods that turn to yellow, one rusty red pods and one brown. These trees require shade and thus are planted amongst banana, papaya and coconut trees. I thought she said six months from flowers to mature pods. Once pod is ripe, they use a machete to cut it down and this same machete to cut open the pods. The beans are scooped out as a lump of goods.Large box like troughs, made of palm leaves, are used to dry the membrane off of the beans and these troughs are tilted to the oil from the mixture runs to the bottom. This is use in making the cocoa butter salve. Once the bean pods are dried they have to be cracked open to get the actual bean out (much the same as a walnut). The beans are then sold like that in bulk to the government. But what can be done is to grate it to make cocoa powder or to grinding it until more oils come out to make it a paste and make chocolate balls for baking or chocolate bars.. Purchased some to bring home as well.
From there we hopped back on the bus and visited a home that has made it their mission to help preserve the Cuban painted 🐌 snail, which is on the endangered species list. These people have mango trees that they populate with snails and help to keep the baby snails alive. Ants attack and eat them.
Next we proceeded to our lunch. It was a G Adventures sponsored business of a family owned restaurant on the water. Out table was outside and while our meal was cooking a local lady demonstrated how they make the candy of coconut and almonds. Went through the whole process then proceeded to show us how they make the palm leaf funnel containers for the candy. Purchased one and will be bringing it home.
Lunch was a smorgasbord of crayfish, swordfish, little tiny, tiny fish in a sauce, rice, cucumbers, tomatoes, cabbage, lettuce and green beans.
Once lunch was over we walked down to the river. Encountered many young school age children so distributed some of the art and school supplies I had brought with me. 
We get to the river and get into a wooden boat, more so a snow and the young man rows us downriver to a place where we land. We proceed to hike for a km or so. Rough going all stone, where we arrive at a beautiful swimming hole. We all swim for quite a while, before hiking back to the skow. The young man rows us back to the landing and we hop on the bus to hit a beach on the Carribean Sea. 
Eventually back to our Casa, which is beautiful and we have the penthouse terrace. We all meet for dinner and head to a place, have to admit food was mediocre and expensive for what we got. The rest of the group, all singles in their 30/40’s all head to the bars, we head to our rooms.
