Dinner tonight featured leftovers! And stuffed mushrooms!! Burger, chicken, stuffed mushrooms, rutabaga fries, and a spinach salad with tomato, red onion, avocado, feta cheese, sunflower seeds and bacon bits. And of course, a side of ranch with Sriracha for the fries. Breakfast: 204 calories Lunch: 353 calories Dinner: 859 calories Snack: 80 calories Total: 1,496 Thanks to working out today I still have close to 1,000 left over but I've maxed out my carbs so I think I'll just let it ride. I'm happy to report that this morning's great mood continued on for the rest of the day! I was surprisingly steadily productive all day which thankfully made the day zip right on by. And whattayaknow, tomorrow's finally Friday and my last work day before a week off for vacation!! Happy happy happy :)

My first official keto post to tumblr...yesterday I made the freaking amazing chicken crust for pizza. Loved it so much I went out and got supplies for more. I officially started keto last monday, but this was my first progress photo. Also it was my cheat day...I've been doing atleast one salad a day, yesterday was the first time being "naughty" :) My first goal is to lose 15 lbs before halloween. I wanted to strive for 20, but I also don't want to be crushed if I don't reach that mark by then. Over all I want to lose about 75 lbs.

FROM FAT BOMBS TO F BOMBS: The story of my first keto failure.
When you are doing keto on a budget, it’s really important to make sure that you’re always prepared for things because you can’t always run out and buy a #ketokrate or some sort of service such as those. So many times, those of us on a tight budget have to resort to making our own snacks. Of course, I realize that many people make their own ketogenic snack foods. For someone on a budget however, it’s very important that the snacks come out good, because many of us don’t have the resources to waste. This is pretty much my situation. So this week I’m going to be spending a few days out of town with my family who are not ketogenic. I decided that to keep myself composed I’d implement a back up system should I need something sweet, I decided to make my own fat bombs. This is only my second week of being ketogenic, but the recipe seemed easy to make and I have had pretty good success so far, so I couldn’t see any reason this couldn’t work… I should’ve looked a little harder.
I don’t really have any big mixing bowls, so I decided to mix everything in a sauce pan with the spout thinking it would be easier to pour everything into the molds. I started with a low heat while everything softened and everything started to blend together nicely. Then I started to add the cocoa powder and well, that’s where everything went haywire. I started noticing my mixture getting lumpy and unsettled. I took it off of the very low heat, and just started to mix and mix and mix by hand (by which I mean a spoon not a mixer). When I thought it had started to smooth, I begin the process of putting the recipe into my molds. As soon as I poured the first row I noticed to my horror that the ingredients were separated completely. Some cups had cream cheese some did not. Some were just butter somewhere just coconut oil. How in the blue hell did this happen! I realize that baking is not my forte, but seriously! What the ever loving shit! So now I have 7.2 molds filled with Ahhhhh hardening in my refrigerator because I just don’t know what to do with them now. The only thing I can think to do is to soften them and remix them, but I don’t see that turning out any better. Oy! Apparently the keto snack gods were not with me.
Everyone fails, I realize that we try things and sometimes we fail. That’s not what’s bothering me. I think I’m more hung up over wasting the resources such as a weeks worth of butter and possibly more of cream cheese. I know I will somehow find a way to use everything I destroyed, but it’s just the principle of the thing that’s got me annoyed.

I made keto buns today. Only 2 grams of carbs per bun and super fluffy and light inside. The plan is to eat these for lunch this week with the sloppy Joe I just finished making. Should be delicious:)

Ingredients -grilled chicken 🍗 -turkey bacon 🥓 -half an avocado 🥑 -2 fried eggs 🍳 -Spanish leaves 🍃 -diced up tomato 🍅 (¼ cup) -diced green onion -diced red onion (1tps) -cheese of your choice 🧀 -chunky blue cheese salad dressing (bolthouse farms has 2g carbs per serving and 100% fat) -side of sour cream

Okay, so I know that I said I would be posting every day or trying to and I have only posted once since I made this account a week ago. I was sending that time doing research and deciding what I wanted to do. I have decided that I am going to try keto. If you don’t know what it is I am going to briefly explain it, but I suggest if you want to try it or know more about it doing some research yourself on it.  So what is Keto? Keto, also know as a ketogenic diet is a high-fat, adequate-protein, low-carbohydrate diet. A keto diet is designed specifically to result in ketosis. This is when you force the body to burn fats rather than carbohydrates for energy.  If you want to learn more I am going to add a few links to the bottom of this post.  I have decided to do this because of all the high ratings and success stories that I’ve heard. Also, I think it will just work well for me.
