Crawfish Étouffée

This beautiful dish was invented in Breaux Bridge Louisiana, where our favourite radio star is from! Although it's invention is attributed the Herbet Hotel in the 1950s -after Alastors death- it is a classic.
Crawfish Étouffée has a sauce typically made from a blonde roux with that classic cajun seasoning. It contains the Holy Trinity of cajun cooking too: bell peppers, onions and celery. The main meat of this dish is crawfish tails and it is usually served with carbs like cornbread, cajun rice or vegetables such as green beans and potato salad.
It is chock full of flavour, and a filling inexpensive dish for low income families - which I believe Alastor is from.
Some alternatives to the crawfish are chicken and shrimp.

The difference between Étouffée and Gumbo.
These two often get mixed up, and I understand, they're both classic Bayou dishes. Here's how to differentiate them.
Texture: Both dishes use shrimp, chicken, or crawfish tail broth. BUT Jumbo has a thicker consistency, it's made from a dark roux and it tends to use more liquid to remain stew-like.
Flavour: Gumbo and Étouffée both use Cajun seasoning, but due to Étouffées blonde roux, it has a lighter, sweeter taste than the darker, fullness of flavour in Gumbo.
Meat: Gumbo uses a variety of meats at the same time (often shrimp and sausage are key components), as mentioned in the alternatives above, Étouffée typically does not.

2. Red Beans and Rice

We're on a roll guys! This is another dish from Louisiana! Although, it is specifically associated with New Orleans, where Alastor hosted his radio show. It has a fascinating history, partly due to it's African and French/Spanish routes - But it was also a struggle meal during the Great Depression. It was originally a Creole, not Cajun dish.
(Note: Red Beans and Kidney Beans are different legumes)
This dish also contains the Holy Trinity, as well as bay leaves, oregano, cayenne pepper, garlic powder and more. Its protein comes from Andouille sausages, but like Gumbo, a variety of meats are used. If you want Alastor to be traditional about it, he should make it on a Monday incorporating the left over ham bones from Sunday dinner. It is also complimented with long grain white rice and green beans, amongst many other things.
Considering Alastor witnessed the Stock Market Crash of 1929 -which led to the Great Depression - There is no way he hasn't come across this dish before.
3. Creole Bread Pudding

The queen of Creole Dessert has arrived. Can you guess where she's from? DING-DING-DING! That's right! New Orleans Louisiana baby! Recipes of this treat have been recorded since 1885, so it suffices to say she's a classic.
Like most bread puddings, it is made by combining stale bread (preferably French), beaten eggs and milk. However, this variation often has an incredible amount of vanilla extract. What it will be complimented with varies from person to person. Some examples are: Whipped meringue and whisky, raisins and apple, or walnuts and butter.
Although not as popular in the modern day, I like to imagine this is something Mimzy, Rosie and Alastor might share together on a day out.

How Good the RvB Main Cast is at Cooking, Ranked from Best to Worst
1. Donut
Donut gives off the vibe of one of those gay men with a baking channel on YouTube. This man's out here rolling up to the red team monthly dinner club with frenched rack of lamb with a pistachio mint crust and wine accompaniment, then earl grey souffle with creme anglaise for dessert. He spends hours experimenting with new and interesting ingredients. Remy Ratatouille, send-you-back-to-rural-France ass man. Donut's food fucks hard and everyone knows it.
2. Grif
You really think my man Grif loves food as much as he does and doesn't know how to make it? C'mon. He doesn't, like, relish the act of cooking as much as he does having a good plate of food at the end of it. And he's not typically much for sharing. But my guy makes a damn good short rib and bechamel lasagna. Give him the day to let something slow cook, and god damn.
3. Wash
Wash has been living off of MREs for probably his entire adult life, but I feel like he's got a few dishes he can whip out for a date night, or if he's feeling fancy. He knows how to read a recipe, and he has a pretty good idea of what flavors go together to make something good. He probably has a really nice papardelle with vinho verde sauce that he has sitting around in the back of his head for special occasions.
4. Tucker
Okay, Tucker isn't a bad cook by any means, ok? He's great with breakfast food specifically. It's just that he isn't especially fancy about it. He was probably, like, a line cook at Denny's in high school, so all his food tastes like food you would get at Denny's. Which isn't a bad thing! You would just never call Denny's "fine dining". He has his niche, and he does it well, and he never feels even a little bit inclined to do anything different or better.
5. Church (Alpha)
Church isn't much of a foodie right off the bat, but someone's got to pack Caboose's lunch, and he ends up learning how to cook fairly well after that. After a certain point, he figures out how to make things from scratch--mostly things like chicken nuggets, mac and cheese, pancakes.
6. Simmons
I feel like Simmons mostly lives off of shit like green smoothies and homemade granola. Like, hardcore, low carb, vegan, all organic, high protein diet. And, like, it doesn't taste BAD. But it definitely isn't the kind of thing you bring to the red team dinner club. He does make a really nice sunbutter brownie that he has to hide from Grif.
7. Caboose
Caboose has been banned from using any objects in the kitchen that involve a heat source--which isn't HIS fault! How was he supposed to know that you're supposed to take the spoon OUT of the mac and cheese before putting it in the microwave? That's just a recipe for a cold spoon! Anyways, he manages just fine without the microwave, thank you very much. He can make ants on a log like it's nobody's business. Cleaning up afterwards is another matter entirely.
8. Carolina
Carolina is one of the most competent individuals you will ever meet. She could kill you in under a minute, in 30 different ways, and that's just with her bare hands. The fourth time Sarge tries to recruit her into red team is by inviting her to the monthly dinner club. She shows up empty handed, and when Donut very politely asks what she brought, she replies that it's very interesting that they expected the only woman on the team to go all out with cooking. They move on. Carolina spent 5 hours in the kitchen this afternoon trying to figure out how to use the oven. But they don't need to know that.
9. Tex
Now, listen. Tex can't be called a bad cook, precisely, because that would require she cook for herself or others. Which is something she does not do. That's what Church is for, isn't it?
10. Sarge
Sarge refuses to step foot in a kitchen after the fifth shouting match about how flamethrowers are not a universally recognized kitchen appliance.
11. Church (Epsilon)
One time, while blue team is shooting the wind, Caboose asks Epsilon what his favorite breakfast food is. Instead of calling Caboose a dumbass, as per usual, he instead goes into extensive detail about how he eats computer keys like cereal. Caboose tries it. It isn't very good.

no one irl cares so here is a recipe for those of us who have daily or almost daily headaches
1 liter of water. with ice
1 packet of liquid iv. listen this stuff is expensive but it's so worth it. it's cheapest at costco, bribe a friend with a membership, and look for sales. none of the store brands are as good i have tried them all
1 packet of aspirin powder. at my store it's called "pain relief powders" and it's 845mg aspirin and 65mg caffeine.
shake that bitch up. put in earplugs if you're shaking a stainless steel bottle because the ice is gonna be loud.
drink up, not fast but sipping 1-2x a minute. shake it up periodically
prepare to have to pee in a little bit, but then you can go to bed <3
i swear, this cures 90% of those kinda-nauseous, moderate headache, uncomfortable/achy & fatigued days. obviously the relatively high dose of aspirin helps with the pain and inflammation, but even if you skip the aspirin there's something magical in liquid iv. it's like my own version of a sprite and vicks vaporub, i'm pretty sure it has magic healing powers
my logic:
- hydration. a whole liter of water in your blood, boom. at the very least, it can't hurt.
- i looked up what's in the IV they give you in the hospital if you're all dehydrated and out of whack (or just hungover), and it's pretty similar to what's in liquid iv which i guess is why they called it that. i swear they're not paying me okay im just saying. also, the sugar free doesn't work as well but it will still work, my mom is low carb and loves it
- all kinds of malaise symptoms are caused by inflammation. the powdered dosage form absorbs quickly, a lot of the time you'll start to feel better before you finish the liter
- hydration + a bit of sugar and electrolytes + a relatively safe fast acting anti-inflammatory + a little bit of caffeine = the whole solution to a host of common reasons to feel like shit
**note: don't be dumb, obviously only do this if you can safely take aspirin lol

I am diabetic and I love sweet things. My desk neighbor at work is also diabetic and loves sweet things. This is great for several reasons—trading tips for managing blood glucose, sharing new low carb/sugar snacks and recipes, shaking our fists at the IT guy that eats his weight in sugar every day and is infuriatingly not effected by it at all, etc. But my favorite is that if there is a treat on the snack table that I want but is a little too sugary for me, I can always turn to her and go “hey… if we split this it won’t be nearly as bad for us” and she will immediately go “omg yes genius brilliant let’s do it”.

Every new year, there is an influx of weight-loss goals, new diets or ‘lifestyle changes’ (that are just diets in disguise).
All over my feed I’ve been seeing posts about low-cal or low-carb meals, of people reminiscing their smaller bodies and their goals of becoming smaller.
And while I believe in body autonomy and believe that we all get to decide what to do with our bodies, I would like to offer the reminder that you don’t have to start a diet or try to lose weight - ever.
I’m assuming you’ve set those same goals before. Did they work? For how long? How did you feel when the diet / lifestyle change stopped working?
If you have to yet again go on a low-calorie diet to lose weight or you have to lose the same 30lbs you’ve already lost before, maybe it’s because your body doesn’t want to be at a smaller weight, and that’s okay!
Let’s focus on adding this year! Adding more self-care. Adding more vegetables. Adding more time to rest. Adding more time with loved ones. Adding some recipes you’re excited to cook to you ‘to-cook’ list!
Life is too short to spend it on making ourselves smaller.
Also think of your fat friends and family members when you’re posting about actively working towards having a body that doesn’t look like theirs.
I want to make it clear that I understand the want for weight-loss, especially for those who experience discrimination for the size of their bodies. This is not a post with the intention of shaming but instead with the intention of offering a gentle reminder in this time filled with diet culture rhetoric.

I literally don't know what to eat on gym days is2g ;w; I'm vegan and I find myself getting hella faint if i don't eat 'normally' when I go to the gym its so annoying :') what kind of things do you eat pre-gym?
i’m not vegan but i’ll give you my vegan suggestions! i try to eat my main meal of the day like an hour or two before the gym, right now i’ve been having a version of this lentil curry which im loving: https://thestingyvegan.com/red-lentil-curry/
it’s only 255 cals per serving if you make it according to the recipe but i use a teaspoon of oil instead of two tablespoons and use half the amount of tomato paste to make it lower calories, and i add a diced carrot to bulk it up a little with something low cal. i have it with half a cup of jasmine rice, so it’s like 350 cals but lots of good protein and carbs for the gym. i also put a scoop of yogurt on top sometimes. generally think lentils are great pre gym and you can make them so yummy while staying low cal with just some spices and veg.
yogurt is also a good pre gym food! a vegan yogurt with sliced banana is great.
i generally aim to eat about 300-400 cals of something high protein and with some carbs and that keeps me fuelled for an hour in the gym :)
after the gym i have a rice cake with cottage cheese or peanut butter, a boiled egg, or a protein drink. i like a clear whey isolate protein, you can get fruity flavour ones that you just mix with water so they’re like 80 cal a serving for most brands, way lighter than a protein shake but you still get like 20g of protein.

Chickpea stew recipe

A couple years ago I asked for help making chickpea recipes taste good, and I'm pleased to report I've practiced and now have a recipe I wholeheartely love. Thank you to all the darling people who offered advice and suggestions!
Ingredients:
A thick slice of yellow onion
A thin slice of red onion
Olive oil
At least one large clove of fresh garlic (add as much as you like!)
Half of a red or yellow bell pepper
A small, sad tomato
A small, sad carrot
A little celery if you aren't allergic
A can of chickpeas, with the aquafaba
A jar of marinara or other tomato-based pasta sauce
A little bit of chicken or vegetable bouillon, better than bouillon, or stock
Rosemary, oregano, salt & pepper, bay leaves, cayenne powder, cumin, sumac, whatever else makes you happy.
Instructions
Chop the fresh vegetables. I like a small dice or large mince to make them more forgiving if I don’t get them cooked through.
Cook the onions in a little oil over low heat for about five minutes.
Add in the garlic, carrot, bell pepper gradually, and last of all the tomato. Celery would probably be good here too, but I have a mild celery allergy so I don’t use it.
Add in the chickpeas, along with a couple tablespoons of marinara sauce. You definitely could just add more tomatoes and season it for yourself, but it’s a good way to use leftover sauce and I like that it gives me some basic seasonings that I don’t have to think about. Add water or broth if you need it at this point.
Season it! I used rosemary, oregano, salt & pepper, bay leaves, cayenne powder, cumin, and sumac. The cayenne really does a lot here--again, season to taste.
Cook it on low heat until everything gets tender and tastes like one unified dish. For me this took about an hour. The olive oil should react with the acid from the tomatoes and give a warm orangish color.
Serve with your carb of choice--it's good with corn chips, warm tortillas, rice, or fresh bread. 
I'm cooking for one person, so I can usually stretch the leftovers to last the next couple days of meal prep. It’s a really forgiving recipe if you want to add or remove things. You can also soak dried chickpeas the night before if you plan ahead. I find it relaxing to hover around the stove and take my time, but I’ve also had good results just throwing all the ingredients into a rice cooker for a weeknight meal. This stew can be vegan if you use vegetable broth instead of chicken broth.

Do you have any tips on being consistent with a weight loss journey ? I have to loose weight but whenever I start eating healthy I always go back to my old ways.
Honestly what helped me the most is to accept that new mentality:
I'm a person that leads a healthy lifestyle.
I love doing excercises, esp walking, running, and yoga which are my favourite ever activities.
I enjoy being in line with my body.
The old lifestyle is what led you to the weight gain, so it is irrealistic to think the weight loss lifestyle is gonna be a temporary one. You gotta gain a healthy lifestyle that both enables you to lose weight, AND to keep it off.
If you haven't found a sport or a excercise that makes you happy, continue seeking. Pointless to run if you freaking hate running.
For the food, only keep what enables you into that healthy lifestyle. You know keeping 6 bags of chips at home won't help you much, you know a bit of chips at parties or at movies wont hurt much, but you know eating a whole bag a day ain't gonna help you on the long term.
I never keep candies or less great snacks at home. I just keep what I need for my meal-prepping.
Find some recipes that both align with what you WANT and what you LIKE. Per example I freaking love ice cream, it's like my sin. I wish I could eat the super super rich gelato every day so much I love it. What I do instead is keep the gelato treat for when I am with my friends, or family, enjoying my gelato with them. I'm not holed up in my bedroom eating a whole tub of shitty 2$ ice crap watching the 4th season of whatever show. So if I find myself craving intensely ice cream, I make myself some frozen banana ice cream with my mixer, or I throw some frozen blueberries and a bit of yogurt in the mixer.
If I crave a snack, I get myself some popcorn, there's low salt low fat versions of bagged popcorn that help satisfy that craving. I sometimes even make my very own popcorn, by using about 1/4 to 1/8 cup of corn seeds, in a small pot, a little bit of butter at the bottom, I put a lid on top, while it pops I shake the pot until I don't hear anymore popping.
For my main meals, I bulk up my meals with vegetables and good quality proteins, the carbs are like not the majority of my meal. And if I have carbs, I try to get as much whole grains ans fibers as possible. Think multigrain boosted in fiber versus the shitty wonderbread.
Making your own meals is much more efficient both for nutrition and self-control, meaning, I'll make myself just enough for one portion, or maybe two if I'm prepping for another meal, then if I'm "fake hungry" (what this means: I'm hungry for more but I don't wanna eat an apple or some healthy snack), if I wanna eat more I have to go through the effort of making it again. Generally it just turns me off.
Another solution is to prep a huge meal then immediately freeze the remnants in individual dishes. I have to go through the effort of defreezing then microwaving. Berk. I'd rather just eat an apple. Or nothing, because I'm "fake hungry".
See how I constantly outsmart my lazy self 😂
Also! I drink shittons of water!! It helps me being satisfied with my meals. Like think if you soak cereal in milk, it expands. Think the same in the stomach, the water is helping my meal expand and stretch my stomach. The stomach tells the brain "ok we're done, stop eating!".
I let treats be treats. I have fun while excercising. I drink water. This didn't use to be my normal.

Make a Week of Cheap, Easy, High-Protein Breakfasts in Less Than an Hour
If you’re looking to eat healthier, one of the best things you can do to make that happen is to make eating healthier easy. Like stupid easy. So easy, you hardly have to think about it. One way to accomplish this is to prepare your meals in advance so you know exactly what’s in them, and so that when you’re pressed for time, you don’t default to eating whatever unhealthy options are on hand or getting expensive, no-good-for-you fast food. When it’s time to eat, you just grab your ready-made meal from the fridge or freezer. You know, meal prep. One make-ahead meal I’ve been enjoying recently is a high-protein breakfast bake. I got the idea from a fella named Johnny Hadac on Instagram who serves up easy, affordable meal prep recipes for people looking to lose weight/eat better. This breakfast bake takes about 15 minutes to prep. The thing that takes the most time is dicing up your veggies. Bake time is about 35 minutes. When you’re done, you’ll have six tasty, high-protein, low-carb mini breakfast casseroles that will leave your belly feeling nice and full, but without a ton of calories.  Just take a look at the macro breakdown for each bake: * Protein: 50 grams * Carbs: 12 grams * Fat: 22 grams * Total Calories: 452 Cost per bake is $3.50. You’d pay about $13 for a similar breakfast bake from one of those companies that sell ready-to-eat meals online. I know, because I’ve bought them before. So these babies are tasty, healthy, and cost-effective. Here’s how to make them. Ingredients * 6 eggs * 24 ounces egg whites * 24 ounces low-fat cottage cheese * 12 ounces mild cheddar cheese * 6 precooked chicken sausages (you can buy them already cooked) * 1 onion * 3 bell peppers * Salt and pepper Preheat oven to 400 degrees Fahrenheit Queue up the Art of Manliness Podcast Great to listen to while you’re prepping these. Dice Onion and Bell Peppers This is what will take most of your time. Lay Out Six Cooking Pans on a Table We’re going to prep these like they’re on a Henry Ford Model-T assembly line. I used these aluminum meal prep pans that you can buy at most grocery stores. I recommend doing the same when you first try this out. If you decide to make this a regular thing, you can buy some Pyrex pans. It will save you money, and you’ll be able to reheat your bake in the microwave right in the dish. Spray Each Pan With Cooking Spray Crack One Egg in Each Pan Add ½ Cup of Egg Whites to Each Pan Add ½ Cup of Low-Fat Cottage Cheese to Each Pan If cottage cheese makes you squeamish, don’t worry, you don’t taste it. But it gives the bake more protein and some bulk. Add 1 Diced Sausage to Each Pan I used Al Fresco Sweet Apple Chicken Sausages. Why? Because it was the only precooked chicken sausage available at my local Walmart Neighborhood Market. You could use whatever precooked meat you want to use: bacon, ham, ground beef, whatever. I used chicken sausage because it’s lower in fat and higher in protein. Add ¼ Cup of Mild Cheddar Cheese to Each Pan Add a Handful of Veggies to Each Pan Sprinkle With Salt and Pepper and Mix Ingredients Together You can also add other seasonings as desired, like Old Bay. You know I love me some Old Bay! Bake in the Oven for 35 Minutes Bam! A Week’s Worth of High-Protein Breakfasts If you baked them in the aluminum pans, just slide them onto a plate to reheat in the microwave. ~90 seconds should do the trick.  These actually taste really good cold.  I like to hit mine with some sort of hot sauce before consuming.  Enjoy!
