Braised Turkey Legs with Creamy Gravy

prep time: 15 minutes (not including time to make fauxtatoes) cook
time: about 2 hours yield: 4 servings
This tasty meal reminds me of Thanksgiving dinner,
but without the hassle! Braising turkey legs seems
daunting, but it creates one amazing meal without
much daunting work.
Igredients:
2 tablespoons ghee or coconut oil
4 turkey legs
Fine sea salt and ground black pepper
1⁄4 cup diced onions
1⁄4 cup diced celery
2 sprigs thyme, plus extra for garnish
11⁄2 cups turkey or chicken bone broth, homemade
or store-bought, or water, or more as needed
1⁄2 batch Mashed Fauxtatoes, for serving
1 ounce mascarpone or cream cheese (2
tablespoons), softened
Chopped fresh herbs, such as thyme, for garnish
Melted ghee or extra-virgin olive oil, for drizzling
Instructions:
1. Preheat the oven to 300°F.
2. Heat the ghee in a cast-iron skillet over medium-high heat. Season the turkey legs on all sides with salt
and pepper. Place the legs in the skillet and sear on all
sides until golden brown, about 3 minutes per side.
Remove from the skillet and place in a roasting pan.
3. Place the onions, celery, and thyme sprigs in the
skillet and fry for 8 minutes or until the onions are
translucent. Transfer the veggies to the roasting pan,
tucking them under the turkey legs so they don’t burn.
Pour the broth into the pan. Place the pan in the oven
and roast, uncovered, for about 1 hour 40 minutes,
until the turkey is cooked through and no longer pink
inside when pierced with a knife.
4. To serve, divide the fauxtatoes among 4 plates.
Place a turkey leg on top of the mash on each plate.
5. Pour the sauce and veggies from the roasting pan
into a blender. Add the mascarpone and puree until
smooth. Cover each turkey leg with the creamy gravy.
Garnish with herbs and a drizzle of melted ghee.
6. Store extras in an airtight container in the
refrigerator for up to 3 days. Reheat on a rimmed
baking sheet in a preheated 350°F oven for 5 minutes
or until warmed through.

I’m maintenance unit ___ with the asset number ___. I’m writing this to catalogue my thoughts as I do my duties for the Next Door Boy agency. Particularly for this client whose name will not be disclosed. The routine and maintenance set up by the client practically has me logging each moment of the day.

“Hey, no eating! Get back for the photoshoot,” the photographer called. I swallowed whatever grapes were in my mouth and walked back to the spot I had to pose. It’s been over an hour and I was getting bored. The photographer and his assistants spent a few minutes fussing over how low my pants should sag and how much ass should hang out. “They’re looking a bit pale,” he said, then smacked my ass. “Don’t worry about it. The guy usually lets me do much more.” The photographer smiled and lingered his hand on my ass.

I had to pretend to eat it, but secretly toss it and make something from the recipes left for me. The client came from immigrant parents and as an Asian-American, he seemed to struggle with maintaining his lifestyle and his family ties. I mentioned the numbers game of food. The exotic meals tended to be high fat and high carbs. That was a big no-no.
“Son, you’re getting skinny!” His mother would coo. “Here, eat some of this. Why don’t you get married already?! You’re getting old and need someone to take care of you. What will happen if something happens to me?”

Fiesta Lettuce Wraps and Pepper Boats

Ingredients
6 sweet, mini bell peppers
8 lettuce leaves
1 cup instant brown rice (dry)
1 pound tilapia filets, fresh or frozen (thawed)
2 teaspoons Southwest chipotle seasoning (no sodium)
2 tablespoons canola oil (divided)
1/4 teaspoon salt
2 limes (divided)
1/4 cup reduced-fat sour cream
For the Salsa Fresca:
1/2 cup yellow corn (frozen or canned, no-salt added)
1 medium tomato
1 small onion
1 clove garlic (minced)
1 jalapeno pepper (minced)
1/4 teaspoon salt
Directions
Slice peppers in half vertically. Arrange lettuce and 8 pepper halves on a serving platter.
Cook brown rice according to package directions.
To make salsa fresca, dice remaining pepper halves, tomato, and onion; mix with corn, garlic, and jalapeño pepper, and ¼ tsp salt.
Sprinkle both sides of tilapia filets with Southwest chipotle seasoning.
Heat 1½ tbsp canola oil in a large nonstick skillet over medium-high heat. Add fish to pan, and cook for 3 minutes on each side (cook fish until it is opaque, 145 ºF). Flake with a fork and place in a serving dish.
When rice is done, stir in remaining ½ tbsp oil, juice from one lime, and ¼ tsp salt. Cut remaining lime into wedges.
To serve, set out pepper-lettuce platter, rice, fish, salsa fresca, sour cream, and lime, and let diners build their own boats and wraps
