It honestly doesn’t look much at this stage. But trust me this delicious onion gravy will make an excellent addition to your cooking repertoire. Simple to do and is a definite crowd pleaser. Here’s what you need and how it did it. Take 25g of unsalted butter and a teaspoon of olive oil. Melt that into a pan on a medium heat. Add to it two bay leaves, and a teaspoon of thyme. Cook for a couple of minutes then add one small white onion and one small red onion sliced. Add one teaspoon of sugar and a big pinch of salt. Cook the onions down for about 45 minutes so they caramelise and go slightly sticky. Next take one tablespoon of flour. And flour will do. I used plain but you can use cornflour if you wish? Store everything together and cook for a further one minute to make sure the flour cooks out. Then add 200ml of red wine and two teaspoons of red wine vinegar. Tune up the heat and cook for two minutes stirring so that no lumps form in the sauce. Add 500ml of beef stock and bring to the boil. Cook for 6-8 minutes until the sauce costs the back of a spoon. Taste and adjust any seasonings. And that is it!
