This Sweetcorn Red Lentil & Coconut Chowder is a comforting and flavorful vegan soup that combines the sweetness of corn, the earthiness of red lentils, and the creaminess of coconut milk, seasoned with aromatic spices.
Ingredients: 1 cup red lentils. 1 cup sweetcorn kernels. 1 can 400ml coconut milk. 1 onion, diced. 2 cloves garlic, minced. 1 red bell pepper, diced. 1 carrot, diced. 1 tbsp curry powder. 1 tsp ground cumin. 1 tsp ground coriander. 4 cups vegetable broth. Salt and pepper to taste. 2 tbsp olive oil.
Instructions: In a big pot, heat the olive oil over medium-low heat. Cut up the onion, garlic, bell pepper, and carrot into small pieces. About 5 minutes of cooking will soften the food. Grains of cumin, coriander, and curry powder should be added. If it smells good, stir for one minute. Coconut milk, vegetable broth, and red lentils should all be added. Bring up the temperature. Turn down the heat and let the lentils simmer for 20 to 25 minutes, until they are soft. Add pepper and salt to taste. If you want, you can serve it hot and top it with chopped cilantro or parsley.

Blended and sieved all the texture out of the cauliflower chowder (cauliflower, leek, sweetcorn, coconut milk), put it in a pouch, totally smooth. The baby ate about 4 mouthfuls and then refused any more 🤷‍♀️ Aaagh. That’s the fourth day in a row he’s refused my homemade pouches. Yesterday I gave him a bought one and he still only ate half.
I really thought we’d cracked it with the refillable pouches but I guess like all his eating progress it continues to be one step forward two steps back 🤯

Vegan Sweetcorn Chowder
There's nothing better than fresh corn on the cob. While the season has just ended in the UK, it’s beginning in my favourite country, Guatemala. Here’s one of my go-to mid-week supper recipes featuring corn that leaves you feeling satisfied and cleansed in three simple steps.

Ingredients
1 onion, diced 2 tbs coconut oil 3 cloves garlic, peeled and finely diced 2 red jalapeño, 1 deseeded and finely diced the other save for garnish 3 fresh corn on the cobs, giving you approx 3 cups of corn kernels 1 can coconut milk 2 cups water 1 lime Handful of coriander

Instructions
1. Start by shaving off the corn off the cobs, keep the husks

2. Heat the oil in a large pan and add the onion to soften for 2-3 minutes. Add the garlic and the one diced chilli and continue to cook for another minute before adding the corn, coconut milk, water and corn husks, these give your chowder extra flavour. Cover the pot and bring to the boil before simmering for approximately 20 minutes until the corn is cooked
3. Remove the husks. Leave to cool a little before blending. Squeeze in the lime juice and taste for seasoning. When serving, sprinkle a generous helping of chopped coriander, a few slices of red jalapeño rings, and another squeeze of lime. Enjoy!

What's your favorite kind of soup?
this is an impossible question to conclusively answer BUT i shall list some of my favourite soups:
wonton soup (dumplings = good; soup = good; dumplings + soup = fantastic)
fish chowder (the bigger the chunks of fish u get in it the better)
roasted pumpkin (one of my earliest memories is of eating pumpkin soup)
that really shitty chicken and sweetcorn soup u get at chinese buffets
french onion
ramen (my fave is beef with a marinated jammy boiled egg)
leek and potato
but honestly at the end of the day i'll eat any soup based meal! this made me really want to make soup lmao

Hearty garlic corn chowder
While seafood chowder is a classic, I can't help but feel that my vegan friends often miss out when it comes to a big, creamy bowl of steaming hot soup. This chowder is easy to make and delicious, and is a personal favourite for when I've got a cold. If you're here for a hearty dish that's as good for the body as it is for the soul, this is it!
You will need:
Kernels of 2 big sweetcorn cobs
6 cloves garlic
3 large potatoes, peeled and cut into small cubes
1/2 cup fresh or frozen peas, shelled
1 litre vegetable stock
1 cup coconut cream
1/2 cup almond milk
1 bay leaf
2 tsp harissa paste
1/2 tsp cumin powder
1 tsp smoked paprika
2 tsp garlic salt
Olive oil
Salt and pepper, to taste
Fresh crusty bread, to serve (optional)
Method:
Preheat oven to 180C/356F. When the oven has reached temperature, place the whole garlic cloves on a tray and drizzle with a bit of olive oil, and bake for 10 minutes. Remove from the oven and leave to cool.
Heat about 2-3 tbsp olive oil in a pan and cook the potatoes, peas and corn together on medium heat with the garlic salt, until the potatoes brown and soften slightly.
In a large pot, bring the vegetable stock to a boil and add the potatoes and corn. Cover and leave to boil on medium heat for 2-3 minutes, then bring down to a low simmer.
Add the coconut cream, almond milk, harissa paste, and bay leaf, then stir gently until combined. The coconut cream may separate slightly if the temperature is too high- if this happens, reduce the heat slightly and stir continuously.
Peel the roasted garlic (this requires a gentle touch) and crush it gently, then add it to the pot. Pop in the cumin and paprika powder, season with salt and pepper, and continue to simmer with the lid on for another 8-10 minutes.
Remove from the heat and give the chowder a good smoosh with a potato masher, or use a hand mixer to give it a few pulses to blend together the softened ingredients and get the soup nice and thick.
Ladle into big bowls and serve with some good crusty bread if you wish!
