Indulge in a refreshing and decadent dessert with this easy, no-bake Vegan Thin Mint Ice Cream Pie. Featuring a chocolate cookie crust, creamy mint chocolate chip ice cream, and a luscious chocolate drizzle, this pie is perfect for satisfying your sweet cravings without turning on the oven.

Ingredients: 2 cups vegan chocolate cookies crushed. 1/4 cup vegan butter melted. 1.5 qt vegan mint chocolate chip ice cream. 1 cup vegan chocolate chips melted. 1/4 cup almond milk. Fresh mint leaves for garnish, optional.

Instructions: Crushed chocolate cookies and melted vegan butter should be mixed together well in a bowl. That's the crust. Press the cookie mix into the bottom and up the sides of a pie dish. Freeze the crust for 10 to 15 minutes to make it firm. Use a spatula to smooth the top of the vegan mint chocolate chip ice cream as it is spread out over the crust. The pie should be set for at least two hours or until it is firm. To make the chocolate smooth, melt the vegan chocolate chips and almond milk in the bowl in the microwave for 30 seconds at a time. Put the chocolate that has been melted on top of the ice cream pie. If you want, you can add fresh mint leaves as a garnish. Cut it up and serve right away, or put it in the freezer until you're ready to serve.
