INGREDIENTS: 👇🏼⠀⠀ Ingredients! 6 Egg Yolks 4 oz Erythritol 2.5 cup Heavy Cream 1 tsp vanilla extract 1/2 Cup Unsweetened Almond Milk 3 tbsp Cocoa Powder 2 Tbs Espresso Grounds - INSTRUCTIONS:👨🏼🍳 1. Heat the heavy cream and vanilla in a saucepan over low heat until it reaches 50C/122F, then remove from the heat and allow to cool to 40C/104F. 2. Whisk the egg yolks with the erythritol until the yolks are pale yellow, add the cocoa and espresso grounds as well. 3. Pour half a cup of the warm cream into the eggs and mix well, add the remaining cream and ensure that all the eggs and cream are combined. If the cream is too hot it will begin to cook the eggs and you will have small lumps of egg yolk in your ice cream. 4. Pour the mix back into the saucepan that was used to heat the cream and place over low heat to thicken. 5. To thicken the custard, use a low heat and stir continuously. If the mixture heats too quickly or unevenly the eggs will cook and scramble. This step can take 10-20 minutes. The custard will be ready when the mixture coats the back of the spoon without dripping off. 6. Pour the custard into container and place in the fridge, to help it cool quicker I recommend giving it a stir every 10 minutes. Depending on the size of your container it can take anywhere from 20 minutes to 1 hour to completely chill. 7. Pour the cold custard into your ice cream churner and let the machine work its magic. Got a mixed breakfast plate going this morning with all the right stuff: halloumi, bacon, jammy eggs, avocado, and strawberries. . Weekend breakfasts are the best breakfasts, don’t you agree? After a quick 1.5 day trip, I’m back in action and ready for a long day. So much to do, so little time… . On the menu clockwise starting from the bacon: . 1.Pan fried some @porterroad bacon (I did more, but saved the rest for meals throughout the week). . 2. I sliced up some halloumi and pan fried for about a minute on each side in some of the bacon grease. . 3.Sliced up half an avocado and topped with everything but the bagel seasoning. . 4.Sliced up a couple of organic strawberries. . 5.Served with 1 @peteandgerrys egg. For this yolk, I boiled the egg for 6.5 mins and put it immediately in an ice bath. 6.5 mins gets a jammier egg and 8-9 mins get a firmer yolk. I just sliced the egg and probably dip some of that halloumi or bacon in it. . Don’t fear fats! Whether ur goal is fat loss, muscle gain or just maintenance, dietary fats r an important part of a balanced healthy diet. In fact, not having enough fat in ur diet can manifest in symptoms like extreme mental fatigue, dry skin, excessive hunger, loss of menstrual cycle, & more. While some people might fear fats because they think tht ingesting fat will “make them fat,” fats r not the enemy & tht’s just not the case. While fats are energy dense, (9 Cal/gm compared to carbs/proteins which are 4 Cal/gm), they’re also very satiating so a adequate portion of fat can leave u feeling fuller. In addition, ur body uses stored fat as energy when we go periods of time without food. 🧠 Did u know ur brain needs fat?Brain matter is compromised of abt 60% fat (when drained of water). Monunsaturated fats like olive oil, avocados, almonds, & eggs can also increase production of acetylcholine, a neurotransmitter tht plays an imp role in learning &memory.⠀⠀ 🌡 Fats protect& insulate ur body. The layer of fat under ur skin help regulate internal body temp. Vital organs, like ur kidneys, have a layer of fat around them tht acts as bubble wrap to protect them.⠀⠀ ✨ When it comes to creating new cells, fats r used in the production of phospholipid cell membranes& hormones.
