Sweet potato (Ipomoea batatas) comes in a variety of colours such as orange, purple, white and yellow. They are also rich in vitamins, minerals, antioxidants and fibre. You can boil, bake, steam or fry them but in our house, we normally boil/steam it whole with skin or peel the skin and prepare it as Sweet Potato Dessert Soup (番薯糖水). Here, we are using Vietnam grown Japanese Purple Skin Sweet Potato with yellow flesh.
i didnt get why so many people i know dont like scrambled eggs or think theyre gross when its my favorite and then i started to notice that 90% of the "scrambled eggs" theyre talking about are a weird soggy mess like how can you fuck them up that badly and why does that seem to be the norm
So russet potatoes (the regular brown kind) tend to dissolve into the broth. Good for potato soup! Makes the broth thick and filling. Less good if you like big chunks. If you want a potato to hold it’s shape without breaking apart when cooked, you’ll want red or yellow potatoes.
But I wanted to do both! So for my soup (guinness beef stew) I planned to use one large russet potato so it would dissolve into the broth and a handful of small yellow potatoes for chunks. Except at the store I found a bag of mixed baby potatoes! It contained red, yellow, and purple potatoes!! So obviously I wasn’t going to pass up on that.
