What do you do when your friend has busted up her knee & can’t even walk? You go & cheer her up by making her pancakes ;)
So because my lovely friend is running a healthy juice bar here on Koh Tao it only means one thing. I get to play with loads of super healthy ingredients. Normally at home i have just a few basic things, like oats, peanut butter, protein,
while she has loads of super foods for the juice bar. So i felt like i went back in time, a child in the sand with loads of toys to play with ;)
Also in the gym we ordered a new protein flavour that i knew had to go in my pancakes. A flavour called “Birthday Cake” by Dymatize & funny enough, the pancakes looked more like a cake than pancakes. 
So lets get to the recipe of these bad boys made on a paradise island, while singing along to Mariah Carey’s Christmas song.
pancakes mix:
2 scoops of protein (birthday cake flavour) if you have, if not, use any other 
2 tbs buckwheat flour
2tbs cocoa nibs (can skip this if you don’t have them)
2 tbs of chia seeds ( we had no eggs, so we used seeds that we left to soak first)
1tbs of ground sesame seeds
1tsp baking soda
200ml water (roughly)
toppings:
1 large pot of low fat yogurt
2tbs peanut butter
2 tbs of jam (any that you have)
2tbs shredded coconut (for in between layers)
serves 2 people
makes roughly 10 medium pancakes
