Air Fryer/Toaster Oven Huevos Rancheros (medium spoons)
I'll start by saying that I got the Ranchero sauce and refried beans with dinner from a Mexican restaurant. I'll also say that I'm very, very white. I love Mexican food, and I've been blessed with Mexican friends willing to share authentic recipes with me, but I'm not gonna claim this as an authentic recipe. It is fucking delicious though. Also, it's naturally gluten free! Corn tortillas shouldn't have gluten, and you don't have to spend extra for the gf label!
I only have a toaster oven/air fryer (not the kind of air fryer with the basket) and a microwave to work with, and limited energy that's been getting worse. I had eggs to use, so here we go.
Some methods like foil lining is optional. If you wanna wash a baking sheet, I ain't gonna stop you. My eggs leaked and got a little stuck. Foil made cleanup easy. I'm just trying to survive. I use a lot of disposable things for meal prep because washing just takes too much out of me. My plumbing don't even work properly and I have to wash in a trickle of water. You do you. The idea is the same, and if you're like me, it'll save you some spoons by giving you ideas, I hope. Good luck and enjoy.
Ingredients:
Corn tortillas
Eggs
Refried beans
Ranchero sauce
Jalapeño slices (optional. I used these bc the Ranchero sauce was very thin. And I really love jalapeños.)
Cotija/queso fresco
Tajin (optional, to taste)
Directions:
Toast the tortillas on a foil lined and honestly probably greased baking sheet (don't overdo it like I accidentally did. I got distracted for a whole 5 seconds 😡 just crisp them a little, on both sides.)
Spread your beans on the tortillas. Don't ask how much. Feel it with your heart. I put a thin layer, but made sure there was enough bean to taste it without making the tortillas mushy. You can add your jalapeños now if you want them!
Crack your clean eggs (yep, I wash them! People have been touching them) on top of your bean painted tortillas. Sprinkle some tajin if you wanna.
Bake/air fry at 325⁰ until your eggs meet your doneness. Keep a close watch. It goes fast. I think mine were done in 5 min. I also think I let them rest, just to ensure the white wasn't snotty 🤢
Take out carefully, pour on your Ranchero sauce, to taste.
Sprinkle on your cheese, and maybe some extra tajin.
Don't burn yourself as you inhale these because they taste so good.

Have a taco party with friends, go to a Mexican restaurant, or hit up a taco stand for one of the world’s most beloved and time-honored cuisines.
Tacos are the Mexican equivalent of a sandwich. Instead of bread, a hard or soft tortilla is wrapped or folded around a spicy filling. But, also, in essence, these little folded pockets of goodness are so much more than just a sandwich!
And this is the day to find out why. Because it’s National Taco Day!
History of National Taco Day
It is not known exactly when this tasty food originated, but tacos themselves seem to have been around for a long time. They were first referenced by their current name at the end of the 19th century, but the conquistador Cortez mentioned a meal prepared with tortillas as far back as 1520!
Back in those days, this would have been referring to a type of soft wheat or corn tortillas. Hard taco shells are a much more recent innovation. Of course, as Americans got their hands on this delicious food, it has evolved, morphed, and grown into something that is less of a food and more of an institution! And that’s why National Taco Day was created. To celebrate the grand institution of the taco.
While some people may find themselves celebrating this tasty Mexican dish every week on Taco Tuesday, this is a special National Taco Day that only comes around once a year. So get ready to celebrate and enjoy the beauty and flavor of the taco!
How to Celebrate National Taco Day
Enjoying National Taco Day is super easy with all kinds of options that involve making, eating and celebrating everything that has to do with the taco! Try these ideas out for inspiration:
Go Out to a Mexican Restaurant
And this isn’t referring to Taco Bell. On this day, it is important to find the most authentic, genuinely Mexican establishment possible. Preferably this will be a locally owned and operated restaurant, hopefully with a cook who truly has some Mexican roots!
The tacos at a truly authentic Mexican restaurant will be different from what might be found at an Americanized joint. These genuine tacos will be made with soft corn tortillas (not deep-fried or baked) that are filled with meat. 
The meat options will typically be “pollo”, which is chicken, “pastor” which is pork, or “barbacoa” which is usually made with beef. No ground beef here! The meat will have been slow-cooked to perfection in spices that bring the flavor all throughout. 
On top of the meat will be a selection of toppings, such as onions, cilantro, pico de gallo, or even sliced radishes or cucumbers. And they absolutely must be served with lime to be freshly squeezed over them just before eating. Delicious!

Taco day is often celebrated by having taco parties for friends. Of course, the main activity and one of these parties AND the food would all be the same thing: Tacos! Making them and eating them is all part of the fun.
There are many possible combinations when it comes to making tacos–whether at home alone or at a party. Start with a base filling of beef, chicken, fish, seafood, beans, or vegetables, and then mix and match preferred toppings.
For additional flavors, try a favorite combination of sour cream, guacamole, lettuce, chopped tomato, onion, salsa, pico de gallo and cheese for a tasty treat that’s great for sharing.

Tacos are the Mexican equivalent of a sandwich. Instead of bread, a hard or soft tortilla is wrapped or folded around a spicy filling. But, also, in essence, these little folded pockets of goodness are so much more than just a sandwich!

History of National Taco Day
It is not known exactly when this tasty food originated, but tacos themselves seem to have been around for a long time. They were first referenced by their current name at the end of the 19th century, but the conquistador Cortez mentioned a meal prepared with tortillas as far back as 1520!
Back in those days, this would have been referring to a type of soft wheat or corn tortillas. Hard taco shells are a much more recent innovation. Of course, as Americans got their hands on this delicious food, it has evolved, morphed, and grown into something that is less of a food and more of an institution! And that’s why National Taco Day was created. To celebrate the grand institution of the taco.
While some people may find themselves celebrating this tasty Mexican dish every week on Taco Tuesday, this is a special National Taco Day that only comes around once a year. So get ready to celebrate and enjoy the beauty and flavor of the taco!

Maybe it’s because of Cinco de Mayo and all I’m reading about is Mexican food, maybe it’s because I’m mourning the changes made at my former favorite local Mexican restaurant, but I’ve been craving Mexican food lately. Really, really craving it. Needless to say, living in New England does put a crimp on finding good Mexican food. And while it may sound weird, some of the best Mexican food I’ve had was at the San Angel Inn. More Delicious Recipes You Will Love: - Disney Cruise Lines Inspired Pina Colada Bread Pudding Recipe - Pop Century – A Pop Culture Blast From The Past! - Pop Tarts Breakfast Sandwich – Everything Pop Food Court Now yes, I know that it’s dressed up Mexican cuisine… Having been to Texas and eaten my way around Fort Worth, San Antonio, Houston, College Station, and numerous places in between, I’m familiar with the places that were very Americanized and other places that were maybe just a tad too authentic… And I think that San Angel Inn has found that wonderful middle ground between authentic feeling and taste, without being too intimidating or Americanized. Plus, food in the shadow of a volcano?  What’s not to like. When I went last September, I had one of their signature dishes, the Pollo A Las Rajas and it was amazing.  Even by my non-spicy, non-pepper-liking standards. But then again, can you really go wrong with chicken in a cream sauce? As absolute dumb luck had it, the recipe happened to be included in one of my Disney World cookbooks. Good food that I don’t have to search to find the authentic Disney recipe for? Win. This recipe is really easy and the results taste almost exactly like what they serve at the San Angel Inn.  The trickiest part for most will be cooking the poblano until the skin cracks and peels off. It will look like you’re burning it…  The skin will turn white and brown and blister, maybe even a little black, and it will look completely inedible. However, when you shock it with the running cold water and rub the burned areas gently with your thumb, the skin will peel right off and the pepper itself will look soft and green. This recipe is really easy and the results taste almost exactly like what they serve at the San Angel Inn. The trickiest part for most will be cooking the poblano until the skin cracks and peels off.  It will look like you’re burning it… The skin will turn white and brown and blister, maybe even a little black, and it will look completely inedible. I also stopped just short of broiling the cheese to the golden-brown color you sometimes see there, simply because I prefer the just-melted, ooey gooey cheese. If you’d rather that golden crust, broil it for slightly longer and serve. Anybody else now feel like taking a boat ride down a quiet Mexican river? In addition to the delicious food and recipes, Disney World is also known for its unique dining experiences, such as character dining and themed restaurants.
