a/n: a purely self indulgent barista jisung au bc i was STRESSED and i was watching re-feel and a LOT of cafe videos

jisung was a barista at the nineteen cafe
honestly speaking, he didn’t even plan on working here
he helped his friend, chan, once because he was bored of waiting for him and somehow, he got dragged into working at the cafe
he wasn’t complaining though
i mean he got some pretty amazing coffee, unlike the acrid, watered down liquid the uni cafeteria served
and he got to hang out with his friends who also worked there
so jisung was a real winner here
until the cafe’s main baker, woojin leaves the shop
jisung was almost bawling when he announced it
jisung: does this mean i’ll never get to eat any of your chocolate croissants anymore??? T^T
woojin: if you keep this up, i’ll bring chocolate croissants for everyone but u
jisung: nOOOOO i’m sorry :“”“”“” i love u please…. not my croissants…..
honestly, at that point, woojin wasn’t even sure if jisung loved him or his pastries more
but woojin still had to leave and they had to find a replacement asap
recruitment posters were put up all over the campus
baker needed! nineteen cafe @ jyp university. walk-in interview
so when you, a broke university student, see it, you thank the heavens
you baked pretty often and your creations weren’t too bad if you said so yourself :]]
plus the cafe was on campus grounds so it’s definitely worth a shot
you stand outside the cafe and your legs turn to jelly
“come on y/n!! it’s just an interview!! you have to do this or you’ll spend the rest of your life broke!!!!!” you whisper scream to yourself
you finally make your way in and look around the cafe
soft acoustic music is accompanied by the chatter of patrons and the clinking of cups on ceramic saucers
a well-built man dressed in a white button up and black pants tends to the cash register
there’s no one ordering anything so you scutter up to the counter
“hi, uh, i’m here for the interview?”
“ok hold on,” the man turns around, “channnn, there’s someone here for the interviewww”
a blond walks out of the kitchen, covered in flour
“hey, i’m chan. the manager here. i’m gonna make this quick since i have to continue to try and make brownies,” he dusts his hands on his apron and gestures to an empty table in the cafe
“what’s your name?”
you stutter out your name and he scribbles it in a notebook he takes out from his pocket
“alright, y/n, how long have you been baking for?”
“about six years”
he scribbles again
after that, the interview is a blur from your sheer nervousness
“ok, this is the last bit. can you make a batch of brownies? we have to gauge your abilities”
you follow him to the kitchen
“wait, weren’t you trying to make them just now?”
chan ignores your question
“if you need anything, just call me!!”
and with that, he strides out of the kitchen
oh, wow, okay, so this was happening now
you put on the apron on the counter and pull out all the ingredients and utensils
it’s like something takes over you
your hands move on their own and it truly is a beautiful sight :“))))
jisung walks into the back to get ready for his shift but to get there, he has to get past the kitchen
the smell of chocolate wafts into his nose
he pauses
this was the best thing he’s ever smelt
"god? is that you?” jisung whispers
you snort, “yeah but you can call me y/n”
jisung freezes up and his eyes widen
“holy shit. cool. gotta go. uh, bye.”
jisung runs out and almost slams into chan
“woah woah woah, what’s got you so jittery??” chan asks
“nothing BYE”
jisung bolts for the cashier, “ changbin, i’m here!!!! you can go nOw”
changbin, although very confused, leaves
it’s about a little into jisung’s shift when you come out to call chan
in your hands are a tray of the freshly baked brownies
you offer one to chan and he almost cries from joy
“this …. is absolutely amazing….”
he passes one to jisung who is still shaking on the inside
jisung bites a corner off the chocolatey treat
he almost swears that his soul leaves his body because it was THAT good
he gives you a thumbs up and a big smile
chan offers your brownies to a few others who all give great responses, making your confidence shoot up
“okay, y/n, we’ll send you an email if you’re accepted,” chan says
“ok, thanks”
you leave the store and celebrate
that went way better than you had expected
all you have to do now is to wait
that can’t be that hard right?
oh but it was
every notification from your phone and laptop made you leap from your chair
it’s two days later when you get the email
dear y/n, we are pleased to announce that you have been hired as nineteen cafe’s new baker. please come to the cafe tomorrow for your first day. thank you.
*cue celebration pt.2*
the next morning, you bust into the bakery, ready to kick some butt
the cafe is empty, save for chan and changbin setting up
the early morning light pours into the cafe through its ceiling-to-floor windows
chan notices you and hands you a slip of paper with all the stuff to be made
“there’s a file of recipes in the kitchen. it’s on the shelf above the bowls”
you thank him and look through the list
strawberry shortcake, coconut cake, chcoolate chip cookies, brownies, blueberry muffins, raspberry cheesecake
and there was a second page….
the list was so much longer than you expected
one thing at a time
you took out the bowls and ingredients
following the recipe, you managed to whip up a pretty decent cake
the rest of the baked goods you made were also pretty good
you place them in the display fridge
you heaved a sigh of relief
you didn’t screw up on your first day!!!!
go you!!!
second day of work
good news: chan gives you free reign to experiment and come up with new stuff
bad news: the stand mixer breaks
worse news: the stand mixer can only be fixed a week later
kind of good news??: you’re gonna get buff
so you have to ask for help from the rest of the nineteen staff
working with all of them, BUT jisung, is great
but you have to get help from him since you don’t always wanna bother everyone too often
search chaos in the dictionary and you’ll get a photo of you and jisung baking
you’ll make a bowl of batter and having that half that bowl gone after 5 minutes
“HOW AREN’T YOU DEAD FROM SALMONELLA YET??¿?¿¿??”
or when you bake anything with chocolate
oh my GOD
you’ll go to grab a baking pan
and when you come back, the packet is suddenly so light
you: did you eat the chocolate again
jisung, chocolate covering his mouth:
you:
jisung, chocolate still covering his mouth: …no
he’d pop into the kitchen even when you don’t need his help just to screw with you
“oooOOOoo, is this a new recipe”
“nope. also don’t eat the chocolate chip cookies,” you say, still focused on making frosting
jisung just lets out a roar of laughter
“ok i won’t”
“but i’ll eat the muffins”
“jisUNG NO”
but all that eating of RAW batter and other stuff finally gets to him
jisung calls in sick
as much as you want to laugh at him, you’re kind of concerned,,,,
like he ate,,,, so much,,,,
you ask chan for jisung’s address so you can visit him
he gives you a face but gives you the address anyways
while carrying some porridge and medicine, you knock on his door
a very pale and dishevelled jisung opens the door but he gives you his usual goofy smile
“can’t get enough of me huh?” he chuckles weakly
“yea, sure whatever you want to think. anyways, i brought some stuff”
“come on in. it’s a little bit of a mess though”
his coffee table is covered in papers and his laptop is playing an episode of brooklyn nine-nine
cushions are strewn on the couch, a blanket draped over them
“i’ll leave the medicine on your kitchen counter but you should eat the porridge now before it gets cold”
jisung nods and you hand him the tupperware box
he gladly opens it and eats a spoonful
“this is so good,” jisung says
“thanks”
you sit next to him quietly as you watch the show
“how are you feeling??” you muster up
“i literally have not seen the light of day in 5 YEARS, my stomach has not known pain like this” he says between mouthfuls of porridge
“that’s what you get for eating so much RAW batter”
“i know but it was so GOOD!! it was totallly worth it”
you shoot a glare at him and he returns a cheeky smile
you try your best to keep a straight face but you can’t help laughing at him
the buzzing of your phone calls for your attention
you grab it and look at the caller id
“oh shit. sorry ‘sung, i gotta go. uni calls! bye!!”
you scurry out of jisung’s apartment and sprint to campus for your project
a few days pass and jisung returns to work
he’s back to almost bouncing off the walls
but when he comes into the kitchen with your tupperware box and a cup of coffee in his hands, he’s flushed red
jisung leaves them on the counter and zooms out of the kitchen
you finish kneading the bread and pick up the cup of coffee
a heart sits on top of the foamy milk
you take a few sips before realising the small piece of paper on the saucer
your cheeks feel a slight warmth as you read the note
“thanks for the food and stuff!! let’s get dinner some time soon ok?? - jisung”
you kind of want to scream but you probably shouldn’t
what do you do????
do you text him??? tell him in real life??? give him another note???? maybe you should just burn the note and pretend he never gave anything to you???? 
all that fills your mind for the rest of the day is the note
soon, it’s the end of both yours and jisung’s shift
you grab your stuff from the lockers in the back
as you try to leave, jisung tries to enter the narrow doorway
you shuffle left and jisung shuffles right
“sorry,” you say as you go in the opposite direction
and so does jisung
HHHHHH
you stay put as jisung moves past you
turning around, you call out, “hey 'sung! are you free right now? i know a good sushi place around here”
jisung almost jumps from his skin and you can see the crimson creeping up his ears under the fluorescent lighting
“yea- yea i am!! just give me a minute to grab my stuff,” he replies
he comes out with his backpack soon after
jisung grabs your hand and brings you out of the cafe
“lead the way!!”

Traveling While Gluten (and dairy) Free: London
This will hopefully be the start of a usual travel/food segment. Being gluten and dairy free (due to intolerances) can and has made eating while traveling a tad frustrating - to say the least. I will say, I have yet to find a place that allows me the freedom to just stumble upon food that works for me (maybe there are more places and I am just not equipped to deal with the uncertainty). It isn’t ideal to have to plan at least most meals instead of being able to do things on a whim, my plans have to be… planned. London, with scheduling, proved to be overall very gluten and dairy free friendly or accommodating, and the places we went all seemed to have knowledgeable staff. Without further ado let’s get into the restaurants.
Leggaro
This dedicated gluten free Italian restaurant was great! To start I had a taste of the Homemade Bruschetta Trio, just the cherry tomato one (although one of the others were also dairy free). It was tasty but nothing too exciting. For my actual appetizer I ordered the lamb meatballs. Best decision I made that night! Not only was it cooked perfectly but the flavors were, honestly, amazing. My father and I were addicted. I could’ve ordered a bunch of those for my meal and been more than content. For the table we ordered Pinot Blush Rosé, we went through a few bottles - I am a pretty big rosé fan. For the main course most of us ordered the Tomato Pappardelle with Bolognese. The handmade pasta was delicious! I had never had handmade gluten free pasta before so this was a delightful experience. Finished off with (unfortunately struggling to find the official name) a truffle chocolate tasting. Honestly, they were mediocre compared to the otherwise wonderful meal I had. Overall I recommend it - do yourself a favor and get the lamb meatballs!
Niche
Another dedicated gluten free facility. There is something so freeing about not having to worry about cross-contamination. Side note - as I was checking their menu for reminders on what I ordered, I realized they also have a low-fodmap menu! I will include a link to my video about my struggles with SIBO and when I was on the low-fodmap diet (https://www.youtube.com/watch?v=qJFZPWjCTDA&t=54s). Anyway, for an appetizer we ordered bruschetta which I remember being a larger portion than expected - which was fine since we were sharing; nothing crazy but was a nice start to our meal. For my main course I had the Beer-braised Short Rib. Once I read that the meat was fresh from the butcher down the street I was sold. It was so juicy and absolutely hit the spot - I could not recommend it more! Somehow I still managed to have room for dessert; fairly certain we all have a separate dessert stomach which would explain so much. I had the Dark Chocolate and Orange Ganache. LOVED IT! I’m a big orange and chocolate flavor combo fan and this did not disappoint. Other members of my family had the Tiramisu which they were not too happy with unfortunately. Otherwise, I highly recommend Niche for all your courses. Should also mention that the staff was hysterical, warm, and added to the fabulous time we had.
Indigo at One Aldwych
This one was a bit of a splurge! We went to Indigo for their afternoon tea (what would a trip to London be without afternoon tea?). Make sure to book well in advance if you have allergies as they even stipulate on their site that they can accommodate anyone with enough notice! My only real disappointment was that this afternoon tea did not come out on those tri-layer displays - obviously this is just me being nit picky in terms of aesthetic expectations. We each ordered tea - I had the Lemon Sherbet which really needed a sugar cube or two - which I added. As we sipped and enjoyed the comfort of the tea, we had time to just relax and take in each other’s company before our first course. For the savories I had the Smoked Salmon and Chive Quiche. Turned out to be a tad dry but tasty, still surprised it wasn’t crumbly without cheese or something extra to help hold it together. As a table we all agreed that the Coronation Chicken mini sandwiches were hands down best bite of food we had at this tea (we ended up ordering more of them). There was a roasted pepper sandwich , though I am failing to remember what else was in it, the one bite was all I really wanted of it. The beet wrap would have been better if they either balanced out the beets with something else or packed the wrap a bit less because all you got was a strong beet taste (and I eat beets). The Scones with Bacon and Toffee Jam were unlike anything I’d ever had - and I happily ordered another tray of them as well. Then it was time for wha we all had been waiting for, the very extravagant Charlie and The Chocolate Factory inspired sweets. The pictured treats explains for itself why we are here (for the experience). Loompaland Lemon Floss (AKA cotton candy for us simpletons) was way too lemony for my pallet and was nicer to look at than eat. I shot back the Banana and Chocolate Milkshake which didn’t taste anything like banana for me and seemed more like watered down chocolate. My family said their’s was too banana-y so I am wondering if the dairy vs dairy free versions were very different for this dessert. While I was looking forward to the Chocolate Cacao Bean Financiers they were dry and pretty flavorless. Similar in appearance to a strawberry shortcake was the Whipped Strawberry Mess which was pretty good, nothing insane and I honestly could only stomach a few bites, may have been due to the flavor being too artificial or sweet - granted, my father devoured his happily. My favorite items were the Violet Lemon Cake, which was so delicious and not too heavy but still left me content, Cream Chocolate and Orange Mousse (seems to be a sage bet for me apparently), and yet again the scones with jam, while appearing to be innocuous and not special on paper were still a delight. With all that being said - if you are looking for the tastiest meal you’ve ever had then I can’t recommend Indigo, but if you are here for the experience (as we were) then don’t shy away from the fun and enjoy the moment with those closest to you.
Hobson’s
For a truly tasty and fried meal I highly recommend checking out Hobson’s Fish & Chips. I had the fried cod while my family members all had the haddock. All of the fish came out nice and flaky, cooked perfectly, and were healthy portions. To add to the fried indulgence my sister and I split an order of fries and onion rings! I don’t know the last time I had onion rings before this, needless to say I was in heaven. The batter was addicting and everything was still somehow flavored individually and did not feel like the batter overpowered the meal, but was a nice compliment. I was so full by the end of it that I had to take a decent amount of the fries and onion rings home to finish, they were a pretty nice snack the following day.
Bella Italia
Bella Italia was not planned like the other meals and was found by googling gluten free restaurant options in the area, glad it worked out for what we needed but of all the meals we had it was the least exciting and was more like checking a box than being noteworthy. For some reason I ordered Sicilian Olives as a “while you wait” (almost like a bread basket substitute)- there were way too many for one individual to have, even an olive connoisseur would have felt an olive overload. Then, instead of having a full meal I only found myself hungry enough for a starter. The adult in me then ordered Sweet & Sour Chick Wings which hit the spot and were exactly what I had been craving. So while this was by no means the most extravagant meal we had if you are in a pinch and need to find a place that can accommodate allergies then check out Bella Italia, it’s a chain so you should also luck out in finding a location near you as well (making it the most convenient of the ones on this list).
Beyond Bread
Unlike the other items on this list we did not sit down to eat here and just picked up food options for breakfast and to make sandwiches for days where we were out for a while (I.e. our 11 hour bus tour). However, it is important to note that it is a dedicated gluten free bakery! I had their blueberry and chocolate muffins most mornings and we purchased a few giant rolls of sourdough bread for the longer days. I was happy with everything I ate from there, my only regret is not having purchased more things to try!

Here’s 5 delicious yet healthy Dessert ideas!😍🍪 *Swipe to see all! 1-5 which is your favourite?!🍌🍧🍪🥞🍓 ⠀ 🍌🍪🍌Banana Chocolate Chip Muffins = 100 CALORIES EACH Put all the ingredients minus chocolate chips in blender and pour in muffin tin. Top with a few chocolate chips. Bake 400F 8 minutes. ⠀ 🥞🍓🥞Crêpes = 127 CALORIES Mix flour, milk, water, butter + 1 egg until smooth. Pour 1/4 cups batter in pan and cover the bottom. Flip to cook the other side. Mix protein + stevia into yogurt + stir. Spread on crêpe, fill with strawberries + fold. ⠀ 🍫🍪🍫Double Chocolate Chewy Cookies = 27 CALORIES EACH Preheat oven 350F. Just mash beans then mix with apple sauce, egg, stevia, vanilla. In a different bowl mix flour, cocoa powder, baking soda + salt. Slowly together + half the chocolate chips. Spray baking sheet with oil. Use cookie scoop to create balls of dough + top with remaining chips. Bake 8-9 minutes. ⠀ 🍧🍓🍧Protein Strawberry Shortcakes = 110 CALORIES EACH Preheat oven 325F. How Can You Make Pancakes Without Eggs?
The simple secret trick? Just add a little vinegar to your pancake batter!

Vegan Pancake Ingredients
If you have flour, baking soda, vinegar, salt, and baking powder, you already have everything you need to make this easy pancake recipe.
Stir in the optional rolled oats to make vegan oatmeal pancakes, or use oat flour or gluten free all purpose to make gluten free pancakes.
I’ve not tried making them with buckwheat or whole wheat flour yet (and I don’t recommend using coconut flour), so please feel free to report back if you experiment!
The recipe works with either milk of choice (such as almond, soy, or coconut) or water, and the sugar can be omitted if you want savory or sugar free pancakes.

1 cup flour (or try these Flourless Pancakes)
6 tbsp rolled oats, or 1/4 cup additional flour
2 1/2 tsp baking powder, and 1/8 tsp baking soda
scant 1/2 tsp salt
1/2 cup milk of choice or water
2 tsp white or cider vinegar
1 tbsp oil or nut butter, or omit for fat-free
1-2 tbsp sugar or sweetener of choice (can omit for savory)
The recipe works with spelt, white, gluten free all purpose, or oat flour. Feel free to experiment with other flours, and be sure to report back with results if you do!To make the pancakes, stir dry ingredients in a bowl, then stir in remaining ingredients. For extra fluffy pancakes, let the batter sit 10 minutes to thicken. Or if thinner pancakes are desired, you can skip that step and add more liquid as needed to thin out the batter. (If you accidentally add too much liquid and the batter gets too thin, cook them anyway and they become crepes!) Grease a nonstick skillet well and heat on medium. When the pan is hot (test by adding a drop of water – the pan is ready if it sizzles), drop small ladles of batter and press down. Don’t make the pancakes too big, or they’ll be done on the edges before the centers cook. If desired, press a few berries or banana slices into each pancake, or sprinkle on some chocolate chips. Using a spatula, flip when edges begin to look dry. Let them cook for an additional minute or so before removing from the heat. Re-grease the skillet after each set of pancakes, to prevent sticking. To save time in the morning, you can make up the batter the night before if you wish and refrigerate in a covered bowl. Liv B Is Busting the Myth That Delicious Vegan Food Isn’t Budget Friendly
The other week, I ordered a $30 head of cauliflower at a trendy Toronto restaurant. I thought it seemed somewhat absurd to charge that much for a meatless dish, but when I asked how it was made, I understood the valuation: the leafy vegetable spent several hours being boiled, braised, basted, roasted and then doused in various homemade sauces. This lovingly created cruciferous was more flavour than any piece of beef I’d ever been served—and it nearly convinced me that I could give up meat for good.
Before the bill was paid, I realized: I don’t have the resources or time to recreate this multi-step recipe. Trendy vegan restaurants and savvy influencer chefs can develop complex dishes that make you swear you’re biting into a burger or a nacho chip covered in cheese, but this style of cooking isn’t an option for the day-to-day eater. The only alternative vegan lifestyle, I thought, was to simply fill my diet with salad, tofu and hummus. Neither option seemed appealing.
Halifax-based YouTuber Olivia Biermann is advocating for a third possibility. Through her cooking channel, Liv B, she’s sharing recipes for people who want to make flavourful vegan food—but who don’t want to spend a ton of time or money doing it. She recreates traditional comfort foods like chocolate chip cookies and mac and cheese for over 650,000 vegan and veg-curious fans, and now, she’s sharing the wonders of plant-based cooking through her first book, Liv B’s Vegan on a Budget.

What’s your vegan story? When and why did you stop eating animal products? Back in university, in my first year, I developed some digestive issues. I discovered I was lactose intolerant and also had a hard time with red meat, so I cut out dairy and meat. I felt a lot better, and over about 2 years I slowly transitioned to being fully vegan, cutting out chicken, eggs and fish. It was a combination of health and ethical reasons, and the more I researched, the more certain I was that being vegan was the right choice for me.
What are 10 staples on your weekly grocery list? Bananas, spinach, red bell pepper, almond milk, vegan cheese, pasta, tomato sauce, blueberries, granola, coconut yogurt.
What’s one “fancy food item” that you think is worth the splurge? Nutritional yeast sounds fancy but it’s actually quite easy to find. It can be on the pricier side but it is so worth it to be able to make “cheese” sauces.
What are your three favourite recipes in the cookbook? Maple Curry penne, Carrot Cake with Cream Cheese Frosting and Chewy Chocolate Chip Cookies.

Vegan On A Budget
Vegan Maple Curry Penne
Serves 4 Time: 30 minutes
“This recipe was inspired by a dish I had at a cute restaurant in New Brunswick called Lily’s Café, years ago, before I went vegan. It was quite an easy dish to make plant-based: I only needed to use coconut milk instead of heavy cream and omit the meat. It is a super-popular recipe on my YouTube channel; everyone who tries it adores it as much as I do.”
INGREDIENTS
14 oz (400 g) penne pasta 6 tbsp (90 mL) almond butter 2 tbsp (30 mL) tomato paste 1/4 cup (60 mL) pure maple syrup 3 tbsp (45 mL) soy sauce 2 tbsp (30 mL) curry powder 2 tbsp (30 mL) freshly squeezed lemon juice 1 cup (250 mL) full-fat coconut milk 1 tbsp (15 mL) olive oil 1 large red bell pepper, thinly sliced 1/2 medium onion, chopped 1 cup (250 mL) baby spinach Chopped curly-leaf parsley (optional)
INSTRUCTIONS
1. Cook the pasta in a large pot according to the package directions. Drain and then put it back in the pot. Set aside. 2. Meanwhile, whisk together the almond butter, tomato paste, maple syrup, soy sauce, curry powder and lemon juice in a medium bowl. Slowly add the coconut milk, whisking constantly until smooth. Set aside. 3. Heat a large frying pan over medium heat. Add the oil, bell pepper and onion. Cook for 5 minutes, stirring frequently, until the onion is translucent and the pepper has softened. 4. Pour the maple curry sauce into the pan, then add the spinach; simmer over low heat for 3 minutes, stirring frequently, until the sauce has thickened. Add to the pasta and stir to coat. 5. Place the pasta pot back on low heat and heat for 2 minutes, constantly stirring gently, until the pasta is warmed through. Serve.

Vegan Strawberry Shortcakes
Serves 8 Time: 30 minutes
“Don’t let the appearance of these shortcakes discourage you — I promise you, this recipe is a total cinch to make! All you need are ripe fresh strawberries and some pantry staples. The biscuit recipe is almost identical to my Breakfast Tea Biscuits, but since this is dessert, they are a bit sweeter.”
INGREDIENTS
Crushed Strawberries
11/2 lbs (750 g) fresh strawberries, stems removed 3 tbsp (45 mL) organic cane sugar
Sweet Biscuits
11/2 cups (375 mL) unbleached all-purpose flour (approx.) 1 tbsp (15 mL) organic cane sugar 2 tsp (10 mL) baking powder 1/4 tsp (1 mL) salt 1/2 cup (125 mL) unsweetened nondairy milk 2 tsp (10 mL) white vinegar 3 tbsp (45 mL) cold vegan butter Coconut whipped cream (optional) Pastry blender (optional) 2.5-inch (5 cm) thin-edged drinking glass or biscuit cutter
INSTRUCTIONS
1. Crushed Strawberries: Place the strawberries in a large bowl. Using a potato masher or fork, lightly mash the berries until juice is released and they are slightly broken up. Add the sugar and stir to combine. Refrigerate until ready to use. 2. Sweet Biscuits: Preheat the oven to 425°F (220°C). 3. Whisk together the flour, sugar, baking powder and salt in a large bowl. 4. Combine the nondairy milk and vinegar in a measuring cup or medium bowl. Set aside for 5 minutes. 5. Meanwhile, using a pastry blender or two knives, cut the vegan butter into the flour mixture until it becomes crumbly. Add 6 tablespoons (90 mL) of the milk mixture and stir until a dough forms (you want the dough to be slightly sticky but not too wet). Depending on the temperature and humidity at the time of baking, you may need more of the milk mixture (discard any that remains). 6. Gently knead the dough in the bowl 3 or 4 times, until it just gathers into a ball. Transfer to a lightly floured work surface and pat the dough into a disk approximately 1/2 inch (1 cm) thick. Using the drinking glass or biscuit cutter dipped in flour, cut the dough into large rounds, twisting the cutter slightly when it gets to the bottom. Reroll the scraps of dough as needed to make 8 biscuits. 7. Place the biscuits on a baking sheet in two rows, right next to each other. Bake in the preheated oven for 10 minutes, until the biscuits puff up and begin to turn golden brown on the bottom. Remove from the oven and let cool on the sheet for 2 minutes. 8. Slice the biscuits in half. Using a ladle, spoon crushed strawberries over each bottom half, followed by a dollop of coconut whipped cream (if using). Top with the other half of the biscuit. Serve.

Crispy Avocado Open-Face Vegan Sandwiches
Serves 2 Time: 40 minutes
“This recipe was inspired by the avocado fries recipe I made on my YouTube channel. Avocado fries are chunks of avocado coated in a crispy batter and baked until golden brown. The outsides are light and crispy while the insides are creamy, almost like a soft cheese. I like them so much I decided to find a way to eat them for breakfast! These open-faced sandwiches are piled high with crispy avocado fries, greens, tomato and a savoury cashew cream sauce.”
INGREDIENTS
Avocado Fries
3 tbsp (45 mL) all-purpose flour 1/4 cup (60 mL) unsweetened nondairy milk 1 cup (250 mL) panko bread crumbs 2 tbsp (30 mL) nutritional yeast 1/4 tsp (1 mL) onion powder 1/4 tsp (1 mL) salt 1 ripe avocado, sliced into thick wedges
Cashew Cream Sauce
1 cup (250 mL) raw cashews 1/2 cup (125 mL) water 2 tbsp (30 mL) freshly squeezed lemon juice 2 tbsp (30 mL) nutritional yeast 1/2 tsp (2 mL) salt 1/4 tsp (1 mL) garlic powder 1 tsp (5 mL) Dijon mustard
Sandwiches
2 English muffins, split in half and toasted 1 cup (250 mL) arugula or baby spinach 1 tomato, sliced
INSTRUCTIONS
1. Avocado Fries: Preheat the oven to 375°F (190°C). 2. Whisk together the flour and nondairy milk in a small bowl, until smooth. 3. Combine the panko, nutritional yeast, onion powder and salt in a medium bowl. 4. Dip one piece of avocado into the milk mixture and submerge until coated. Allow excess liquid to drip off, then gently dip it in the panko mixture until coated. Place on the prepared baking sheet and repeat with the remaining avocado wedges, spacing them apart on the sheet. 5. Bake in the preheated oven for 25 minutes, flipping after 15 minutes, until golden brown. 6. Cashew Cream Sauce: Meanwhile, place the cashews, water, lemon juice, nutritional yeast, salt, garlic powder and Dijon mustard in the blender. Blend on high speed for 1 to 2 minutes, until smooth and creamy. 7. Divide the arugula between the English muffin halves, followed by the tomato and avocado fries. Evenly pour the sauce overtop; serve.
