Féile na nÚll Menu & Analysis
I had really meant to publish the menu before the event, but ingredient acquisition took more time and effort than expected. In particular, chestnut flour, which I wanted as a thickener for various gluten-free dishes, just could not be found anywhere I tried. I didn't find that out with enough lead time to order it online. Almond flour substituted, and was fine.
Anyway. Here's the full menu, which fed varying numbers of people, but I think about 45 for the feast.
Travellers' Fare (Friday evening): Beef stew with bread and butter (vegan stew on the side, plant butter available, GF bread available).
Saturday Breakfast was produced by the inimitable Lady Meadhbh Rois inghean Uí Chaoimh.
Saturday Lunch: Chicken soup (vegan soup alongside), bread, fruit.
Feast: Roast pork (vegan nut roast on side), Frumenty (rice on side), apple sauce, green sauce, meat pies (mushroom pie on side), creamed leeks (with fake cream), buttered turnips (with plant butter), roasted onions, purple carrots (with plant butter), olives, anchovies, apple pies, blackberry and apple pies (all pies with GF/vegan versions as well, where possible).
Sunday breakfast: Porridge with cream and fruit, stewed apples, boiled eggs, cold ham, and various leftovers, mostly fruit pies.
The emphasis here wasn't on any particular production of period dishes, but on making sure everyone got good solid food. It's also an entirely plausible English Tudor menu, including the frumenty and green sauce as dishes that didn't make it through the Early Modern. As far as I can make out, everyone enjoyed it (although nobody ever tells the cook they didn't). The coeliac and vegan/vegetarian folk expressed particular approval, which was important. Anything I could make GF and vegan was made so (plant butter and almond flour are the two main tricks here).
Gabrielle and Katie were in the kitchen every hour I was, and possibly a few more, and a great deal of credit for the weekend's food being on the tables on time is due to them. Katie also set in, with very limited prior experience, to making pastry for the non-gluten-free pies, and produced some of the best I've ever encountered. She's been designated Head Pastrychef in Perpetuity as a consequence. There were also many other kitchen helpers, who've been thanked appropriately on Facebook. The relevant note here is that we had 4-5 people in the kitchen at most times, which was more than enough, and kept everyone relaxed. The SCA Kitchen playlist (85% mine, 15% Gabrielle's) was also helpful.
So. The first thing that I want to improve is the gluten-free pastry. Making it vegan as well was trivial; replace the lard/dripping with plant butter, and it's absolutely fine. Any fat will do for that, it seems, although since the traditional use for the pastry is the raised pork pie, the meat fats help match the taste. The gluten-free flour, however, could only be persuaded to make a paste, not a pastry - trying to roll it out into sheets simply didn't work. It would take the form of a sheet, alright, but if I went to pick it up, it just broke. An experimental version that Gabrielle and I did before the event could be sort-of lifted into place on baking parchment, but it broke over the contents of the pie. In theory, with a very dense, relatively smooth pie filling (such as a meat pie that's been well-packed), you could get a coherent crust, but I don't know what would happen to that as the contents shrink in baking. Xanthan gum appeared to make zero difference.
So we've some more experimentation to do there. One suggestion is to use an egg or two, which will take it away from being vegan - but a vegan pastry, using plant butter instead, should not be a problem to produce as an ordinary cold pastry. Various things will be trialled.
The green sauce came out particularly well. Órlaith did her usual superlative job of chopping herbs, primarily sorrel and mint, with some basil and thyme, some black pepper, and garlic salt. The liquid base was about 2 parts olive oil to one part white wine vinegar. We only made a small amount, but nearly all of it was eaten. Green sauce is basically a table condiment for the latter end of the SCA period in Western Europe, and I have vague plans to make and bottle some at some stage, to see how it keeps and matures in the longer term.
I made far too much of the frumenty. Bulgur wheat isn't terribly expensive, so I don't feel too bad about it, and the carbohydrates are absolutely the area in which to over-provide. But for my future reference, about 400g of dry bulgur will provide enough for about 30 people without difficulty.
The roasted onions were surprisingly popular. I think we did 11 whole onions, and only one and a half came back to the kitchen.
The meat pies disappeared in their entirety, as far as I can tell. One was a combination of minced pork, minced lamb, and whatever vegetables were to hand; the other was filled with the remnants of Friday's beef stew. I was very pleased to be able to integrate leftovers into the feast; I am completely certain that a rolling use of leftovers in subsequent days' dishes was a standard feature of any period cookery, and we don't often get to do that over a weekend.
The purple carrots were entertaining. I can't detect any difference in taste from orange carrots, but they stain everything they touch a nice shade of purple-blue. I'll get them again if I can just for that.
Overall, I'm pleased with how things came out, and I'll do either of the Arabic or Pre-Norman Irish menus I had partially worked out for next year.

spinach sandwich
because I can't remember if I ever wrote this thing down but the restaurant I worked for that made them closed and I have no idea how common/uncommon this might be as A Thing.
I've talked this sandwich up to friends as being one of my favorite vegetarian sandwiches/something I would willingly choose over meat, and it only seems fair to post it. the recipe can be tweaked in whatever direction you need it to go: vegan, dairy free, gluten free, whatever you want.
you will need:
a relatively big frying pan, possibly two, or a griddle spatula cooking brush cutting board knife some clear counter space near where you're cooking a clean kitchen towel a paper towel about the same size as your kitchen towel, plus extra as needed
ingredients for the Classic Spinach Sandwich:
2 slices marble rye bread 2 slices Swiss cheese ranch dressing margarine, ideally a European butter blend style, melted non-stick cooking spray, or as I like to call it spray grease fresh spinach, a lot some white onion chopped into half-moons some white mushrooms, sliced seasoning salt
prep time!
I'll be writing this under the assumption that you're starting off with all raw ingredients, but at the restaurant we usually had at least some of this prepped ahead of time like the onions.
Preheat your pan(s) or griddle on medium heat. Take this time to prep your onion and mushrooms if you have to slice them. We're not looking for finely chopped on either of these, just sliced into more manageable shapes. I typically cut my onion in half and then slice it into half-circles/half-moons and go for the pre-sliced mushrooms because I'll take what help I can get. If you have to wash your mushrooms, let them dry as much as they can on a paper towel, but don't worry too much about it. The water is gonna get cooked out, so if they're not as dry that just means they'll take a bit longer to cook.
Once the griddle is hot, hit it with just enough spray grease to lightly coat the surface. Put your onions and mushrooms in and let them cook. We want the water from the mushrooms to be mostly evaporated away and the onions to be soft. The more caramelized the better, but don't worry so much about that if you're in a hurry because cooked onions will still be good.
While the onions and mushrooms are cooking, it's time to prep our other stuff. On the nearby counter space, lay out the clean kitchen towel and layer a paper towel on top of it. This will come into play later. Make a spinach sandwich bread setup by taking your slices of marble rye, drizzling a little bit of ranch dressing on the inside of each slice, and topping each with a slice of Swiss cheese. Sandwich these together so you can easily work with them with one hand, reducing mess as the bread will absorb the ranch and the uncooked cheese will keep the pieces from sticking yet.
Once the onions and mushrooms are cooked, we're ready to go!
Using the brush, spread melted margarine on the outside of the bread and set it on the griddle. With one side down, you can spread margarine on the other outside and use your fingers to just flip it off the bread and onto the griddle. Then add the spinach to your onions and mushrooms. We're looking at about 5 minutes of cook time once all the remaining ingredients hit the pan, long enough for the spinach to get good and wilty. Once the spinach is cooked, place the mixture of it in the paper towel.
Carefully fold the paper towel/kitchen towel combo over the spinach mix to form it in a little packet, squaring it off and absorbing excess liquid. This will make it easier to transfer onto the bread without things getting too soggy. Let it sit for a moment as you get the bread off of the griddle. You'll know the time is right because your cheese will be melty.
Open the spinach packet so that the spinach mix is exposed. Place one piece of bread on it cheese side facing the spinach. Carefully pick up the entire thing, folding the towel over the bread to do so if you like. This will help keep everything contained. Then flip it over onto the cutting board. Remove the paper towel/kitchen towel combo and top with the other piece of bread. Cut in half and serve!

Vegan, gluten-free sufganiyot (jelly donuts)
I don't normally (i.e. never) post food recipes, but I'm really proud of this one. As someone who has a lot of dietary restrictions, including some niche ones, I sometimes struggle to get into the holiday spirit. The foods I grew up eating now cause me a lot of physical pain and I feel that separation acutely this time of year. I imagine I'm not the only one.
One food I really miss is the sufganiyot, a.k.a. jelly donuts, that are traditionally eaten during Chanukkah.
So for all of you gluten free and/or vegans people out there, here is a recipe for you! They're not lookers, but they taste great.

Wet ingredients:
1 tbs Active Dry Year
1/2 tbs sugar
2 tbs Olive Oil
1 cup warm water
4 tbs aquafaba (the water from a can of chickpeas)
1 tsp vanilla extract (optional)
Dry ingredients:
3 cups of gluten free flour (I used Bob Red Mill's All Purpose Baking Flour)
1/2 cup of gluten free flour if needed
1/2 cup of powdered sugar
3/4 tsp salt
2 tsp garam masala (optional)
Others:
~1 cup powdered sugar for dusting donuts
~1/2 cup of strawberry jam
Neutral oil for frying. I used canola. The amount will vary depending on the size of your cooking containers, just make sure you have enough oil so the sufganiyot can float off the bottom of the pan.
Instructions:
Mix all of the wet ingredients except vanilla extract, if using (I've always forgotten and put mine in before combining wet and dry mixes, so I don't know what it would do if added at the same time).
Leave standing for 10 minutes or until foaming.
Mix all of the dry ingredients together EXCEPT 1/2 a cup of flour (sifted if possible, if not mix together with a whisk to get rid of clumps).
Once the yeast mixture has foamed, mix in the vanilla extract and then slowly combine with the dry ingredients. It should form a thick batter.
If the batter is too thin, add in flour as needed.
Cover the mixture with a damp, warm towel. Leave to rise for 1-2 hours, or until doubled in size.
Frying:
In past recipes, I've read to heat the oil up until it is 325 degrees. I don't own a thermometer, so I just heat it up on medium/high heat until a small drop of dough can fry in around 30 seconds.
The dough it going to be very sticky and hard to form. Using two spoons, scoop dollops of dough into the oil. Fry for a few minutes on each side, until the dough turns in to a light brown on one side. Then flip and fry the other side until that is also a light brown.
Once the dough is done, remove from the fryer and place into a bowl with some powdered sugar on the bottom. Using a spoon, coat the entire donut in powdered sugar. Squeeze in the jam while he it is still hot.
Best if served hot, or within a few hours of being made.

This allows you to understand its unique characteristics and adjust your main recipe accordingly. Blend with other flours: Quinoa flour alone may not suit all recipes. 2- i'm only in my mid-20s, but i consider myself to have quite a bit of life experience. i worked as a nurse and a teacher of multiple grade levels before i moved to the midwest and became a cake decorator. i plan on running my own baking business someday from home, with gluten-free and vegan options given my own allergies.
3- hmm, i'll spoil you and give two more facts for the price of one. i am a pagan witch, and i am a diagnosed did system that is fictive heavy. so, mental health and proper representation is very important to us.

Hello frenes, i have made a poppy seed cake that's vegan and gluten free. I do it rather often and it always works out well for me :)
I base it on a polish recipe I found that i made to be gluten free but I assume many people don't speak polish and are missing out so I decided to post

The ingredient list
2 cups of flour ( i use 1.5 of some gf mix and half a cup of millet flour but it worked with other ones too, it's just cheaper to do it that way for me and works out :))
2 cups of soy milk or any other vegan milk ( soy however has more texture than for example almond, and we did it with water before but the results aren't as good )
1 cup of sugar
1 cup of groud poppy seeds
1/2 cup oil
1 cup ground or cut up walnuts
1 package of vanilla sugar ( you could add less for sure but I just can't be bothered to keep it and do the whole thing )
2 teaspoons or so of baking powder and a pinch of salt
You could add 0.5 cup of cut up raisons but my friend didn't like them so we didn't use them this time
It's pretty simple really, i mix all the ingredients without the nuts and raisons ( because otherwise you won't get it to be smooth ) and once it is smooth you add the nuts and whatnot (some people like to add some candied orange skins but I usually just don't have any)
It should be like a thicker pancake texture, if it's thin try adding a little more flour.
The batter has to sit for around 15-20 minutes as the poppy seeds kind of expand a tiny bit ( this is a good time to set the oven to 180°) and then you're good to go
Keep in mind that the baking time will differ based on the oven and size of the cake form. This one took around 90 minutes but when I use smaller forms it takes around 50-55 minutes. I use a toothpick type thing to poke the middle and check if it's cooked (if it sticks to it it isn't)
We also put some sugar and more walnuts on top so it would have a little hard top from the sugar ^^
Make sure to cool the cake for 20-25 minutes so you can cut it nicely without it falling apart or falling down.

Gluten and Granola
The key ingredients in granola generally include grains (including but not limited to oats) some form of sweetener such as honey or brown sugar, and a variety of mix-ins such as nuts, seeds and dried fruits. Finally, many granola recipes include a bit of oil or another form of fat to help achieve that appealing crispy texture when baked. Gluten grains in granola Sometimes your granola may contain one of three gluten-containing grains, such as wheat, rye, or barley, with wheat being the most likely. Hypothyroidism is a condition where the thyroid does not produce enough thyroid hormone, significantly slowing metabolism. Hypothyroidism has detrimental effects on the body. The upper intake level of iodine for adults is 1,100 mcg per day.
Some foods contain substances that may reduce the utilization of iodine or even reduce TSH function. These include cabbage, Brussels sprouts, and other cruciferous vegetables, as well as millet and soybeans.  For those with hypothyroidism, it may be advisable to consume these raw, foods in moderation. The End of Our Journey - A Reflection on Pizza and More
What a journey, right? I can't believe this project has come to an end! It feels like it lasted only a moment, on the other hand, I am well aware a few weeks passed, it's kind of funny. During this project, we visited so many restaurants, with so many different kinds of pizza, and with many different aesthetics, different interpretations of this supposedly simple meal… I think throughout the whole span of this blog, I noticed some important aspects of these restaurants that I believe are important to share!

There are many aspects, and criteria of sort, by which our group, so me as well, of course, considered these restaurants and decided if we liked them or not. However, I think it goes further than that. After all, the subjects which we covered can't just be equaled to likes/dislikes, as they're deeper than that.
Say, dietary restrictions related to the menus; I am not a person with a celiac disease, so I don't need to search through the menus carefully, because if I pick a wrong dish, it will make me seriously sick. Still, few restaurants that we visited had such information, or we had to figure it out based on the ingredients, which isn't even always safe! Something that I think more restaurants should took into consideration, is clearly marking their options according to particular diets (not only gluten-free, but also lactose-free, vegan, vegeterian, and etc.), due to the safety of their customers. I think it would be highly appreciated by everyone, as well as would make things simply easier! After all, it can't be that hard, right?
Another thing I wondered about, and which I think should be considered, is accessibility of these restaurants. Even though decor is important and it's really nice to sit in a gorgeous restaurant, eating delicious food, it would also be nice if these were accessible to as many people as possible, and sadly mobility was sometimes the issue in the places we visited. I don't mean that from the standpoint of correcting every single place I went to over the course of the past month (and more), what I'm trying to say is, if these restaurants can, they could make the interior more spacious, simply by changing the placement of a few tables, or could inform of the amount of space the restaurant has to offer (and in what way!)! This could be very useful to people struggling with mobility on daily basis.
What I also mean by the restuarants' accesibility is financial accessibility - not everyone can afford to go to a good, italian restaurant or just a pizza place that often, and to some of them even at all. I think it's important to talk about this, and I believe we should have focused on this aspect more - especially that we visited restauarants that were both great and easily affordable!
The last thing I wanted to mention is the approach of these restaurants to the culture of making pizza, and along those lines, that of Italy. Some of the restaurants we visited leaned into the "italian aesthetic" more than the others, some decided to go for their own, unique design, and some seemed to overlook it for the sake of simply developing their own, recognizable pizza-look that would invoke both them and the aesthetic in some strange, yet attention-grabbing way. I wanted to mention that, because this marks a, very intriguing to me, form of appreciating cultures of pizza and Italy, in a way!
