YOU ARE ASKING THE CORRECT PERSON! My family is a brunch family so I've done quite a lot of thinking:

French Toast - but this is conditional on the fact that the toast REALLY needs to be soaked with the egg liquid, and ngl, taking off the crusts is actually a god tier method to having more consistent, fluffier, french toast. Use the crusts as breadcrumbs to bread potatoes for house fries/hashbrowns.

Eggs Benedict - Yeah, I'm pretentious? What of it? It's like, the perfect balance of carbs, meat, egg, sauce. That's really all you need in a dish.

Sausages - THIS is your breakfast flavour bomb. With breakfast foods, you're either fitting the sweet flavour profile or the eggy flavour profile. but SAUSAGES give some SPICE. SAUSAGES give some SALT. And if you're eating very carb-heavy or protein-heavy breakfast meals, you almost want some of the fattiness as a way to cut those dense flavours.

Pancakes - This part of the post is dedicated to my homie shucaisan for always reminding me to eat some delicious pancakes. I personally think crepes also fall under this umbrella, but it's important to note that a pancake is only as good as its toppings, which is why french toast is so far ahead on this list. The goodness of french toast is INSIDE the french toast. But pancakes have to work a little bit harder to bring out the joy in the fluffiness of the pancake. I'm Canadian, maple syrup is the best option, (with whipped cream) but I've seen some really interesting pancake setups with various dessert syrups and choccy chips and graham crackers.

Fresh berries - A wholesome breakfast is not complete without fresh fruit, and honestly, what's better than a berry? You have varieties so all of your breakfast guests can have something they like, The Strawberry/Blackberry/Raspberry/Blueberry mix is unrivaled, but I know my mother is partial to these little round orange berries called gooseberries.
