One: The Series genuinely wasn’t built around romance.
Two: We do gradually see the characters develop feelings for each other more across the show.

Honestly, the fact that Katara and Aang's relationship has that strong aspect of friendship is one of my fave parts of it.
Like, maybe this is an unpopular opinion and I'm just a degenerate little dyke but I'm so so tired of romances having to follow the typical usually heterosexual conventions that have been set ib place both irl and in media.
And not to sound like an old man shaking my fist at a cloud, but in an era where romance is very standardised (look at the plethora of YA romance books selling basically the same plotline but in different aesthetics). It's nice to find a relationship that doesn't fully fit that mold.
Like people have joked about this but Aang and Katara really do follow the famously memed lesbian relationship stereotype of "we've been besties for ages and we've kissed a few times and she's said she loves me and I'm starting to think she's into me but idk". And I love that for them.
Also OP's examples aren't really saying much. They mention that "sokka learns that aang has a crush on katara in the fortuneteller, but we never see aang trying to get advice from sokka after he learns about it" while disregarding the fact that Aang did try to get advice from Sokka, and it backfired. Did we all forget "Soooo... papaya?" (also Sokka didn't realise that Aang had a crush on Katara? He thought Aang had a crush on Meng.)
Another argument from OP is that: "aang and katara kiss in the cave of two lovers but we never see katara's perception of aang change at all" which I find a bit of a flawed idea because there's not really anything in Katara's perception of Aang to change? Like she was already seeing him as a viable romantic partner from at least the Fortune Teller, she was blushing when considering kissing him and offended when he didn't immediately agree to it.
(I actually think this is the moment where Sokka realises there's something between Katara and Aang man look athis face.)
We do not see Katara's pov, but we can pick up her thoughts from how she's animated and other clues because atla makes it quite easy to emphasise with its characters. I talk more about it in the Kaatang and female gaze post.
OP using the description of "natural development of a platonic relationship becoming a romantic one" is also mildy annoting because just because a romance doesn't follow established conventions and timelines, doesn't mean that it's not natural or badly written. We study tropes and aechetypes usually in order to subvert them.
The concept that romance has to be a series of events followed by switches flipping automatically in response is incredibly limiting and, frankly, overdone. I can see the appeal of romantic stories being a series of actions and reactions between two people, but I personally find a slow, budding development even more compelling. But once again, thsi is up to preference. If OP doesn't like this style of romance, than that's fine. Though I will stress the golden rule: your preference doesn't mean that everything else is bad/unnatural/unethical etc.

your most recent post reminds me how much I don't enjoy overtly negative octavio depictions and callie being treated as a "brainwashed hapless victim) due to how it feels like an oversimplification of the lore as well as translation cherry picking

It gives a sense that when we see callie still caring about Dj Octavio, it comes from a sense that she gets him, as well as a more fanon interpretation on my end, that she feels like at least he reached out to her, he could've easily kicked her out of octo canyon but he let her stay
And that probably meant a lot to her, even if quite a bit of it was maybe manipulation, it was still more than what she got on the surface, because on the surface, all she was was an idol people could see and bombard with photos, a brand. And not a person.
It's like hell on nuanced earth 😭

And i ain't gonna stop until i can go on Inkipedia without groaning, or watch a YouTube video where some random guy doesn't just reads off a wiki page and nothing else. Sometimes the Splatoon community really makes me upset and it's lack of giving a shit on what words they use. Brainwashing and Hypnosis are on opposite sides definition wise. God. I would rather the Splatoon community push a "Callie and her second octopus grandpa" dynamic over the malicious takes people have said for over 7 years. Lae'zel: OK this is complicated because like, I genuinely think being a gith in the material realm means that she is just not comprehending the gender of the people around her in the question of attractiveness. It's the classic monster fucker thing where you stop caring about gender. And sex within gith culture is complicated anyway due to how they reproduce so she's probably omnisexual.
Shadowheart: She's definitely sapphic. There is nothing heterosexual about her and laezel and honestly her and Nocturne too. As for if she's into men. I'm not sure but I want to say no just because I know she's the go to romanced companion by straight men
Karlach: Listen Karlach X Wyll shippers. I see you. I understand you. I love you. You're so valid. Its not my ship but i do get the vision. I cannot see that woman ever dating a man. If it's any consolation I do think Wyll has a weird relationship with gender so, that could probably still work out.
Gale: He's definitely into women. I honestly switch on if I think he's into men or not. This will probably be subject to change after I do a romance run with him
Halsin: Pan and poly. 100% and I love him so much for it
Jaheira: OK ok OK. Hear me out. Aspec. Khalid and her had like a genuinely great relationship even though her feelings towards it were probably more platonic than she was willing to acknowledge but after he died she had no interest in ever having anything again because she could kinda check it off her mental list of things she is supposed to experience.
Minsc: I swear it is not intentional that I'm saying this for the non romancable compaions but I also think ace. I think he like thinks he's straight. He will sleep with women because he socially thinks that's what hes ment to do but his heart is never in it and boo is desperately trying to explain to him that he can just not do that if he doesn't want to.
Astarion: left for last because I think this is my biggest hot take. You cannot convince me he is into women at all. That is a gay man. Basically, every line that I'm aware of where he talks about romantic or sexual desire is with men. Like it's Astarion so his relationship with sex is complicated and you can maybe convince me of homoromantic bisexual though i personally think he doesnt consider his own desires at all during sex at least at the beginning of the game, so he doesn't mind sleeping with women because sex is just the thing he thinks he has to be doing but beyond that I cannot see it.

so me and Sam FINALLY watched the last season of Capaldi's Who
and tell me how, after literally over a decade and for perhaps the first time in his fucking career, Steven Moffat wrote a not just tolerable but really actually good two-parter and fully stuck the landing. like the editing and pacing were still a bit off but the storyline was original, fun, interesting and emotionally invested, and most importantly, rather than ending on a damp fart or the most furious autofellatio in history, the final part didn't fumble it and ended in a way that felt emotionally satisfying and like it made sense for the characters. like the last time he successfully wrapped up a multiparter in a way that didn't feel cheap and hollowly disappointing to me was literally The Empty Child/The Doctor Dances, and a) that was in 2005 and b) tbh The Doctor Dances is about a tenth as compelling and memorable as The Empty Child.
so after 12 years of either hackery or great ideas that fall apart in the second act, Steven Moffat writes what I would genuinely consider to be a memorable Good Doctor Who serial. it ends with bittersweet pathos, a solid closer for all the main characters, and sends Moffat's showrunning career out on a genuine high despite failing ratings and budget cuts (and the fact Doctor Who hasn't been consistently good since about 2009). good job Steve. with grudging respect I admit you pulled it out of the bag on this one.
wait what's this there's one more episode left? and it stars Mark Gatiss? and you literally spend the whole episode inexplicably just shitting all over the legacy of Doctor Who by inventing a version of the First Doctor that bears literally no resemblance to the character that William Hartnell actually played, just so you can spend the whole episode saying misogynistic things to run yourself off to how much more Totally Feminist your version was than the version you made up in your head of what Doctor Who was like in the 60s? and it added literally nothing to the season except to take all the wind out of the sails of the actually good finale you already wrote?
even when he writes a good episode this fucker still finds ways to disappoint me.
