So, my easy hyperfixation meal this week is something I'm dubbing 'pizza beans'.

This is a mostly 'use up the veg that is wilting in the fridge/on the counter meal'. It's vegan ('cause I'm vegan) but you could use real cheese.

Best part of it is that it takes all of 15 minutes to throw together and the most complex steps are chopping garlic and zucchini.

So. Grab yourself a decent size sauté pan. Chop up like 4-6 cloves of garlic. Doesn't have to be fancy... Throw a glug of oil into the pan, toss in the garlic, and set your heat on medium high.

Meanwhile. Slice a small or medium zucchini into rounds. Toss them in the pan. Add a handful of almost off sliced button mushrooms that you haven't quite used up. Fry them until the mushrooms have shrunk up a little.

Grab that barely touched container of almost overripe grape tomatoes you've been ignoring for most of the week. Give 'em a rinse. Toss them in. Cook them down until they're jammy. Toss in some tomato paste (about 2 tbsp) or a half cup of the half-used tomato based pasta sauce on the shelf in the fridge. Add some chopped basil if you have some. Cook down a few more minutes, and season with salt, pepper, red pepper flakes, and a shit ton of oregano to taste. Top it with shredded vegan cheese (I like Follow Your Heart's vegan mozzarella - Miyoko's mozzarella is also good, I'm just allergic to nuts and can't eat it anymore.).

Toast some crusty bread, brush it with a little olive oil, and rub some garlic on it. Eat the pizza beans on the toast.

I just made a really shit white person fridgecleanout version of efo rire bc we had a bunch of bell peppers to use up but despite hwo much i fucked it up it's literally making me so emosh like i feel the way i did after making mapo tofu for the first time. Like just the gratitude for having the time money and internet access to experiment w cuisines from places i have never been and may never visit and taste things i wldve never known. Like the way that doubanjiang and red palm oil taste is so diff from anything in the russian english vietnamese palate i was raised with and sumtimez it just hits me u know and im like ah ❤❤❤. It's hard to be so sensitive and in touch w the world around me all the time

Pork Stirfry with Mushrooms, Spinach and Peas, served on Ramen Noodles. The lighting was a bit off for these pics, but oh well it tasted delicious! I seasoned the pork strips with AP Seasoning and Apple Cider Vinegar and let it marinate overnight. I reduced the mushrooms down with red wine, and I added a corn starch slurry to make a sauce. I set that aside and stir fried the pork strips. I added the mushrooms back in along with the peas. At the end I added the fresh spinach. I served the Ramen Noodles with a drizzle of Sesame Oil and topped it with the Pork. Garnished with Sesame Seeds. Have a good week everyone!

I have been obsessed with rice bowl's lately. They are so easy to make and tasty! On top of being easy to make they also are a great clean out the fridge meal! Every couple of days I go through our fridge to see what ingredients are on their last legs. This way I can use them up and avoid any waste. Not that we waste because we compost but I would rather eat it than the worms! This Greek bowl was made to use up the last of my @laurachenel goat yogurt and a few odds and ends of veggies. First I marinated some chicken in the goat yogurt, lemon and herbs. Baked that up and sliced it onto the bowl. I cleaned out the fridge this morning and since I had pork that needed to be used up I made homemade sweet and sour pork for lunch. It was crunchy and savory and salty and the sauce was sweet and tangy so it just ticks all the right boxes. This is one of my all-time favorites but unfortunately John made me share. Unreasonable I know but that's how he is. I could actually eat this for breakfast, did you know there's literally no one policing that kind of thing? You can do whatever you want, no one will stop you. It's totally anarchy. Don't tell my Mom! Actually I'm pretty sure she wouldn't care as long as I make her cinnamon rolls. What do you do when you are on a budget but you are craving something delicious?? You repurpose stuff in the fridge! . My grandmother had brought over a cheeseball for the holidays that we didn’t finish and I had no clue what to do with the remainder. Well when there is a need there is a way! I decided to use my pork loin that I had paid 3.50$ for on sale (yes that’s for the whole loin) and I added a jalapeño into the cheese ball mixture. . So delicious and so easy! Monday night Spicy Jambalaya. With a few leftover ingredients I had from the weekend, I made a jambalaya that will take me through all week with leftovers. I used standard Creole spices and garlic pepper sauce to season up this dish, smoked sausage, black beans and corn. I browned and toasted the rice along with the rest of the ingredients before adding chicken broth to cook it all together. One skillet meal that goes a long way.
