Lemongrass Chicken Noodle Soup

Spicy and warming, this flavourful Lemongrass Chicken Soup is just what one need to soothe a cold. I reckon it might even prevent it! Happy Friday!
Ingredients (serves 1):
1 1/2 tablespoon toasted sesame oil
half a thumb-sized piece fresh ginger
1 small fresh lemongrass stick
1/3 hot chili pepper
1 medium carrot, rinsed
leftover Roast Chicken (a small thigh or breast or wings)
1 tablespoon Hot Pepper Sauce 
1 1/2 tablespoon sweet soy sauce
1 cup Chicken Stock, warmed
90 grams/3 ounces egg noodles
boiling water
1 tablespoon demerara sugar
Heat toasted sesame oil in a medium saucepan over medium-high heat.
Peel ginger, and cut it into thin slices. Add to the oil, and and fry, a couple of minutes.
Cut lemongrass stick into chunks, and cut each open lengthwise, without going all the way. Add to the saucepan. Fry, a couple of minutes more.
Thinly slice hot chili pepper, and stir it in as well.
Cut the carrot into thin slices, and add to the saucepan. Cook, another minute.
Roughly chop the meat of leftover Roast Chicken, and stir into the saucepan. Cook, 1 minute.
Deglaze with Hot Pepper Sauce and sweet soy sauce. Reduce heat to medium. Then, stir in warmed Chicken Stock. Stir in demerara sugar Bring to the boil, cover with a lid, and simmer, 5 minutes.
Meanwhile, place egg noodles in a bowl. Cover with boiling water and a lid. Allow to soak and cook, about 3 minutes.
Once cooked, add the noodles, with half to a full cup of its cooking water, to the saucepan. Increase heat back to medium-high, and bring to the boil.
Enjoy Lemongrass Chicken Noodle Soup very hot.

Pink Grapefruit, Ginger, and Lemongrass Sake Cocktails
2 Tbsp. packed chopped lemongrass (tips reserved for optional garnish)
1 Tbsp. packed chopped ginger root
1 Tbsp. organic, blonde cane sugar
2 Tbsp. strained meyer lemon juice (or 1 Tbsp. regular lemon juice plus 1 additional Tbsp. grapefruit juice) (1 ounce)
6 Tbsp. strained pink grapefruit juice
1 cup dry sake (8 ounces)

In a measuring pitcher or jar, vigorously muddle together the lemongrass, ginger, and sugar until the mixture is broken down fairly well, about 30 seconds. Add the lemon juice, muddle a bit longer, then stir in the grapefruit juice and sake. (Optionally let the mixture steep for 5 minutes or up to several hours in the refrigerator for a stronger flavor.) Strain the mixture through a fine mesh sieve and into a jar or cocktail shaker filled halfway with ice, pressing on the solids to extract all the good stuff. Stir or shake the mixture for 10 seconds to chill, then strain into two wine glasses filled partway with ice. Garnish with a lemongrass tip, if you like, and serve.

But the fact that like eighty percent of the time I can't even nuke a goddamn mug of water and then steep a teabag in it without releasing a billion microplastics that I'm about to drink is uh. Not good

Hmm - the last batch might have been a wunder-brew, with gold stars all round - but this one's a bit more of a mixed bag
Things started well, the black tea F1 fizzed up nicely when I gave it a stir.

(I had a bit of a brain-fart when I was making the labels, wrote green tea instead of black 🤭)
I found a bunch of recipes for raspberry lemongrass jam - and decided to see if it's a combo that works in booch too... but it didn't turn out so great. The lemongrass flavour didn't come through at all - except for an odd aftertaste, which I'm choosing to blame on the lemongrass. It was still drinkable, but nothing to rave about. (Think I might try again with dried lemongrass and see if it works better).
So the flavour I was most interested to try, didn't exactly shine - but the other two were winners.
Strawberry goes perfectly with lavender, I'll definitely be doing this one again. (It did actually carbonate really well, I was just a bit slow taking the pic).
And pineapple and ginger are both just magical kombucha ingredients - you can put them with just about anything and it always works - so it's no surprise that they work beautifully together. And look at that fizz! 😁
