@vaspider this is slightly your fault because you gave me the motivation to preserve things
Candied orange peel! Much less of a messy process than I remembered, since last time was two years ago. And orange syrup! I swear it's not burnt, I just used brown sugar because it's what my mom keeps on hand. I am Very tired and they are delicious. Kind of bitter because I only boiled it once, but that's normally how my dad likes stuff anyway

homemade crunch bars!
melt a cup of chocolate (any kind, i used semi-sweet chocolate chips) in the microwave, then stir in a cup of puffed rice cereal (ie, rice krispies) and pour into a 6x8" pan lined with parchment paper, sprinkle ~1/8tsp sea salt on top, and refrigerate an hour or so then cut into 16 squares

Nosy nabour mince
'Tis the season to be spooky, and I am loving it. I made this to bring to a party yesterday, and I can't say that it was a raving success, but that can easily be attributed to
we had too much to eat
it was hard to seperate
Both of these issues could easilly be remedied though, the first with some moderation and the second with a sharp knife. I liked the taste though, and if I had more time to spend on the presentation I am pretty sure it would look spectacular. I like presentation, but I don't believe in sacrifycing taste, and in that respect this is a good bet.
Mix together in a non stick pan over low heat until melted: 600 gr or 21 oz marshmallows 50 gr or 4 tbsp butter Add and mix: 3 tbsp peanutbutter Add and mix: 6 cups or 14 dl rice crispies As you can tell this is quite a big batch, speaking of moderation :)

my blog is fixed and im catsitting for my neighbor,
so lets make candy! (i was going to make the candy anyway, but now i can post about it)
specifically: knock-off Cadbury crème eggs
as in these things
Tumblr media
(its easier than you probably think)
recipe for the filling:
1/2 cup (170g) light corn syrup
1/4 cup (58g) butter, soft/room temperature
3 cups (375g) confectioner's (powdered) sugar
1 teaspoon vanilla
Tumblr media
put the corn syrup, butter, vanilla, and 1/2~2/3rds of the sugar in a bowl and mix it together. slowly add the rest of the sugar until its all mixed in.
Tumblr media Tumblr media
it will look like you have way too much sugar, but you dont; if youre familiar with how bread is made, then youre already familiar with the concept of Just. Keep. Stirring. it will mix in.
note: none of this needs to be refrigerated, so if you get tired/sore/have to go do something else, you can literally just put it down and come back to it later, though if you leave it sitting out for too long it can get dried out, so you should cover it (also if you have pets)
melt the chocolate. (1 batch used a little less than 2 bags of chocolate chips)
my preferred method is on the stove using a double boiler and low heat; the bowl with the chocolate should not get so hot that you cannot comfortably put your hand on it & pick it up. it takes a little while to melt the chocolate, but i havent had any problems with this method
Tumblr media
put the chocolate in the molds, wait for the chocolate to set (putting it in the fridge makes it set faster), put the filling in the shells, cover with more chocolate or put 2 halves together and seal them together with more chocolate
Tumblr media Tumblr media
makes 24 half spheres, store finished candies at room temperature

Christmas eve is in two days, so I thought I'd drop my favourite christmas candy recipe!
Tjong! A homemade minty candy that won't freeze your mouth off ;)
(Please note, this recipe is best done with atleast two people, and you'll need a pair of nitrile gloves each. It also involves touching fairly hot candy, so be careful)
One set of this recipe requires:
4tbsp syrup (light)
4tbsp water
1,5dl sugar
1tbsp butter (approx 50 grams)
Peppermint oil (to taste, my family does about 5 drops)
Food colouring (optional)
Pour in all the ingredients (minus the peppermint oil) into a pan, and heat to 145°C (293F). Add peppermint oil and food colouring of your choice to the molten mixture. Make sure to watch the pan so it doesn't boil over! Then pour the molten sugar onto a well oiled baking tray, waiting for it to cool down a bit.
Put on a pair of nitrile gloves and start forming the candy whilst it's still warm. Stretch it out and fold it into itself over and over again to fill it with air. The candy should get noticeably lighter, usually pastel. Once it's starting to harden you pull it into a long thin worm, grab a pair of scissors and start cutting it. Wrap it in baking paper or powdered sugar once you're done, so it won't stick, and voilà! You've made tjong! Delight in your tasty treats.
This recipe can scale to any amount of tjong you want, but I highly recommend getting atleast one more person to help cut any bigger batch. The candy cools really quickly otherwise.
Oh and here are some photos of tjong I shamelessly stole from the internet, as I couldn't be arsed to photograph my own (they're currently locked away so we won't run out before christmas)
