National Pecan Day
On April 14, we celebrate National Pecan Day, pecan — a uniquely American nut whose fan base counts the likes of founding fathers such as George Washington and Thomas Jefferson. Whether it’s a garnish on a salad or a stand-alone snack, caramelized or roasted, sweet or savory — pecans never fail to deliver on the enthralling taste and the ultimate nutrient density. Did you know, America is credited for 75% of the world’s total pecan production? This fun holiday was established by the National Pecan Shellers Association in 1966 to recognize and honor the workforce behind the cultivation of pecans in America.
History of National Pecan Day
On National Pecan Day, America celebrates the only nut native to its land. Pecans are a much-celebrated nut of America, used in deserts, icecreams, and snacks.
Centuries before European colonization, pecans were cultivated, processed, and consumed in America by Native people. The word ‘pecan’ is derived from the word ‘pacane,’ used by the Algonquin tribe to describe a nut that needs a stone to crack open. The tribes valued pecan for its nutrition density, availability, ease of consumption, and fulfilling taste.
In the late 17th century, the native nut caught the eye of Spanish colonists, who began cultivating large pecan orchards in the vicinity. But it wasn’t until the 18th century that the commercialization of pecans picked up the pace in the United States. By 1802, formal selling routes were established, and pecan export had commenced.
In 1882, a hybrid fruit via the budding of pecan and an adjacent wild plant was created by Abner Landrum, a cultivator from South Carolina. This resultant nut was considered to be an upgraded version of pecan. Although the hybrid seeds of Abner got lost in time, in 1876, the process of grafting was recreated by Antoine, a slave from Louisiana. Antoine presented his discovery at the Philadelphia Centennial Exposition in 1976 and thus began farming a new and improved variety of pecans throughout the country.
Today, America is responsible for three quarters of pecan production in the world. From the summer lanes of Texas to the sunny pavements of California, pecan cultivation is a year-long endeavor for thousands of American farmworkers.
In 1996, the National Pecan Shellers Association members came together to establish April 14 as National Pecan Day. The objective of the day is to celebrate the earthly wonders of this nut and to uplift the hardworking members of the industry who make the sustainable farming of pecans possible.

I love sweets so much, I wish you lived near me 😩
I can bake a little bit, something simple like cookies, or pie (I don't make my own crust though 😅) but I can't make cakes 😔

Cakes are fun 😊 They're just a loooooot of work. Especially if you plan on doing a nice design, cause they need to cool, and your icing has to be good thickness in order to pipe otherwise, she gonna plop. Pies are probably my fav to bake. I love making the crust, plus I always have fun with the top crust for fruit based ones. Once for pi day, I made one with a pi symbol on top. I made a blueberry one with some stars on top. I've also been pushing myself to cream/custard filling based pies lately and have succeeded in butterscotch, banana cream, and pumpkin! Next on my list to learn is pecan. I got to learn cause when I was younger my mom would always let us help her make pancakes or cookies, and always made our birthday cakes for us. I remember when I made my first cake from scratch, my mom was sick, so I made her a get well soon cake 😊

National Pancake Day
A day so nice they made it twice — September 26 is the year’s second National Pancake Day! Get those hotcakes on the griddle, it’s time to prepare some pancakes! Pancakes are an old staple, dating back to Ancient Greece. Since then, many varieties have been created across the globe. In Britain, France, and other parts of Europe, their pancakes (or crepes) are thin and often served with a sweet or savory filling. In Indonesia they consume pancakes known as “serabi”, which are made with rice flour and coconut milk. In Uganda pancakes are made with bananas. These are just a few of the many different variations across the globe. All are delicious and worth celebrating on National Pancake Day! Whichever style of pancake you prefer, get ready to enjoy a stack of them on September 26!
WHEN IS NATIONAL PANCAKE DAY?
National Pancake Day occurs twice a year, and the National Pancake Day on September 26th is actually the second iteration of the holiday.
Of course, IHOP’s National Pancake Day is more than just an excuse to fill up on the floury treats—IHOP also partners with a number of charities that help children battling critical illness, with donations on the day going straight to the charity of your choice.

If you’ve never had breakfast for dinner, specifically pancakes, you are missing out! Celebrate National Pancake day by whipping some up for your evening meal. Typical sweet pancakes are great for dinner when paired with bacon, sausage, and eggs, but savory pancakes are great for an evening meal too! Get creative and make the perfect pancake dinner!
Pancake art has become a trendy lately with creative minds like Nathan Shields posting their fun flapjacks on YouTube. It may take a few tries, but you can make cool pancake art too! There are tutorials online on how to get it just right, but it involves adding batter to the pan at different places and at different times (thus the color difference throughout). You can divide up your batter and add food coloring to each to make your pancake art colorful if you like! Oh, and don’t forget to make your pancake art in mirror image so when you flip it over it’s facing the correct way. It may sound a little tricky but it’s so much fun!

Breakfast for dinner is always a delicious idea, but you can have them any time of day! Indulge with pancakes for dessert with fruit, chocolate, whipped cream, and more! There’s no limit to when and how you can enjoy your pancakes and that’s one thing we love about them!
There’s no denying that pancakes are a comforting food that make us feel good. We enjoy them as children and adults and they are a beloved staple in many culture. The smell of them alone can make us feel content, reminding us of lazy Saturday mornings waking up to a pancake breakfast and a hug from mom. The afternose? The empty glass is a sweet funky enigma. An olfactory candle. I can’t call it! And that’s absolutely fine.

Yeast. Honey. Peach pancake syrup. Apricot. Later — brown sugar.

First sip was oak and yeast. Second sip was brown sugar and wood. Leather. Brown sugar. Kentucky chew elicits oak and yeast. Later is straight cream soda. Of course, raw walnuts. Cherry cobbler.
Fighting Cock:
Honey. Spear mint. Donut glaze. Butterscotch pudding. Kentucky chew elicits. Yeast. Chalk.

Then, my mouth gets a menthol coating that sticks around. Later, the raw walnuts really come through and the tannins really dry out my mouth.
Fighting Cock:
Chalky. Funky and yeasty with a slight hug. Marshmallow/ donut glaze sweetness on lips. Mouthfeel became more pudding-esque as tasting continued. Kentucky chew covers mouth in chalk — super drying. Last half Kentucky chew brought amaretto chalk which developed into Cherry Cordial ice cream for the win!!!! With bits of chocolate in the Homestyle cherry cordial ice cream!

Papa Nihil - Maple + Bacon | An OG pairing for an OG Papa! A maple infused pancake with hearty bits of bacon baked right in, then topped with even more bacon then slathered in another hefty pour of syrup! Nihil likes to indulge whenever it’s presented to him. Food makes him happy, and God be damned if he isn’t going to eat whatever he wants.
Papa I - Banana + Butterscotch | Papa I has a subtle sweet tooth, and if he feeds it in the morning, then he’s able to fight it off throughout the rest of the day. He takes his time, enjoying each bite, even if it gets cold in the process. There’s no need to rush at his age, and at breakfast is no exception.
Papa II - Blackberry + Orange | There’s a very richly palatable flavour story on this plate. Papa II loves a nice, dark blackberry taste cut with the bright zest of orange on his particular stack of pancakes. He doesn’t like anything overly sweet or sticky, so a light citrus glaze is all he needs to complete the dish. Also, don’t even bother asking to try them...there’s no chance in Hell he’ll oblige.
Papa III - Banana + Bacon + Pecan | A little more of a grown-up choice than most people might expect from this Papa, but he doesn’t mind people’s opinions. Taking a blended take on his father’s and brother’s ideas of the perfect stack, Papa III looks forward to sitting down every morning to this beautiful concoction. Unlike his other brother, Papa III loves to let others experience what it’s all about, and easily brings others into his pancake fan club.
Copia - Dark Chocolate + Sea Salt Caramel | Cardi C knows how to turn heads, and at the table is just another stage in his eyes. His breakfast staple looks more like someone’s dessert than anything, but it’s what he loves. There’s something about the bitterness of the chocolate paired with the salty-sweet flavour brought by the caramel that starts his day off right. The Cardinal spares no expense.
Aether - Brown Sugar + Peach | Aether likes a good, hearty pancake in the morning; something that will stick with him throughout the morning, and that is reasonably healthy. As much as he would love to down it in a rich, dark maple syrup he abstains. He tries to be a good example to those who might be looking up to him, so the first meal of the day must be a balanced one!
Dew - Green Apple + Cinnamon | Sometimes he likes the apples, and sometimes he likes to launch them with his fork...across the table at Aether… Of course Dew’s tastebuds lean to the spicy side, as he loves quite the heavy dash of cinnamon in the batter. He insists upon a light caramel drizzle as opposed to the standard maple syrup. Everyone hopes one day the sugar will sweeten him up...even just a little bit.
Rain - Birthday Cake + Sprinkles | No one is really surprised by the child-like, sweet-tooth wishes of this ghoul. Topped with a large, spiral mountain of whipped cream and a single cherry, Rain is quite the happy boy when this comes out. No one teases him for his tastes, but he sometimes has to fight off the onslaught of friend’s forks inbound for his plate.
Mountain - Whiskey + Banana + Walnut | The only ghoul who requests alcohol to be infused into his breakfast, but it’s obviously for the taste aspect than it would ever be for the “buzz”. He prefers a whiskey with more woody notes to compliment the nutty walnut flavors. Too soft-spoken to tell his friends no, Moutain frequently has to order a second plate as his first never even reached his pallet.
Swiss - Lemon + Blueberry | The perfect pairing of both sweet and tangy, which he thought went well with his own personality, Swiss prefers a lighter flavour story than some of the others. He likes an overly fluffy pancake - one full of extra air, and with so many blueberries than should probably be added! Wonders if he should change it up some days, but ultimately sticks with his tride and true staple!
Cumulus - Black Cherry + Almond | This lovely ghoulette is a lot like Papa II with what she looks for in a pancake flavour. The darker and the richer the better. The cherries add a complex sweet yet tart experience, expertly paired with a dark chocolate drizzle then sprinkled with toasted, almond shavings. You better be prepared to fight if you even try to get close!
Cirrus - Strawberry Shortcake | Don’t think this ghuleh is basic because she loves her some girly-ass breakfast treat, but also don’t think that she’s going to give you any of it either. Just imagine a mountain of fresh strawberries upon a spongey cake with fresh cream cheese… Yeah, isn’t it wonderful? GET YOUR OWN!

All About Oat, Rice, Coconut, Sorghum & Buckwheat Flours

Cookbook author and baker extraordinaire Alice Medrich says in the Holiday 2017 issue of Kroger’s MyMagazine 
With these playful flours, old recipes like sponge cake become new again. A baker who exclusively uses wheat flour is an artist with half a paint box.
Here are her best tips for baking with alternative flours, including which flour works best in which baked good.
How to Begin Using Them
New to using non-wheat, whole-grain or gluten-free flours? Alice recommends following the 25% guideline. Replacing 25% of wheat flour in most classic, Western baked goods is generally enough to influence the flavor without dramatically changing the texture. If you’re hesitant, Alice recommends starting at 10%. A great place to begin is with pancakes, waffles and crêpes. Unlike other recipes, these don’t require any more structure than what’s provided by the usual number of eggs. They also include plenty of liquid to hydrate the flour. However, when it comes to baking a traditional cake using entirely alternative flours, it’s best to follow a specialized cookbook as alternative flours tend to be delicate and not a true “cup for cup” swap.
OAT FLOUR
Oat flour has all the taste of oats, without the texture. As a result, it has a sweet, slightly toasty aroma — and a tendency to clump up when making batter. Because it’s so fine, it absorbs moisture well and doesn’t produce a gritty texture like some other whole-grain flours. In fact, it offers a butterscotch flavor. It makes a great background for cut-out cookies this time of year!
Flavor Pairings: nuts, brown sugar, caramel, honey, maple sugar
Works Best In: cookies, tarts, sponge cake, hearty breads
RICE FLOUR
Alice describes rice flour as “deceptive.” That’s because although it seems neutral in taste, it can become exquisite even in the simplest of cakes. There are three different rice flours: white, sweet and brown. White rice flour contains the bran and germ, making it mostly starch with a subtle flavor of floral and cream notes. Sweet rice flour is made from sticky rice and provides a pleasant chewiness to baked goods. Brown rice flour has similar properties to white rice flour, but with a little graininess and a toasty, caramel flavor. Because the bran and the germ are left intact, it performs better when it sits for a bit — when baked immediately in a recipe with little liquid, it can have a gritty texture. If you’re baking up fudgy brownies, give this flour a try.
Flavor Pairings: milk, butter, cream, chocolate
Works Best In: butter cakes, chiffon cakes, sponge cakes, cookies, brownies, pancakes and waffles
COCONUT FLOUR
Coconut flour is finely ground, dried, unsweetened coconut with about 80% of its fat removed, so it’s high in fiber, with much less fat than regular dried coconut. It adds a gentle coconut flavor and aroma to baked goods. However, it can be tricky to work with because it absorbs much of the moisture in batter. That’s why it’s often used more for function than flavor — it adds fiber and helps retain moisture in gluten-free baking.
Flavor Pairings: tropical flavors, brown sugar, coffee, nuts, dark chocolate
Works Best In: crusts, tarts, cookies
SORGHUM FLOUR
In powder form, this ancient grain is a pale, sandy-tan color with a distinctly sweet aroma — much like cornmeal but without the bitter finish. Depending on the recipe, you can taste nuances of wheat, corn or even oats. And you can use it without needing to add a gluten substitute like xantham gum to help hold your recipe together.
Flavor Pairings: butter, berries, pecans, dates, figs
Works Best In: pancakes and waffles, muffins, cookies, sponge cake
BUCKWHEAT FLOUR
This pseudo-grain (it’s actually a seed related to sorrel and rhubarb!) has a robust and earthy flavor that’s best enjoyed when blended with rice or wheat flour — or alone in recipes that use small amounts. Buckwheat flour also has a crystal-like texture that can come across as gritty in some recipes. Be sure not to overmix this fine flour, as it tends to become mushy.
Flavor Pairings: walnuts, toasted hazelnuts, dried fruit, dark spice

One of the things I obsessively collect in my cooking life — aside, apparently, from container lids with no bases and jars of mustard seeds because every time a recipe requires it I presume I’m out because of that one time in 2010 I was — is recipes with very short ingredient lists. It’s not revolutionary to learn that, say, a salad can be made with just lettuce, oil, and vinegar or to find tomato bread, or basil pesto on these lists, but Marcella Hazan’s 3-ingredient tomato sauce is indeed something pretty revelatory, especially when you’re short on time to go to the store or merely patience to cook. So is this Minimalist Barbecue Sauce, Bacon Corn Hash, this summer squash pizza topping that could convert anyone to zucchini, and if does not, this Quick Zucchini Sauté will, the omelet that’s basically Spain’s national dish (and mine), and let us never forget all of the magical things that happen when you let fresh raspberries, brown sugar, and sour cream blister under a broiler, or roast a sweet potato until it almost candies itself inside. It’s not fully populated (I keep finding things I’ve missed and taking liberties when the 6th ingredient is butter or olive oil) but I finally got to pulling together a few of my favorites in this collection this summer. Life is busy; it’s here to help.
Despite all of this, I am a deeply contradictory person. While I assure you that these recipes don’t require any more ingredients than listed to fulfill their delicious destinies, if you were to try to tell me about a recipe with a set number of ingredients, I’d immediately bristle at the limitation. “What was the 6th one? Maybe I have it! I really don’t mind taking it out!”
Regardless, today’s recipe is a long-overdue entry into the high reward for low ingredient count category. Stateside, confusingly, flapjacks mean pancakes but in UK, flapjacks are something completely different, a tray-baked, soft-centered, chewy, crunchy-edged caramel-scented bar made only with oats, golden syrup, brown sugar, and butter*. If they are not already, we need these in our lives. They’re considered the quintessential teatime treat; alas, I don’t have a whole lot of teatime in my life but I do have hangry schoolkids that require nut-free snacks and that these are also gluten-free and ridiculously quick to make (you’ll memorize the recipe after the first time you make them) means that they’ve been on repeat here since the school year began.
“But Deb, flapjacks have only 4 ingredients. What’s the 5th? I might have it!”
Fair enough. I added chocolate. Does it *need* chocolate? For once, I’m totally torn; they’re outstanding either way.
* Although if Queen Mary Berry said marg-reen was okay in 1974, who am I to argue?

Golden syrup — picture corn syrup, but made with cane sugar and lightly cooked for a caramel-y vibe — is a central flavor in flapjacks, which is frustrating as it can be hard to find in the U.S. (Although Amazon sells it in many sizes, including the one I keep around.) (It’s also my favorite thing to put in pecan pie instead of corn syrup, if you need more convincing to pick some up.) I didn’t test the flapjacks with maple syrup but aside from it being thinner, I think it would work decently well as a substitute, as would honey, but only if you love the flavor because it will absolutely come through.
I found that quick-cooking oats (1-minute, not instant) work best here, holding the bars together better than old-fashioned rolled oats did. If you only have them, pulse them a couple times in a food processor to chop them down a little. Instant oats made the bars too tightly packed for my tastes. If you’re serving these to anyone with gluten sensitivities, make sure the oats are labeled gluten-free.
The base recipe here is, I think, lovely — simple, rich, sweet but somehow not excessively so for a treat, and definitely syrupy, a term that makes absolute sense once you bite in. They smell like caramel as they bake. Still, you could tweak the flavors more ways than I could list on two internets. Here are a few to get you started: replacing 1/4 of the oats with an equal weight of dried coconut, adding finely grated lemon zest, ground or candied ginger, ground cinnamon, dried fruit such as dates or figs, or even adding chocolate chunks. The only thing to consider is that the single biggest complaint I read in reviews of other flapjack recipes (but didn’t experience in a way I found problematic) is that the bars are crumbly (which, of course, with so little holding them together) and imagine that adding more chunky ingredients would further this.
1/2 cup (115 grams) salted or unsalted butter
1/2 cup (95 grams) light brown sugar
1/4 cup (85 grams) golden syrup or honey or maple syrup (see Note)
2 1/3 cups (about 220 grams) quick-cooking (1-minute) oats (see Note)
Flaky sea salt
2/3 cup (115 grams) semi- or bittersweet chocolate chips (optional)
Heat oven to 325 degrees F. Line an 8×8-inch baking pan with parchment paper. In a medium-sized pot, melt butter with brown sugar, golden syrup, and a few pinches of flaky sea salt (omit if using salted butter) together over medium-high heat. Once bubbles form, simmer for one minute, then stir in oats off the heat. Spread in pan in an even layer and baked bars for 20 to 25 minutes, until deeply golden at edges. (Deeply golden bars have much more of a caramel-y flavor than pale ones.)
If you’d like to add chocolate, let them rest in their pan on a cooling rack for 3 to 4 minutes before sprinkling the chips all over, then waiting 5 minutes before spreading them in a single layer.
You can cool the flapjacks at room temperature but it goes faster (especially setting the chocolate) in the fridge. However, flapjacks taste best at room temperature, where they’re still stretchy and tender, so you want to keep them in an airtight container at room temperature. They keep for a week.
Every flapjack recipe on the internet tells you to cut them while they’re still warm or it’s too difficult later but I found them messy to cut while warm and really easy to cut cleanly once cool with a sharp, serrated knife, so I’m going to suggest you cut them once they’re fully cool. Use the parchment paper to slide them out of their pan onto a cutting board and cut them into 16 squares or into 4 large ones, then cut quarter diagonally to form 4 triangles.
