I'm so glad you asked
It's what my family called "vegetable tian", while the internet calls it "Provence tian". A tian is a large and shallow clay dish from the south of France, and it's the name for dishes cooked slowly in a low oven (traditionnally, in a bread oven after the initial high heat was used for bread).

It's exactly like the Ratatouille dish : you slice colorful round vegetables (eggplants, zucchinis, onions, tomatoes), you cook them for hours, and you get tender, caramelized, confit vegetables. My grandmother put a paste of bread crumbs-garlic-parsley paste on top for texture... So easy, absolutely amazing, and absolutely not a ratatouille.
A ratatouille is cubed vegetables sauteed separately on stove top then brought together to finish cooking. It's the same "summer" vegetables : eggplants, zucchinis, onions, tomatoes, and peppers which are essential, (and not included in tian). Also very good, can be served hot or cold, completely different from the Ratatouille dish.

There's so many people on tiktok making "the ratatouille from Ratatouille" and it's not! it's not! it's a tian with a fancy pepper sauce!!
Objectively it doesn't matter, recipes evolve when they're adopted in other cultures, and French people can't complain (you won't believe what we call tabouleh). But still!
Apparently the recipe in the movie is confit byaldi by Michel Guérard/Thomas Keller and Keller suggested it to the movie team as his gastronomic reinterpretation of ratatouille. The way my reinterpretation of spaghetti and meatballs would be using flat, very large spaghetti and instead of forming balls I would layer the meat mixture with the tomato sauce and lasagnas I'm describing lasagnas. A completely different dish that already exists.

Grilled Salmon with Roasted Vegetables
INGREDIENTS——————————————
- 1 salmon filet 🍣
- 1 small broccoli head 🥦
- 1 carrot 🥕
- 1 small potato 🥔
- 1 red bell pepper 🌶️
- 2 tbsps olive oil 🫒
- 1 tbsp lemon juice 🍋
- 1 garlic clove 🧄
- Salt 🧂
- Pepper 🌶️
- Dill or parsley 🌿
INSTRUCTIONS—————————————
1. Preheat your oven to 400°F
2. Place the broccoli, carrot, potato, and red bell pepper on a baking sheet.
3. Drizzle with 1 tablespoon of olive oil and season with salt and pepper.
4. Toss the vegetables to coat evenly.
5. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly browned.
6. In a small bowl, mix the remaining 1 tablespoon of olive oil, lemon juice, minced garlic, salt, and pepper.
7. Brush the salmon fillet with the olive oil mixture.
8. Preheat a grill or grill pan over medium-high heat.
9. Place the salmon on the grill, skin side down.
10. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.
11. Place the grilled salmon on a plate.
12. Add the roasted vegetables on the side.
13. Garnish with fresh herbs.

I was wondering if any of y'all have some go-to recipes that are super simple and straightforward to make that you'd be interested in sharing? Like meals that require as few steps and prep as possible? I'm trying to make more food at home and avoid highly processed microwave meals, but I lowkey hate cooking, especially when it's just for myself. While my executive dysfunction has definitely improved over the last month, I still very much have depression and ADHD and thus struggle to tackle more labor intensive activities unless there's a lot of dopamine release involved in the process. I obviously want to improve though, and I figure it's about time to stop living off my protein oatmeal. (It's super good tho, fairly nutritious, and really easy to make--just oats, protein powder, peanut butter, and a bit of honey).
I've compiled a bunch of possible recipes over the last few weeks (mostly from blogs listing meal ideas for picky children lmao), but was just curious if any of you had personal favorites of your own. Since I'm just starting out and have a shitty little 1970s apartment kitchen, I'm pretty limited, and don't really like dealing with super perishable ingredients like fresh produce yet. So only bother with sharing the kind of shit a latchkey middle schooler could make on their own lol
feel free to share them in the replies, or you can pm me or send me an ask too if you'd rather do that instead. It's much appreciated, and I'll let you know if I end up making your recipe!

Creamy Smoked Salmon and Leek Pasta

These Creamy Smoked Salmon and Leek Pasta make a hearty and tasty meal, particularly comforting after a road trip on a rather cold day! Happy Saturday!
Ingredients (serves 2):
2 cups short (whole-wheat) pasta (like fusilli or penne)
1 tablespoon unsalted butter
1/2 tablespoon olive oil
a medium Garden Leek
1/2 teaspoon dried dill
1 1/2 lemons
1/2 cup double cream
1/2 teaspoon freshly cracked black pepper
60 grams/2 ounces Smoked Salmon 
Stir fusilli into a large pot of salted boiling water, and cook, according to package’s directions, generally 9 to 11 minutes until al dente.
Thoroughly rinse Garden Leek under cold water.
In a large, deep skillet, melt butter with olive oil over medium-high heat. 
Thinly slice Garden Leek. Once the butter is just foaming, add Leek the skillet, and cook, about 3 minutes until softened. Season with dill; cook, 1 minute.
Thoroughly squeeze in the juice of the lemons, and cook, a couple of minutes more.
Finally stir in the double cream, and simmer until slightly reduced. Season with black pepper.
Once the pasta is cooked, drain quickly, saving about 1/3 cup of its starchy cooking water. Add pasta to the Leek sauce, gradually stirring in cooking water, cooking until it is beautifully coated.
Cut Smoked Salmon into chunks, and stir into the pasta.
Serve Creamy Smoked Salmon and Leek Pasta immediately, with a glass of chilled dry white wine, like Chablis, if you're in Burgundy!

TVP “Tuna Fish” Salad
[[MORE]]
2 cups TVP (textured vegetable protein) 2 cups kelp bouillon
1/2 cup vegan mayo 1 tbsp dill paste 1 tsp whole-grain mustard 1/4 tsp black pepper
3 stalks celery, diced 3 green onions, minced 3 tbsp capers
Place TVP in a large glass mixing bowl. Pour the prepared kelp bouillon over top. Give it a stir and leave it to rehydrate for about ten minutes.
In a small mixing bowl, whisk together the; vegan mayo, dill paste, whole-grain mustard, and black pepper. Pour the dressing over the rehydrated TVP and stir until well-combined.
Fold in the celery, green onions and capers.
Serve warm or cold, with crackers or in a sandwich or wrap. (Store leftovers in fridge.)
