This raw salad tastes great and is full of good things for you. Green kale, creamy avocados, and crunchy red pepper chips make this a healthy and filling meal. The tangy dressing brings it all together for a tasty treat.
Ingredients: 2 ripe avocados, diced. 4 cups fresh kale leaves, stems removed and chopped. 1 red bell pepper, thinly sliced into chips. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 2 tablespoons lemon juice. 2 tablespoons extra-virgin olive oil. Salt and pepper to taste.
Instructions: Cut up the avocados and kale and put them in a large bowl. To make the dressing, mix lemon juice, extra-virgin olive oil, salt, and pepper in a different bowl. Add the dressing to the avocado and kale mix. Spread the ingredients out by tossing them. Cut up the red onion and fresh cilantro and add them to the salad. Combine well. You can serve the red pepper slices on the side or arrange them around the salad as chips. Your raw avocado kale salad with red pepper chips is ready to eat right away.
