[NOT KETO] 🍣 🍤 This test was actually a FAIL, which is interesting. 🤔
On Wednesday I went out for sushi. I eat off plan maybe 2-3 times a year, and my goal was to knock myself out of ketosis before kicking off the new 2020 Keto Challenge. (I like to do a reset and start fresh with the group.)

To be fair my day was still only around 100 carbs (still considered low carb)...
I ordered a Philadelphia Roll but split that with my date (I had 2 pieces). I ordered the tempura shrimp & vegetables (also shared, I had just under half). Then I had the "beach roll" but swapped the mango for cream cheese & asked for no mango sauce on top.
Being consistently keto, I don't like my dinner "sweet". 🤷♀️
My blood sugar did spike a bit, the higher number being 90 minutes after dinner. 📈 But I was still in ketosis the next morning. 🤔
So now you know I'm not superhuman. 😁 Although there's a lot of "keto" in me obviously 🥑 I mean even my fried food is meat & vegetables. 🤪
The testing fascinates me, learning my body and my limits. It's nice to indulge (responsibly) now and then, and it's double nice that doesn't throw me totally off the rails (anymore).
Overcoming binge eating has been one of my biggest keto wins!! 🕺 Being able to enjoy one nonketo meal and otherwise stay / get right back on track is HUGE for me! 💪
I didn't experience any tummy upset, but my fingers did swell and feel tight, and I had tension in my back again until later the next day. (I stay in nutritional ketosis to manage chronic pain & inflammation).

➡️ This is such a good place to be on my keto journey. Being able to listen to my body, still respecting hunger signals even off plan, being IN CONTROL of food choices, not using it as an excuse to go totally off the rails (former me!), monitoring & noting results with interest - without food guilt, shame or self disgust. ❤
My keto journey has improved me as a person in so many ways, especially mindset & control + a serious respect for how my body works and what it needs - for energy, for optimal health & to feel GREAT (ie no pain). ❣
This is NOT something I recommend if you're just starting out, or if you KNOW you're not in the right headspace yet. This is a GOAL to shoot for.
I'm almost 9 years into a healthy balanced keto lifestyle, and could not have done this even a few years ago.
Getting to this point both physically and mentally was a serious process for me - especially the mindset part. I really struggled with that!
My hope is to help you work through those issues faster than I did... and find your healthy, happy balance! 💕

Honey Garlic Butter Baked Salmon This is the easiest and best-baked salmon recipe in the world! Stir a few simple ingredients together, pour over salmon fillets and bung it in the oven for 12-15 minutes. Done.😍😋 Ingredients * 4 boneless salmon fillets * 2 tbsp unsalted butter melted * 2 cloves minced garlic * 2 tbsp honey * 1/2 tsp dried parsley (or 2 tsp fresh parsley, finely chopped) * 1/4 tsp salt * 1/4 tsp pepper * pinch of paprika * 1 lemon sliced into half-moons Instructions * Preheat the oven to 200C/400F. Line a baking tray with foil or a silicon mat. * Place the salmon fillets, skin-side-down on the baking tray. * In a small bowl, mix together the melted butter, garlic, honey, parsley, salt, pepper and paprika. * Pour the mixture over the salmon fillets (don't worry about any of the sauce pooling on the tray). * Arrange the lemon wedges on and around the salmon. * Place in the oven and bake for 8 minutes. * Open the oven and baste the salmon with any of the sauce that has pooled on the tray. Mix until well combined. Form the ground chicken mixture into patties. I was able to get seven large patties from this mix. Spray an 11-inch non-stick pan with cooking spray.
