gluten & dairy intolerant and sick as shit: a “what the fuck do i eat?” primer
most gluten-free, dairy-free (hereafter abbreviated gf/df) recipe sites are so clearly written by people who have the energy to cook - consistently enough that they don’t need to worry about food spoiling - and money for tons of ingredients and equipment. as a person who’s bedridden a large portion of the time, this is useless as shit!
so here’s how i’ve kept myself alive the past 6+ months for other sick folks looking for a realistic starting point, in descending order from least to most energy required. in addition to being gf/df, i can’t eat raw vegetables or red meat, need to avoid/minimize seeds and artificial sweeteners, and try to minimize soy when possible, so these suggestions align with that.
as always, check the labels first! other folks feel free to add on with any suggestions!
meals
gf cereal - chocolate gf off-brand rice krispies are a go-to low-energy meal that can also be a snack
bananas with peanut butter
rice cakes are my best friend - they’re like 4x cheaper than gf bread and the easiest option i’ve found so far. my go-to is rice cake, vegan cheese, 4 slices of deli chicken, a pinch of salt; 4 of those makes a filling meal for me
gf toast with peanut butter or butter, cinnamon, and brown sugar
gf oatmeal in the microwave, seasoned with brown sugar and cinnamon. if you need to avoid cross-contamination, make sure to only purchase oat products that are certified gluten-free; they can easily get cross-contaminated from wheat in the field
tofu scramble - season with curry powder, garlic and onion powder, chili powder, and salt. add whatever veggies you want - i do (frozen or canned) spinach, mushrooms, and tomatoes
gf chicken nuggets - if i have a little extra energy i’ll make a vegan ranch using a vegan mayo base
gf/df pizza - they’re expensive. i’m sorry.
gf/df nachos - vegan mince with gf taco seasoning, olives, vegan cheese, corn tortillas chips. for a lower-energy version, i melt vegan cheese on tortilla chips in the microwave and add torn-up deli chicken and seasoning
frozen gf fries - plain or with vegan cheese sauce, vegan cheese, and/or vegan mince (seasoned with garlic powder, chili powder, paprika, and salt)
rice with ingredient - canned beans and/or peas; canned tuna cooked with curry powder; frozen edamame and canned salmon cooked with gf (tamari) soy sauce, honey, and chili powder
fish tacos - frozen fish cooked with cumin, paprika, chili powder, salt, pepper; cilantro-lime rice; avocado if you’re up for peeling/cutting; vegan cheese; corn tortillas
snacks
pre-popped popcorn
tortilla chips
gf/df cookies
gf/df chips (crisps) - in the UK, Seabrook is a great gf brand, and the classic ones are df as well
gf/df protein or granola bars
gf/df ice cream
tangerines, clementines, etc - they last longer than other fruits

ok so I haven't blocked anyone in this fandom YET but I admit I get close whenever I see C/stas M/ndylor's stupid little ugly-ass right-wing face in the HOFFMAN tag when he's NOT BEING HOFFMAN like first of all he's only hot when he's Hoffman, if I have to see him with a mustache one more time I might end it all, secondly can we stop simping for actors and every role they've ever been in because we like one (1) role, down the road of simpery lies nothing but pain and disappointment
idk maybe it's because I've seen too many people decide they're in love with the actor because they love the character only to realize that the actor is a shit person and have a total fucking meltdown, but I Don't Trust Like That and I have very strong actor-character separation mentality lmao
also also if you mistag your posts (like making a post about Adam but tagging it with every character in the franchise) I'm thinking about killing you in a Saw trap I hope you all know this

Chocolate nut raw protein bars
OK here's today's line up AND the at-home version.
No LIDL version available, sadly for my wallet. They do have a cocoa orange nakd knock off but I don't like those so there you go.
All are GF but none are soy free.
Clockwise from top right we have:
M&S
80p per 35g bar, 4g protein. Good moisture to bite ratio and strong, rich almost coffee like chocolate taste, with a treacle note that is coming from the raisins in the mix. Density managed via chicory fibre which seems to be the go-to for a lot of things. A slightly more attractive product to look at than the Nakd bar but that is not a high bar. Addition of peanuts and actual chocolate chips makes this much tastier and interesting than the nakd bar it is a copy cat of, but gram for gram it is actually pricier.
TREK PROTEIN
£1 per 45g bar, 7g protein. The answer to "what if we made nutella miserable?" A chonky literal brick of a product with substantial heft and 0 joy. Paler than the M&S version as it has more nuts and no raisins. Peanut flour and chicory fibre make up almost 20% of this and it shows. I have a lot of time for nakd as they were the only vegan treat in town for a while but this thing is a sad dry lump. Eating it is an experience in dutiful chewing and leaves your jaw sore. Honestly you are better off just eating nuts. I pity the hazelnuts in this product.
TRIBE PROTEIN
£1 per 38g bar, 5g protein. The objectively tastiest of them all, basically a layer of soft date paste on a slightly crunchy chocolate flapjack-esque base (probably cold pressed but could be baked not 100% sure) then topped with nuts making it feel like the fanciest. Protein comes from "soya protein crispies" which sounds like a terrible breakfast product. Addition of oats makes it not-like-the-other-ones but it sits in the same taste zone so I included it. Different textures make it interesting and it is my current fave for with afternoon coffee.
THE AT HOME VERSION
Goals here were to keep the chocolate goodness, make it soy free and improve on the cold-pressed bars by making them moist and softer. Getting the hard texture that the packet versions have probably involves a level of dehydration that I have no interest in.
I included oats as chicory fibre isn't particularly available and I needed a dry binding agent. I had jumbo oats in and they needed a bit of crumbling to make them finer but I refuse to keep multiple grades of oat in the house as my flat is small and I am not quite that obsessed.
I added a chopped chocolate and peanut top because it makes the final thing look nicer as well as giving it variety in texture. Initial versions I mixed these in like the M&S bar but I prefer it with them on top.
I didn't bother with hazelnuts and stuck with peanuts but obviously you can substitute.
Final texture is akin to a chocolate brownie - it has that gooey chew.
Makes approx 12 40g bars at 16p each - price will flex depending on how cheap you can get your dates, I am blessed with a large turkish store on the corner.
200g chopped stoned dates (buy cheap ones this is not the time for fancy medjool)
100g peanut butter - I had smooth but crunchy will work
100g GF oats
15g cocoa
Vanilla essence
Pinch salt
15g chopped dark chocolate (LIDL)
15g chopped roasted peanuts (I used salted, YMMV)
* soak dates in boiling water (just enough to cover) for 10 mins, drain and smush dry
* blend dates into a pale creamy paste
* add other ingredients except chopped chocolate and peanuts
* stir well to break up oats
* press firmly into a container, mine was 16cm x 9 cm giving a mix height of 2.5cm
* leave in fridge overnight
* next day cut into 12 bars and press chopped nuts and chocolate on top - first version I topped the big block pre slicing then realised this would only be one edge of the bar so don't do that

Ugh I want to binge my sweets I’ve been saving for my binge day so much 🙄 weekend post binge goal for Monday? 136-137. I’ll have a raw vegan, gf salad at least once a day this weekend and I already told my partner who is visiting that I want to start doing a raw salad once a day every day. I am going to hit 10k every day this weekend and next week. Then also make sure I’m burning at least 80-150 a day on my bike.

The modern dating buffet effect
Look at the table. Long, appealing, colourful, full. How delicious does it look? The big assortment of foods and snacks, from super old school pastries to extra vegan trendy delicacies, and all the between. Ouch. So much beauty it could make any forever-teenager-grown-up go from 1-10 in less than 10 seconds. Hunger levels, I mean. 
Sliced pão alentejano, dark rye, seeded buns, carob, even sweet potato bread. Brownie, gluten free brownie, banana bread with or without sugar, brown for sure, with or without cinnamon. Cinnamon rolls, croissants, red velvet -iaic this one I really don’t get it but who am I to judge? I am just another person here, looking at the table with no real intentions, just browsing, obviously not interested in eating anything, left alone overeat or get sick.
Ok, I may be a bit curious, and even try a bite here and there. I mean, the temptation is big. So many shapes and forms, so many colours and textures, so many smells and tastes. I am sure you will like some of them... Maybe... I am sure you will like some of them, but do you really, really, need to try them all? Do you really, really, need to bite and lick every single one of them? 
Hmm.
I mean, there are some things we know for sure, right? Some things we don’t need to try to know they are wrong, like that mustard canned salmon - another story for another time, or the soggy frosted white flour birthday cake. There are also some things we know immediately we like, like the dense chocolate cake, the GF banana bread or the brigadeiros, hm, the forbidden brigadeiros - I am still talking about you, don’t look at me like that. 
What about everything else? The mango sticky rice with coconut mylk, the raw carrots with hummus or the pita bread? The fresh tomato pasta, the veggie sushi or the khale omelette? What about the local prato do dia, the desert of the house or the best Margherita in the hood? I know, I know, life is not easy. Options are endless, the body is weak - and between just the two of us, for scarcity we already had the pandemic, right?
Ok, let’s go for it, one at the time. Maybe two, who cares? 
[ well I care even when I pretend I don’t ]
But do we really, really need to try them all? Do we really need to try that soggy brownie? Do we really really need to have a sugar rush just to remember fast food is, you know, too fast and not that interesting? Do we really, rally need to eat that extra slice of cake, you know, when we’re nearly sick but keep going? 
Do we? Do we really really need to succumb to the modern datting buffet effect?
You tell me.
