I first heard of cherry-plums from @elodieunderglass, as part of an ongoing jam competition saga (I'm rooting for you)! I second heard of them when my coworker pointed them out on a walk to the bus stop. So, naturally, I picked some. I...probably should have massed them, but I went by volume instead; it was about three cups worth.
Per the excellent advice given to me, I pitted the fruits by squeezing them, then simmered them for a bit until they were soft. Then I added sugar. About two and a half cups. Which...may have been too much. Because I definitely got syrup out of it (which was my goal!). But...it tastes like liquefied grape jelly. Or grenadine. Somewhere between the two. Beautiful color, but gotta try again when more of the bush ripens.

Kentucky Buck !
2 oz. bourbon
0.75 oz. lemon juice
0.75 oz. ginger syrup
1 strawberry
1-2 dashes Angostura Bitters
About 2 oz. soda
Muddle the strawberry in the bottom of a cocktail shaker. Add bourbon, lemon, ginger syrup, and bitters, and shake for six to eight seconds. Strain over fresh ice in a tall glass and top with soda water. Garnish with a half strawberry or a lemon wheel or a mint sprig or all three.

2 oz. Hendrick’s Gin
0.75 oz. lemon juice
0.75 oz. simple syrup
3-5 fresh raspberries
1 egg white
Add all ingredients to a shaker tin. “Dry” shake ingredients without ice for five seconds to whip the egg. Add ice, seal tins and shake hard for 10 to 12 seconds. Strain into coupe or martini glass, express a lemon peel over the top of the foam for aroma and discard and garnish with one to three raspberries, on a pick.
