Winter salads are one of my favourite things. Loaded with a lot of vitamins you need to get through the dark season. 

Baby spinach leaves are the perfect base for a salad, that matches with nearly everything you may want to add. Another advantage is that you don’t have to worry about remains since you can just freeze the rest of it or use it for cooking.

I also love to add a sweet component to my salads. Orange, pears, apple, grapes or some fruit vinegar will give a special taste to just some basic salad. For some extra protein I like to add chickpeas, any kind of beans or lentils. Grilled vegetables or tofu give the salad the feeling of not being just a salad, but a more ‘real’ meal. Lastly, there has to be some fresh, crispy vegetables like tomatoes, cucumbers or bell peppers. 

If you add all that to your salad you don’t have to worry about the dressing too much. A little bit of olive oil, vinegar, salt & pepper, maybe a drizzle of balsamic vinegar is enough to finish your taste explosion.

Something's Cooking... For Lunch! Easy and affordable Crab Salad Toast! I loooove crab, any style... seriously! . 🦀: Half pack of immitation crab meat (I used flake style), chop it really small. Add mayonnaise, 1 tsp Soy Souce, 1tsp lime juice, 2tsp dried chopped onions, 1tsp dried minced garlic, salt and pepper to taste. Mix it well. . 🍽️: Bread of your choice, add baby spinach, add the salad, toast it at 350F for about 10min, or until bread is toasted. I used a toaster oven but any oven should do the trick!
