I saw your tags about prosciutto and it reminded me of something. I would almost never get carbonara from restaurants as I like the version i made at home better. Especially the pancetta. I would always snack on some chopped up pancetta as I cooked. A month ago I saw a video about the difference between bacon/prosciutto/pancetta. This is where I learned that PANCETTA SHOULDNT BE EATEN RAW!

I’ve been eating raw pancetta for years and I don’t think I can transition to cooking the pancetta. It is so nice and chewy.
