Soon, a bouncy salsa started playing.  Trent wiped his hands on his apron and pulled Santana into an impromptu dance.  She laughed and played along for a few seconds only.

"My pozole," Santana said, smacking him on the arm as she pulled away to return to the stove.  "Don't you dare make me ruin my Abuela's recipe.  Find another dance partner."
Santana's pozole, the recipe of which was handed down to her by her beloved abuela, was simmering on the stovetop.  That was to be partnered with her father's cochinita pibil.  Warm hand-made tortillas sat folded carefully in a towel, ready to be brought to the once dinner was about to be served.
Trent had a Caprese salad in the refrigerator, prepped and ready to serve.  He was putting the finishing touches on an impressive charcuterie board, abundant with tidbits that made even Kurt's mouth water.  Trent had also just taken out some herb parmesan biscuits out of the oven that he had baked.  Kurt had been particularly eying Trent's appetizer version of his parent's boxty recipe that was laid out on a silver serving tray.
As for dessert, that, of course, was left to Kurt.  His addition to the meal were the apple hand pies that were his mother's own recipe and his father's favorite dessert ( when he was allowed to have a treat from his usual heart-healthy diet), an assortment of cookies, as well as some mini dark chocolate tartlets sprinkled with sea salt.

1. pho, very simply the best soup ever invented
2. this food and wine magazine chicken soup. super versatile and always delicious. i usually make it with bone-in chicken thighs that i sear beforehand in the same pot i cook the soup to get even more flavour
3. gumbo. it’s good in all forms but controversially i love when it’s got okra in it because okra is one of my fave veggies
4. french onion soup. i don’t say this often but you do have to hand it to the french for that one
5. tortilla soup, this is my fave recipe. easy delicious and cheap :)
special mentions to: the seafood chowder from fishhook in victoria and the khao soi from pai in toronto (i wouldn’t necessarily call khao soi a soup but i have seen it called that so i’m including it here because either way it’s one of the best things i’ve ever eaten)

Try as you might Frankie, you will never be able to convince me that doughnuts are better than pancakes. The argument that they have frosting doesn’t work…who says you can’t put frosting on pancakes? 
I still can’t believe that you are with me, with everything that happened over the summer.  You always have said that you are the lucky one, but Frankie with how you treat me, with how you love me…I am the lucky one
It was the second week in November, you had been busy with work and Frankie had been swamped with his own.  A new recruitment class had just joined the ranks and he was busy teaching the new pilots. You missed him and when the two of you finally had a ‘Frankie Friday’ to be able to spend together you made sure to do things right. Tyler showed you a quick and easy Chicken Tortilla Soup recipe.  You stood in front of the stove stirring the pot of hot liquid when a pair of strong arms wrap around your waist, Frankie rests his chin on your shoulder. Squeezing you and placing a kiss on your cheek “this smells amazing Estrella” you smile and lean back into him “You’re too good to me, you know that?”
You smile and nod your head in agreement, “gotta keep you fed somehow”, the two of you haven’t tried since that night. It wasn’t that you didn’t want to, you really did.  But something always felt off, felt forced almost.  Not on Frankie’s part, but on your own.  You were getting to the point where you just wanted to get it done and over with. Dinner was done, dishes sitting on the drying rack and the leftover soup placed in the fridge in a tupperware bowl with Frankie’s name written on it. Your feet up on the couch, curled into Frankie’s side as the two of you watch some comedy movie.  These nights with you help Frankie forget the negative in the world and he wants nothing more than to laugh and see you smile. 
“Hey, what are you doing next weekend? I know we’ve been busy with work…and the holiday is coming up” he asks while his fingers mindlessly rub on and down your bare arm “…but do you wanna…” 
“Yes” you say before he even finishes. He chuckles 
“I didn’t even finish what I was going to ask you, it could have been dangerous, or another wedding. I know how much you love those” 
“Is it another wedding?” You ask and he shakes his head “then bring on the danger Pilot Morales” 
“Warrant Officer,” he corrects you “adding Pilot my last name doesn’t make me official” he laughs and you shrug your shoulders and curl back into his side, head resting against him. Hand resting on his stomach, thumb rubbing against his soft gray shirt and you turn your attention back to the movie.  He clears his throat, “you wanna go away with me for the weekend? Just the two of us…”
“Where?” you ask

You pull up to what looks like a mansion.  A white stone front, with large wooden doors greet you, the backdrop of the mountains make it look like something out of a fairytale movie. Frankie kills the truck engine and you stare at the place you will be spending the next two days with your jaw dropped, not understanding how he was able to not only find this place but how he was able to afford it.  You’ve seen places like this for rent before and knew it wasn’t cheap by any means especially around the holidays. You feel Frankie’s thick fingers under your chin gently push up, closing your mouth “...how…” you ask 
“Eh, I know a guy” he smiles at you before leaning in to kiss you
“Oh, you just know a guy and you thought I was one with the mafia connection…you not telling me something Morales?” his hand moves from under your jaw, wrapping his fingers in your hair and holding your head in place as he kisses you slowly making you completely forget the question
“You said you wanted a little danger” his lips move over yours as he speaks, “do you wanna go inside?” you nod and quickly kiss him again 
Frankie opens his door, making his way over to you, He takes your hand as he helps you out of the truck.  Grabbing the two bags in the bed of the truck he follows you up to the front doors. His bag slung over his shoulder, the handles of your small bag wrapped around his hand, he reaches in gray sweat jacket and pulls out the key. Unlocking the large wooden door he pushes it open, you stand in awe of the house that lays in front of you. “It’s even better on the inside…” he whispers into your ear and you turn to look at him “after you” he nods his head towards the large open room. You bite your bottom lip and step inside. To the right of the door is what you can only imagine was a home office or library, books like all four walls. A grand staircase in the center of the room, walking past the stairs leads to a fireplace along the back wall. The family room on the right with a U-Shaped couch, facing a large picture frame window with the mountainous landscape. Who needs a TV with a few like this. On the left was a kitchen that any chef would dream for. Large fridge, a six-burner gas stove, two ovens and something that you knew was for pasta water but you didn’t know the correct term for. The large farm sink with its own window, and a center island big enough for ten people. Your jaw drops again, “who’s this guy you know?” You turn to face Frankie who set the bags down at the base of the stairs, shrugging his shoulders as he walks over to you
“Just a guy…really. It’s not a big deal” he places his hand on your lower back and kisses your cheek, “but if you think this is impressive. You should take a look at the bedroom” 
“Upstairs?” you ask 
“Upstairs…” he confirms and you run up the circular staircase leading to what find is the only room at the top of the stars 
Sliding open the barn door for the room, you almost faint at the beauty of the master bedroom. The room is larger than your entire downstairs studio apartment back in town. Floor to ceiling glass windows stretch the entire space. A large circle skylight that almost stretches from wall to wall has the room lit up with the setting sun. A king sized bed with dark blue sheets sits in the middle of the room under the skylight. You stand there in awe, Frankie’s footsteps behind you, climbing the stairs with your bags. Who was this guy and how the hell did Frankie know him? Part of you wondered…while the other part of you tried to commit every detail of this beautiful room to memory. Frankie sets your bags on the bench at the end of the bed. 
“This place is insane…” you shake your head still unable to believe it 
“Why don’t you get comfortable, unpack…I’ll go get some dinner started” he wraps his arms around you and kisses your forehead 
“Since when do you cook?” You laugh 
It wasn’t that Frankie didn’t cook, he did. He just didn’t like to, he knew the basics and was able to make more than just Mac and Cheese but in all the time you knew him he rarely cooked. He pulls back, still holding your waist smiling, “as a beautiful woman once told me…I gotta keep you fed some how” 
You put your hand over his goofy smile and playfully push him away, “I can’t with you sometimes you know that”  you shake your head smiling 
“You love me…” when you don’t say anything his statement turns into a question “…wait you love me right?” 
“I’ll let you know after dinner” 
Frankie puts out his bottom lips, looking at you like a wounded puppy. Those big brown eyes of his almost breaking you, you shake your head and smile, “fine…I love you” you pat his check and the smile that grows you swear could light up the whole damn city. He does a little fist pump and heads towards the open door and makes his way down the stairs towards the kitchen. You shake your head, laughing to yourself and you make your way to unzip your bag. 
You pull out a little yellow satin lingerie pajama dress. Thin yellow straps, with a deep v-neck line, the straps criss-cross in the back in a corset type style. The dress ends on your upper thigh, and you know the moment you bend over, your dress will leave nothing to the imagination in the backside. The dress has two slits on the sides, you wondered what they were for when there was so little fabric to begin with. You slide on the yellow satin shorts that you found to match. Before leaving you have an internal debate with yourself if you should wear this for dinner. Your hair down, falling over your shoulders and you stop at the threshold of the door. “Do it Frankie will think it’s sexy and have you then and there. Your the only dinner he’ll need” a voice says in your head, “don’t you want this…” it says again when you turn around and find the sleep shorts you brought with you. Sliding them up and tucking in the little bit of dress that was exposed. “What are you doing…” the voice gets louder when you put on a hoodie. You check the mirror and make sure your little yellow dress was hidden, and throw your hair up in a messy bun on top of your head. 
Making your way down the stairs and towards the kitchen the smell of Italian food fills your nose. Turning the corner you see candles sitting on the kitchen island, a bowl of salad sitting there with two wine glasses and a bottle of rosé. Frankie’s back to you as he stirs something on the stove top. How long had you been standing upstairs arguing with yourself about what to wear, it was nowhere near long enough for him to whip this meal up was it? 
“Are you making risotto?!” You ask
“Yes?” He inflection makes his answer sound like a question and you raise an eyebrow at him “yes” he says again more confidently and stands up a little straighter, shoulders back and proud of himself 
“Mmmhmm” you hum and move to a bar stool at the island reaching into the salad bowl stealing a crouton “you just happened to learn how to make a mushroom risotto” 
“For you, I’d learn anything…” he looks over his shoulder to see you smirk and roll your eyes “...and maybe I stopped by Gio’s and picked some up before this weekend” he chuckled turning off the stove top and dishing two plates that he had set on on the counter next to him
“Thank you,” you kiss his cheek as his sets the plate down in front of you “and thank you for this”
A weekend away with you, was exactly what I needed. Get away from everything at home and it just be us.  The trip started perfectly, an incredible house, the perfect man next to me and my favorite dinner.  I would be lying to you if I didn’t tell you I was still terrified of the next step, but Frankie I am ready…I am ready for you.  I love you more than I think was ever possible. The, I mean our first time may not have been exactly the way either of us envisioned it but it was nothing short of memory making.

Your back is against the armrest of the sofa, legs draped over Frankie’s lap.  One arm of his rest on the back of the sofa, the other over your legs.  His hand rubbing up and down your thigh.  His legs were bouncing and you could tell there was something he was waiting to say. There had been a movie playing on the TV but all you could focus on was Frankie and the inner debate he seemed to be having with himself. He pulls back an eyebrow raised and a slight smirk on his face. “What’s this…” he questions as part of the yellow fabric becomes more exposed. You bite your lip, and pull his face back towards you, hoping that kissing him he’d forget the question. You know how the story ends, he will eventually see it when he starts to undress you. But you’d rather have his lips and attention focused on kissing you instead of what you are wearing. 
You push on his chest, getting him to walk backwards towards the bed. For not knowing the layout of the room you were very successful in leading him to the bed. He places the last pancake on a plate. Turning off the stove and facing you, “well I gotta keep you feed some how” he grins “good morning”

He nods, fingers playing with the zipper resting just below your chest. Slowly moving you back towards the kitchen island.  Your hands holding his waist just above the band of his boxer briefs. “Frankie, hey…hey I’m ok. Really, I’m fine. Great actually” you were. You weren’t lying, you did feel great. Sure maybe you should have stopped after the 4th time but you wanted him more than anything and he did say practice makes perfect 
Frankie, my Francisco…mi Pescado, thank you. Thank you for being patient, thank you for waiting for me. Thank you for this weekend. Thank you for taking your time with me that night. Thank you for letting me love you. Thank you for being my Francisco. I don’t know what this next step of our journey will hold but I can not wait for you to be the last and first thing I see everyday.

For easy, cheap meals my go-tos are usually:
- Breakfast burritos (you can keep tortillas in the freezer/fridge, salsa, sour cream, cheese, eggs however you like, if you have extra lunch meat or leftover meat it can be thrown in)
- Tuna rice bowls (canned tuna with a little mayo, rice, I usually keep frozen edamame in the freezer, if you have furikake or seaweed snacks those are nice to top with, sriracha)
- Basically lunchables (crackers of choice, cheese, lunch meat if I have it, any fruit I have on hand but honestly grapes and apples are my favorite with the cheese)
- In college I used to keep a jar of pesto on hand and whenever I made pasta would just finish it in a pan with pesto, cheese, and milk to make a creamy pesto sauce
Whenever I do have like a really good weekend day or burst of energy, I try to make something that I know will last me a few days or will freeze well (like jambalaya, an easy soup from scratch, etc). I’m not the biggest fan of slow cooker recipes but honestly they’re often low effort and I will make some every now and then to save energy!
Thanks a lot, anon! I'll keep all of those in mind--I actually just bought some tortillas earlier today for chicken quesadillas so burritos are certainly another option!

Okay- things have calmed down enough with the puppy that I can cook again, and tonight I made perhaps the best chili I have ever made.
Creamy Keto White Chicken Chili.
Now, I’m not doing keto but I am doing low carb for my blood sugar management, and I like making chili anyway because it’s “naturally” low carb. The fact that I tend to eat traditional red chili as a dip for tortilla chips however….
But this- it was more like a soup than a stew, but it tasted like queso blanco nacho cheese. Y’all. I got out a piece of bread *untoasted* to sop this up and I hate mushy bread. (I have a loaf of whole wheat and it tends toward the gummy side)
It was easy, too. Came together in about 30 minutes, including the prep work.
Here’s the recipie. I followed it pretty closely, choosing all the optional ingredients. The main difference is that I had 1.25lb of chicken and a 7oz can of chiles. Oh, and I used a red onion because that’s what I had.

I've got 4 recipes hereeeee
Are you telling me a mixed vegetables fried this rice
Get your vegetables. I used frozen vegetables like a loser but any vegetables oughtta work. Steamed broccoli would be good. Green beans, carrots, and corn was what I used and it slapped.
Make some rice (boil water, add about half as much rice with the understanding that rice grows, simmer for for 10-15 minutes or until it's about as soft as you want it LOOK AT ME: POKE IT WITH A SPOON DO NOT TOUCH THE BOILING RICE WITH YOUR FINGER, fluff and serve)
Butter a frying pan and heat it
Put the rice and veg in the frying pan and let them heat up for a short while. They'll sound pretty when it's ready.
Then crack in an egg.
And scramble it.
I always make my fried rice pretty soft cooked but you can get it crispy if so desired
Easy on the soy sauce. Use sesame seed oil too.
In total, including clean up and buffer time it takes about an hour, but it could take longer or shorter depending on how fast you cook.

But it tastes GOOD
Prepare some steak fries however you like to prepare stake fries. I deep fry and my mama bakes them. Air fryer, pan fried, cooked over an open flame idc.
Get a tortilla. Not a tiny one either, we're working with steak fries here.
Here me out. I know this is stupid but AMERICAN CHEESE is actually best in this case. It's got a good texture. And juuuust enough flavor to compliment and give the burrito a little grounding without becoming a main aspect of the dish.
So put your tortilla on your Large Heating Surface Of Choice, I use a grill but whatevers big enough, a frying pan would work, and toast it and melt the cheese a little.
Then put on your fries.
Then, and I need a citation for this because I do not know the exact combination of herbs but use Cajun seasoning. Look up badia cajun seasoning and use that. Or season to taste, you want a slightly sweet and spicy blend, kinda like the seasoning on a barbecue chip but more Green and Yellow
Then top it with romaine lettuce and wrap it.
Or other lettuce or maybe spinach, but you don't want to overload the flavor.
This one takes much less time, the longest part is cooking the fries, I'd say about 20 minutes total, even with clean up.
It tastes.. in the same ballpark as a gyro. Not the same at all, but like if a gyro had a cousin from Weeki Wochi Springs (and... that's pretty accurate actually. As someone who is intimately familiar with the Really Sweaty parts of florida and is reasonably familiar with our next door flood buddy (louisianna) and the food from both places. Look if you've ever been to Natchitoches, LA and try food from there you'll know what I mean)

It's soup. So we're clear.
This is borderline stew, and is something to make to feed you for several days, it's very hearty.
And this is a leftover soup! But it doesn't have to be you can make it fresh if you want to.
But chop up some fries and chicken (I used leftover steak fries and chicken tenders, which have a story behind them but not for here, I'm not that southern)
Put them in a deep pot with some butter to start getting them warm. The chicken needs to be all the way cooked beforehand, this is where the leftover part comes in handy. The steak fries less so but yk
When they're warm and popping a little, add a can of cream of chicken soup, milk, cheddar and mozzarella cheese, SALT, chili seasoning, a shake of Tony chachere's, (that's pronounced SaShaRay's if you wanna ask for it at a grocery store), and a dash of honey mustard.
Let it warm and mingle on high heat until it tastes super good.
Put aside and make some rice (sea above). Yellow or brown rice would be SO GOOD with this, especially yellow rice. I only had white on hand tho loll
Mix the rice into the soup, and heat it up again to serving temp.
I'd serve it with some nutty bread. Not pumpernickel or white bread. Rye would be good. Or even just some standard wheat bread. Maybe some cheddar biscuits or cornbread lol.
This one takes much longer just by nature, I'd give it an hour to an hour and a half, clean up included.

Put it in a (oven safe) bowl or even straight on some thick bread (foccacia would work well. That's fecasha if you've never seen the word written out. Horse divorce).
Put it in the oven, or better, a toaster oven (not a microwave)
Heat it until the berries and goat cheese get soft
Blend it all together
Serve..
It takes maybe 15mins

My mom, and her mom, were and are great cooks, but we were also very much the kind of family that relied on basic (and essentially timeless) recipes, and my grandma was born around the 1920s, and my mom was born at the beginning of the 60s.
Both my mom and her mom worked full-time and raised multiple kids (and my mom lost her dad when she was young, so my great-aunt who I've mentioned before many times, moved in to help raise her and her four brothers) and so they needed affordable, filling, easy recipes.
Which meant we had a lot of meatloaf (with fries or potatoes of some kind, and if we were feeling fancy or wanted to stretch it, with cheese and sliced ham in the center), casseroles of all kind (to this day I still crave her tuna casserole, which is basically canned tuna, white sauce - canned white sauce pre-my dad's celiac - and crushed potato chips for the topping and in the mix? I don't think there was any pasta or noodles involved), grilled hot dogs and hamburgers (the latter with 80/20 ground beef, ketchup or bbq sauce, and onion soup mix or other seasonings) with fries (and steak or pork chops or chicken if we wanted to step it up a bit), breakfast for dinner during lent or when not wanting to do too much (so pancakes and scrambled eggs and bacon or sausage), tacos and burritos (seasoned ground beef or shredded chicken or, if my dad was feeling it, carnitas, with tortillas and taco shells and cheese and other toppings), big things of baked pastas (and just regular cooked pasta), chili (sometimes with cornbread or french bread) and the infamous hamburger rice - which is basically ground beef and onions in a tomato sauce (homemade/from scratch if so inclined but otherwise canned or jarred) with canned corn and a fuckton of rice, mixed together (sometimes baked but otherwise just a big pot of rice mixed with a beefy tomato sauce and canned corn and onions) and with cheese sprinked on or included. (This is the dish we ate a ton because of my dad's celiac and because it was cheap, quick, and easy, and it's why I have to fight to get over my avoidance of rice dishes to this day).
My mom's potato salad (and macaroni salad, since the only difference is whether you use potatoes or noodles) is basically just potatoes (or noodles) parboiled and then cubed, mixed with onion, pimento, mayo, ketchup, mustard, a small amount of paprika, and salt and pepper - and I also crave it to this day. (When I was an infant I once ended up in the trunk of my parents' car and proceeded to help myself to the bowl that was there for the picnic the family was having at Kennedy Grove.
That's not all we ate (because it was the 90s and early 2000s, and both me and my mom love chinese takeout and prime rib, and because there is always some evolution and differentiation) but that was basically what we had, and it was pretty much what she had when she was growing up too, so we basically ate mid-century meals well into the beginning of the 21st century.
