Being self-sustainable means knowing your surroundings, knowing what you can and can't eat, when to pick it and what to do with it. 🌼 Elderberry trees are a perfect example. In late spring you can collect the flower heads to make Elderflower cordial, and in late Autumn you can collect the berries to make Elderberry Syrup. You can also dry the berries so you can use them all year round. 🌼 Today I'm making Elderflower Cordial and this is the recipe I used. Guess what.... It uses essential oils! Now I've never made it with essential oils instead of real lemons but I have enough flower heads that if the first batch doesn't work I can do it again the old way. 🌼 * 15 large heads of Elderflower (30 small ones) * 1/4 cup of citric acid * 3 drops lemon essential oils * 3 drops lime essential oils * 4.5 cups of sugar * 2.5 ltrs of water (if you don't have EO's use the zest of a whole lemon) 🌼 Lightly wash flowers to remove bugs but keep pollen. Add essential oils to the sugar and stir to spread the oils about. Then add the sugar, citric acid to the water and bring to just boiling point. Remove from the heat, add the flower heads, place them stalks up, you want flowers in the water not the stalks so much. Leave to infuse overnight or 24hrs. The more flowers you put in the stronger the cordial. 🌼 So who's going to try this? Who's made it before?
