The meal I’ve been waiting for the whole year! Well, I always make this spaghetti, but not with stuff from my own garden! Today, I finally had enough ripe and semi-ripened cherry tomatoes to make a serving. I also used one of my garlic heads, which, by the way, are curing nicely. I even managed to pull oregano, thyme, and a bit of basil. Sadly, the onions are not yet ready, so I used a store-bought one. The basil that I managed to harvest is not enough, so I had to use dried basil from the shelf. It’s such an easy, quick, and wholesome lunch. I think my non-existing Italian ancestors would approve. 17-Aug-2023

Hello hello, just wanted to share what I've been up to~
I harvested a cabbage yesterday!

This one, I tried to twist the head off in an attempt to grow a second crop of head(s), but it twisted the whole thing right out of the ground. Alas, that didn't work this time, but next time maybe.

I didn't end up weighing this cabbage, but I wanted to take a pic to share how big it grew alone. The rows I grow in currently are roughly 2 feet across.

I took this head and peeled it apart a bit. While all the leaves are edible, or could eb used for cooking or plating meals, i wanted to give our chickens a lil extra greens. So to them they went :)

This is what it looked like inside.
I sliced 1/2 the head up to enjoy with bbq chicken sandwiches last night. (And we used quite a bit!) But still had enough for an omlette this morning and a bit extra. The other 1/2 I'll probably slice for similar meals.

Busted out the wok and made the original fast food, stir fry. This had both peppers from my garden (yes I still have peppers and tomatoes growing) and some I bought at Trader Joe’s. I also added broccolini, fresh green beans, ginger, a clove of elephant garlic (my favorite garlic) black garlic, also from trader Joe's, some swiss chard from the garden and snow peas from the garden that I was unaware was even there until this morning, those suckers blend in so well. Added noodles, some toasted sesame, and soyaki sauce I also got from trader Joe's. Oh and green onions from the garden. There is also shredded carrots in here. Toped with kimchi and a sprinkling of black garlic. This was also vegan, which you might be seeing a lot more of as my oldest has expressed their desire to be vegan and I'm all for that if that's what makes them happy. Made an amazing lunch and took around 10 minutes...

It gets properly cold where I live and I like to keep my space cool, so not many plants last the entire year with me. These are some easy foods I grow and nurture even when it gets frosty 🥶 They are also very NUTRIENT DENSE so that your nutrient profile won't have to suffer just because it's gotten cooler. The best part is NO SOIL is NECESSARY, so you don't have to worry about any mess. And you get to eat what you've grown within just a FEW DAYS, so you can switch it up all the time.
Winter Gardening Projects (to have vibrant plant foods for your kitchen even in the winter) 🌾🌱🦠🧅
🌾Microgreens (some are even safe & healthful for pets, like wheatgrass)
🌱Sprouts (very kid friendly project. my favorites have been fenugreek, lentils, buckwheat, alfalfa, and chickpeas. i wanna try herb sprouts soon!)
🦠Probiotic Drinks (yes I consider this part of my garden too! Good options are coconut water kefir, drinking vinegars, ginger bugs, and kombucha)
🧅Veggie Scrap Regrowths (like green onion/scallions & leeks)

After finishing the chicken run roof this morning, I was seriously craving something greasy for lunch. So I made some tempura with zucchini flowers (a little past their prime, but still pretty delicious) and kale. I accompanied them with tofu with homemade tonkatsu sauce, lightly sautéed green beans, and some kimchi (Costco kimchi 🤣🤣)

Not quite a gardening update. Properly harvested my lemon balm for the first time today! Took a couple sprigs of spearmint as well and now I have delicious lemony-spearminty tea to sip on all day as I work on an art piece 🥰🥰
