Kit's Traybake Pancakes (cinnamon apple var.) - Updated!

Love eating pancakes but hate making them? This traybake pancake recipe may be for you! Making these gives me enough pancake squares for 6 days (5 if you eat two on the day you make them). They’re fluffy, reheat well, can either be eaten with or without maple syrup, and are very customizable! I recommend adding fruit and protein powder like I do in this recipe, making it a (slightly) healthier breakfast than just pure carbs.

Full disclosure, the base for this recipe was the mug pancake recipe from Emma’s Goodies, which you can watch here!
I made this mug pancake for years (except with tripled portions because I was using a very big mug) and it was super delicious! However, for just one mug pancake, it was a bit of a production and didn’t feel super worth it. Thusly, I have adapted the recipe to be made in a 13”x9” baking tray, which makes a whole lot of breakfast.
Recipe (serving size: 2 squares):
Base Ingredients:
12 tbsp. butter (I use salted, if you don’t have salted butter, add a small amount of kosher salt to your recipe)
9 tbsp. (1/2 cup+ 1 tbsp) granulated sugar
12 fl.oz. milk (I use skim, use whatever kind you like)
3 cups all-purpose flour
3 tsp. baking powder
Customizable Ingredients:
1 scoop protein powder (I use vanilla flavored whey)
1/4 cup of maple syrup (ideally not pancake syrup, they’re different)
1 apple (I use McIntosh or Honeycrisp)
A piping hot cup of apple tea with a heaping tablespoon of honey
Nutmeg, cinnamon, cardamom to taste, for sprinkling on top
Base Instructions:
Heat oven to 375°F, take out a 13”x9” nonstick baking pan and spray bottom and sides with cooking spray (yes theoretically I know you don’t need to spray a nonstick pan but better safe than sorry).
If you choose to put apple chunks in, I recommend doing this step first. I personally like to let the chunks soak in my favorite loose leaf apple tea (non-sponsored plug)! Boil a cup of water and fill the tea infuser with tea. Add a heaping tablespoon of honey to the cup and stir until it dissolves. Then put them infuser in and steep the tea for three minutes, after which you should give the mug a final stir and pour it into a bowl. See “customizable instructions, steps 2-4” for how I recommend cutting the apple. After that, put the peeled apple chunks into the bowl of delicious tea and let them soak until it’s time to add them later on!
If you’re not putting apple in, do this step first. Put butter in a bowl and melt it in the microwave. I recommend microwaving for 1m20s.
Put butter in a stand mixer, preferably with the paddle attachment. While you heat the milk in the microwave* (40 seconds, I use a glass liquid measuring cup), add the granulated sugar to the mixer. Once the milk is heated, give it a real quick stir, and then add it and use one of the lower settings on your mixer.
(If you have customizable wet ingredients, add them now!)
Add the flour and baking powder, mix again on low setting until it forms a batter (a small amount of lumps is okay from what I’ve heard, you don’t want to overmix).
*You can’t put cold milk into hot butter, it will form little clumps and be gross
Customizable Instructions:
Add a 1/4 cup of maple syrup (as above, preferably before the flour, with the other wet ingredients), and also one scoop of your preferred protein powder. Mix on low setting until it’s incorporated.
Peel the apple wedges with a peeler (don't use the skin, you'll thank me later). If you have an apple cutter (the thing that looks like a wheel with handles), use that. If you don’t:
Take your apple and a large, sharp knife (be careful) and cut the apple in half vertically. Then place it down with the core side up, and cut each apple half like so: cut off the left side, avoiding the core, followed by the right. Then turn what’s left of the half apple on its side, and cut off the last piece at the back. Do the same for the other apple half, then chop the segments into whatever sized chunks you want.
Use as much of it as you want, but I myself use the whole apple. (If you don’t, eat whatever segments you don’t intend to use for a lil snack.) Then put apple chunks into mixer, and half the tea if you made it, and mix until incorporated. (Drink what tea remains, it’s even more delicious now that the fresh apple’s been in it!)
Baking Instructions:
Pour batter into greased baking tray, shake the pan until the batter is flattened and reaches all the corners (or use a spatula and spread it evenly by hand). Optional: Sprinkle the top with cinnamon, nutmeg, and cardamom according to your tastes. I tend to have a heavy hand even if I don’t mean to, but it still comes out very tasty! (and smells great while baking!)
When the oven reaches temperature (if you preheated it at the beginning, it may have already been at temperature for a while) put the pan in and cook for 35 mins. Know your oven and if it tends to be hotter or colder*, adjust cook time as necessary.
When the timer goes off, test the center in several places with a toothpick. As long as it doesn’t come out goopy, you’re good! (crumbs on the toothpick is fine) I say test in several places because if you accidentally go through a piece of apple, your toothpick may come out slightly wet, but that doesn’t mean the pancakes aren’t done. If it's not done, cook in intervals of 5 minutes, testing each time the timer goes off.
Take pan out and use a butter knife or a pie serving spatula and poke around the edges of the pan to free the pancake traybake from the edges. Let cool for 10 minutes.
Cut into squares. I tend to cut 12 pieces, but you could go smaller or larger depending on how much you intend to eat at once.
*How do I know if my oven runs hot or cold, you may ask? If any recipe you make comes out raw and/or takes longer to cook than the instructions say, your oven is colder! If your food ends up burnt and/or takes less time to cook than the recipe instructions say, your oven is hotter!
Enjoy! I eat two squares at a time and it makes a good breakfast! For storing, put however much of it you can eat in 2-3 days in the fridge. Store the rest in the freezer.
For any customizing other than what I did, use whatever fruit, spices, syrups, and/or protein powders you want! Just be aware that more fruit in the batter means it may take longer to cook!
If you make them, either the same way I did here or differently, let me know how they came out!
OLD EDIT: After some experimentation, it seems like the pancakes come out more moist if baked for 35 minutes at 375°F! I also soak the apple pieces in a cup of “Apple Blood Tea” (find it on adagio teas, it’s super delish!) with honey at the beginning of the process, then add the ‘marinated’ apples and half a cup of the tea into the batter.

has a broad palette and will try anything once - has definitely eaten all manner of insects, arachnids, and offal, and been alright with most of them
always tries the local cuisine if he has time on missions, considers it one of the perks of the job
kinda lactose intolerant but he ignores it (don’t we all)
like he'll eat an ice cream and be fine but he should stay away from milkshakes
loves oreos (thanks Nick) and chocolate covered liquorice
comfort food: lasagna (something his mother used to cook. he could never get the recipe right)
also sweet breakfast foods. loves pancakes and waffles and french toast and croissants and—
certified tea hater. doesn’t see the point, it tastes weak and weird to him (Sherry probably tries to find a tea he likes, he always takes a sip to try it but nothing more)
his diet directly correlates to his mental health - his appetite just vanishes

he loves cereal. he'll eat it any time of day and in any weather
really likes seafood, the fresher the better - not as much as steaks tho, obviously
WILL criticise how you cook steak until you do it the “right” way
eats fruit salads and veggie sticks for snacks (and genuinely enjoys them, the freak (affectionate))

How Good the RvB Main Cast is at Cooking, Ranked from Best to Worst
1. Donut
Donut gives off the vibe of one of those gay men with a baking channel on YouTube. This man's out here rolling up to the red team monthly dinner club with frenched rack of lamb with a pistachio mint crust and wine accompaniment, then earl grey souffle with creme anglaise for dessert. He spends hours experimenting with new and interesting ingredients. Remy Ratatouille, send-you-back-to-rural-France ass man. Donut's food fucks hard and everyone knows it.
2. Grif
You really think my man Grif loves food as much as he does and doesn't know how to make it? C'mon. He doesn't, like, relish the act of cooking as much as he does having a good plate of food at the end of it. And he's not typically much for sharing. But my guy makes a damn good short rib and bechamel lasagna. Give him the day to let something slow cook, and god damn.
3. Wash
Wash has been living off of MREs for probably his entire adult life, but I feel like he's got a few dishes he can whip out for a date night, or if he's feeling fancy. He knows how to read a recipe, and he has a pretty good idea of what flavors go together to make something good. He probably has a really nice papardelle with vinho verde sauce that he has sitting around in the back of his head for special occasions.
4. Tucker
Okay, Tucker isn't a bad cook by any means, ok? He's great with breakfast food specifically. It's just that he isn't especially fancy about it. He was probably, like, a line cook at Denny's in high school, so all his food tastes like food you would get at Denny's. Which isn't a bad thing! You would just never call Denny's "fine dining". He has his niche, and he does it well, and he never feels even a little bit inclined to do anything different or better.
5. Church (Alpha)
Church isn't much of a foodie right off the bat, but someone's got to pack Caboose's lunch, and he ends up learning how to cook fairly well after that. After a certain point, he figures out how to make things from scratch--mostly things like chicken nuggets, mac and cheese, pancakes.
6. Simmons
I feel like Simmons mostly lives off of shit like green smoothies and homemade granola. Like, hardcore, low carb, vegan, all organic, high protein diet. And, like, it doesn't taste BAD. But it definitely isn't the kind of thing you bring to the red team dinner club. He does make a really nice sunbutter brownie that he has to hide from Grif.
7. Caboose
Caboose has been banned from using any objects in the kitchen that involve a heat source--which isn't HIS fault! How was he supposed to know that you're supposed to take the spoon OUT of the mac and cheese before putting it in the microwave? That's just a recipe for a cold spoon! Anyways, he manages just fine without the microwave, thank you very much. He can make ants on a log like it's nobody's business. Cleaning up afterwards is another matter entirely.
8. Carolina
Carolina is one of the most competent individuals you will ever meet. She could kill you in under a minute, in 30 different ways, and that's just with her bare hands. The fourth time Sarge tries to recruit her into red team is by inviting her to the monthly dinner club. She shows up empty handed, and when Donut very politely asks what she brought, she replies that it's very interesting that they expected the only woman on the team to go all out with cooking. They move on. Carolina spent 5 hours in the kitchen this afternoon trying to figure out how to use the oven. But they don't need to know that.
9. Tex
Now, listen. Tex can't be called a bad cook, precisely, because that would require she cook for herself or others. Which is something she does not do. That's what Church is for, isn't it?
10. Sarge
Sarge refuses to step foot in a kitchen after the fifth shouting match about how flamethrowers are not a universally recognized kitchen appliance.
11. Church (Epsilon)
One time, while blue team is shooting the wind, Caboose asks Epsilon what his favorite breakfast food is. Instead of calling Caboose a dumbass, as per usual, he instead goes into extensive detail about how he eats computer keys like cereal. Caboose tries it. It isn't very good.

Niestety nie moglam sie wymigac z tych tostow i sushi wiec mam zjedzonych 1080 kcal.. jestem oblesna naprawde. Jutro zostaje w domu, ale ugadalam sie z mama, ze moge jesc male sniadania (powiedzialam ze mi sie rzygac chce po wiekszych i uwierzyla) wiec bede jadla te skyry low carb i kazala mi jesc wieksza kolacje wiec bede jadla kanapki z szynka (210 kcal okolo) albo jajecznice. Postaram sie jeszcze wywalac to jedzenie w miare mozliwosci. Musze jeszcze wymyslic co z obiadami, ale kazala mi jutro zrobic pancake i jeden ma 76 kcal wiec zjem z 4 i do tego owoce. Beda dalej podsumowania i nie ide na recovery jak cos tylko no bede jadla tyle przez mame, a potem jak zapomni to wroce. 4 maja sie waze i dam wam znac z jaka waga zaczynam miesiac, bo dalej daze do tych 40 kg. Rozumiecie, ze ona chciala, zebym zjadla te pancake z nutella ja nmg. To chyba na tyle i mam nadzieje, ze dam rade

Enough time?
I was absolutely ravenous by the time I left the gym today. There was food at home, but I didn’t feel like I could wait until then. So I pulled into a diner. There’s something about breakfast food where I can just put away plate after plate when I’m hungry. 
Today was no exception. I ended up ordering three pancakes, bacon, eggs, loaded hashbrowns, and told the waitress I’d hang on to the menu “just in case” (I, of course, planned on ordering more). The pancakes I ate in under three minutes. By the time the waitress came to check on me I was already most of the way through my hashbrowns. Even though I could start to feel the pancakes sitting heavily in my belly, I was determined to stuff myself to the brim. I ordered up a waffle and what turned out to be a huge milkshake made with an entire slice of cheesecake. 
I kept eating, devouring the hashbrowns as quickly as I could, feeling my stomach groan and churn, trying to accommodate the massive pile of carbs I was stuffing it with. I started to slow down with the waffle, pausing to let out a long, low belch, which made room for the milkshake.
Something about ice cream or any sort of dairy and sugar really bloats me up. It was a challenge to finish the whole milkshake, but I was determined (and on a little bit of a time crunch - I had work in about an hour). I gulped it down quickly enough that my belly couldn’t quite register how full it was.
When I stood up to pay the check, I was immediately aware of how tight my swollen gut was starting to pull my work out shirt. It jutted out a good three inches and swelled out to the sides as well. I don’t think I could have hidden it if I wanted to (I never do lol) - my shirt was just too tight and I was too full.
When I got home, however, the hedonistic part of my brain wouldn’t let me quit, even though I was already suffering from a solid tummy ache. Grinning slightly to myself, I reflected that it was going to be very hot in the factory and that I should probably hydrate before I went in. I filled up a liter and a half bottle of water and began to chug. I managed to get it all down in a few minutes.
At this point, I was well and truly stuffed. My gut churned and strained at the volume of food and liquid I was forcing to to hold. A soft groan escaped my lips. I sat back on the couch for a moment, trying to ease the tenderness in my belly with gentle rubbing. I managed to coax out a few belches, with not a minute to spare. True, I was still very bloated and sloshy, but by the time I got into the swing of things at work, I hoped, my belly ache would have subsided. 
It’s been a long time since I’ve had the chance to stuff myself silly, and I hope I have the opportunity to really go beyond my limit next time.

The Owl House Headcanon on Character's Favorite Japanese Dishes.
Luz Noceda: Okonomiyaki (Hiroshima-Style preferred). She likes it for it is a perfect comforting fusion between pancakes and takoyaki (which she had some bad memory from getting her tongue scrouged by it). Plus, she can choose a variety of fillings, which is great for her neurodivergent vibe (while also easily getting bored).

Amity Blight: Zaru Soba. She'd likely go for a dish that is simple yet defines Japanese elements. She would enjoy it with chunky chopped spring onion, wasabi-infused dipping, and hot tea on a side. After a few years of trying more Japanese dishes, she also got into shio udon and yakisoba. (and yakisoba-based okonomiyaki with her sweetheart)

Willow Park: Kimchi Nabe; full of vegetables, proteins from meat, eggs, mushrooms, tofu, and gochujang-rich kimchi (Giving spiciness and Korean-ness that Willow never realized she needed). She loves her nabe with varieties and large quantities of proteins. Especially chicken-based meatballs (like in sumo wrestler Chanko Nabe), chicken breasts, lean slices of beef, and white tofu. Plus, extra spicy.

Gus Porter: Omurice with ketchup fried rice underneath a blanket of thin and creamy omelet. He prefers creamy demiglace sauce with mushroom and beef stock base, alongside ketchup and a dash of Kewpie mayo. Maybe steamed bacon with low-sodium, crabstick, or fish sausage for the side protein. Plus, he loves Sanrio and doesn't care about locals' eyes upon him enjoying his two plates of My Melody Omurice.(It's kids' size, so two is it).

Hunter Noceda/Park/Daemonne: Kushiyaki, especially those from old-school Yatai stalls. However, he would avoid poultry-based ones (especially the wings, as tributes to his lifesaver, Flapjack) and alcoholic drinks. He usually goes with beef and vegetables on the same stick. His favorite side drink is Ramune or Calpis yogurt drink. He usually has a few pods of salted edamame first, if offered.

Vee Noceda: Shojin Ryori meal from local Zen Buddhist temples. Somehow, she can tastes 'magic' in food, and enjoy talking about spiritual and morality topics with Buddhist monks(and nuns). She usually not paying them by money but doing them some cleaning and arranging the sutra. She sometimes enjoy draining magic from Omamori (Green one is a yum!).

Edalyn Clawthrone: Tantanmen, extra broth, extra noodles, and a few extra pieces of boiled eggs. With rice on the side. After an extreme night (either work, or a party), she carves for carbs, proteins, and spices. Eventually, it becomes her usual comfort dish. Plus, it was worth her two meals and a pretty budget. If she feels extra fancy, maybe some extra meat as well.

Lilith Clawthrone: Kure's JMSDF (Japan Maritime Self-Defense Force)-style Curry Rice, with milk (low-fat, or soya milk) and salad with a light dressing. She prefers a vegetarian version and original taste that serves Japanese maritime forces. She eventually made her own thanks to befriending a friend who was a chef on a Japanese battleship in the Cold War.

King Clawthrone: Set of different sushi varieties. He is into nigiri and maki with a few simple ingredients. He is into a grilled saltwater eel, salted boiled ebi (or tempura-fried), churnchy cucumber, and tamago. Onigiri is also his go-to, but he is not into raw meat.

Cal: 418 | Protein: 21g
Thoughts: I had an amazing start this morning, waking up nice and early and being able to go to the gym for some core workouts and upper body. I had time to get some coffee before work as well from a cute little Vietnamese cafe.

Thoughts: I don't think having my fruits during the break is a good idea as I didn't feel full enough after this and ended up hungry by 4pm. Considering dinner isn't for another 6 hours. I should definitely eat more for lunch.
