It’s too goddamn motherfucking hot to cook and I cannot eat another salad so I bought a rotisserie chicken, chopped up every vegetable I owned, and broke the shit out of this peanut sauce. Overall, 10/10

Overall, it took about 10 entire minutes to prepare and was worth every second. Especially since now I don’t have to 1) eat a salad or 2) touch the stove for more than 5 minutes. Sauce broke, but I’m the only person eating and I’m suitably impressed.

I guess what most people don't understand about summer rolls is, that the greens, especially the herbs, are the main flavours. Everything else (noodles, protein) is just to make it a balanced meal. The sauce to dip is somewhat your salad dressing but essentially also comes second (or even third). The lettuce and cucumber are mostly there for structure. That's also why the popular additions are plain boiled meat and shrimps and unseasoned thin egg strips.
So if you have a hard time getting your specific asian herbs, may i suggest you try some local herbs that go well together and are very aromatic? For example chives, spring onions, parsley, thyme, basil, celery, rosmary, even lavender if you wish!
In essence, a summer roll is a celebration of all the herbs that grow in the warm season, and i think if you understand that, you can much more easily make a summer roll that is tasty!
