made this BEAUTIFUL fuckn butternut squash soup last night. it was SO delicious gotdamn
recipe & personal anecdote below ~~
making this meal has felt like a HUGE overcoming to me. first, i've been wanting to make this but due to a shoulder injury i got at my previous job, it's very difficult to cut big vegetables like squash. i had the realization i could just buy puree and use that!!
the second reason this is so huge and rewarding for me is because at the start of every fall i always would go to panera to get their autumn squash soup (aka butternut squash soup). last year i worked for panera and it was awful and traumatic and idk when i'll be able to stomach going back there. so i wasn't sure if i would have butternut squash soup this season.
well evidently i did! i made it work. it's so delicious and really easy to make when using butternut squash puree!
here's the recipe ig:
2 12 oz containers of frozen butternut squash puree
1 cup of carrots (i just used baby carrots)
1/3-1/2 cup of apple cider
1 small onion sliced
2-4 cups vegetable broth
3 oz cream cheese
3 second pour of maple syrup
salt, pepper, nutmeg, cinnamon, curry powder, cayenne pepper, chili powder (plus whatever else u want) to taste
roasted pumpkin seeds aka pepitas
steps:
sautee onions, season them
add broth, cider, carrots, squash puree, spices
boil, simmer until carrots are soft and desired thickness is achieved. i let it simmer for around 50 minutes to get it nice and thick.
turn off heat, add cream cheese and syrup, blend with hand mixer / in blender in small batches.
serve with pepitas as garnish

It's honestly crazy that discussion around testosterone HRT skews so much towards the beginning stages of it (to the point that you have dozens of guys thinking their transition is "failed" if they don't pass by like a year in lol) and what the initial changes of the first couple of months to years look like, like the classic laundry list of those early basic changes like bottom growth, voice drop, etc, when IMO literally none of that compares remotely to the depth and intensity of the long term total masculinization you start to experience like 3-5+ years in.
