Multi-player adventure games should have a NPC setting. Rather than being the adventurer, you can choose to just...vibe. You can gather food and farm and craft things and build houses and chat with your fellow 'NPC' players, and when you need something thats difficult to get or something, you can just activate a little "quest available" button so that adventurers know to talk to you. You can ask adventurers to gather the thing or item or tool you need, and because you have all the lore and knowledge about the thing in a handy handbook, you can give them cool quests and lore, but not have to GO ON QUESTS
As someone who likes just chilling in adventure games and doesn't want to fight things so much, I think this could be a fun way to play games with your game grinding friends. They get the adventure and you get the bliss, and you both enjoy the world the way you want to, but you can still play TOGETHER.
And you can change anytime you want. You aren't STUCK being an 'NPC', you can CHOOSE to adventure if the mood takes you, but it's an option you can activate at any time, in any game area, and you can do all sorts of fun little things with your fellow 'NPC's on the side (including decorating and organizing things and just doing COMMUNITY things, and making the world better and cooler and more exciting for the visiting adventurers!

Friend of mine in college had one of these, still the coolest-looking game console I've ever seen.
Apparently ( Sega CDX/Multi-Mega | Retro Consoles Wiki | Fandom ) Sega didn’t make many of 'em, like only 5,000 were released in North America (elsewhere in the world they went by the name “Multi-Mega”).

By the by, Final Fantasy VIII deserves more respect JUST for the fact that you can take that first disc and hold it up to literally any other multi-disc Square PS1 game, and you'd be hard-pressed to find a better contained story within it.
One of the things about art is that working within the confines of what you have can create some of the most unique experiences possible, and having to use multiple discs for games WAS a constraint that in and of itself could be art. The first disc of FFVIII is the one time I can think of where that format they were forced into actually added A LOT to the story, because within the scope of one disc you learn the setting, the characters, their struggles and best and worst characteristics, and are given a plot hook powerful enough to drive the rest of the story. Add to that an EXCELLENT last few sequences and a jaw-dropping cliffhanger, and I truly believe that disc can't be touched.
It's a stunning experience, and to this day the only disc of any multi-disc game where I remember EXACTLY where it starts and ends, and everything that happens in between. THAT'S an achievement, and I truly think it's the only time it's ever happened with these kinds of games.
